Pumpkin pie chia pudding mousse is creamy, delicious, and filled with pumpkin pie spices. It couldn't be easier to make and it's perfect for a healthy, sweet treat.

1 cup milk (any milk, including dairy-milk, cashew milk, almond milk or coconut milk will work)
1/4 cup chia seeds
1/2 cup pumpkin puree
2 tablespoons maple syrup
2 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
coconut whipped cream
cinnamon

Steps:

  • Add all of the ingredients to a high-powered blender.
  • Blend on high for a minute, or until the pudding is creamy.
  • Transfer the pudding to a bowl, cover and chill at least 4 hours.
  • Serve the pumpkin chia pudding with a dollop of coconut whipped cream and a sprinkle of cinnamon.

1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1 (1 ounce) box sugar-free instant vanilla pudding mix

Steps:

  • Mix pumpkin, spices, and half the milk.
  • While stirring, slowly add mix and remainder of milk.
  • Stir until smooth.
  • Let sit for 30 minutes if you prefer a thicker consistency.

1 (15 ounce) can pumpkin
1 (1 1/3 ounce) box sugar-free vanilla pudding mix
1 teaspoon pumpkin pie spice
1 cup water

Steps:

  • Mix the water and pudding mix together until there are no more lumps.
  • Bring to a slow boil in a saucepan.
  • Stir frequently.
  • Remove from heat and fold in pumpkin and spices.
  • Pour into 8 small serving cups.
  • Refrigerate 2 hours until firm.
  • Top with fat free whipped topping to serve.
  • I tried something a little new based on some suggestions in the comments. This year I used butterscotch pudding (fat free, sugar free instant) and did half water and half light eggnog! Whipped those together REALLY well before folding in the pumpkin. It added about 16 calories a serving, but was WAY creamier and just delicious!

This is actually a pumpkin pie recipe that has been passed down over several generations. I love pumpkin pie but not the calories so omitted the pie crust, adjusted the type of milk used, and replaced the sugar for splenda. If you don't mind the extra calories just use heavy cream, and use 2/3 cup sugar instead of the splenda. I hope you enjoy this.

1 (8 ounce) can canned pumpkin
1 tablespoon flour
1/3 cup Splenda sugar substitute
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon vanilla
1 egg (beaten)
2 cups skim milk (or fat-free)

Steps:

  • Preheat oven to 350 degrees.
  • In bowl add first six ingredients and stir or whisk together.
  • Add beaten egg and skim milk and continue to whisk until well blended.
  • Pour into baking dish (I usually spray the bowl first with either Pam or a canola based cooking spray).
  • Bake for one hour
  • Insert a clean knife and if it comes out clean then it is ready.
  • * extra good served with one little dab of whipped cream.
