½ cup (1 stick or 113g) salted butter, (softened)
1 package (8 ounces) cream cheese, (softened)
1 teaspoon fresh orange zest
1½ cups (300g) granulated sugar
1 large egg, (room temperature)
1 teaspoon vanilla extract
1 teaspoon orange extract, ((you can start with 1/2 tsp. and taste test the dough))
1 drop red food coloring ((add more depending on dark you want the orange to be))
2 drops yellow food coloring ((add more depending on dark you want the orange to be))
2¼ cups (282g) all-purpose flour
2 teaspoons baking powder
1 cup (126g) confectioners' sugar, (divided)

Steps:

  • Preheat oven to 350°F.
  • In a large bowl using a hand-held mixer, beat butter, cream cheese, orange zest, and granulated sugar until blended.
  • Add in egg, vanilla, orange extract, and the red and yellow food coloring.
  • Add in flour, baking powder, and ½ cup confectioners' sugar. With the mixer on low, gradually beat into a creamed mixture.
  • Using a 2-tablespoon cookie scoop, create balls and roll them in the remaining confectioners' sugar.
  • Place on a parchment-lined baking sheet. Using your hands or the bottom of a drinking glass flatten balls into rounds. Place approximately 6 dough balls on each sheet.
  • Bake until they no longer appear wet on top, 8-11 minutes. After about 5 minutes cooling on the pan (they will be soft), place on cooling racks to cool completely.

1 cup yogurt (you can use orange-flavor yogurt, or any flavor desired)
1 cup softened vanilla ice cream
2 tablespoons light corn syrup
sugar (optional)

Steps:

  • Place all ingredients in a food processor or blender; pulse until well combined.
  • Divide the mixture between the popsicle molds, and then lightly knock the molds to release any air bubbles.
  • Freeze until almost solid but still soft enough to insert a stick.
  • Insert a large stick in the middle and place back in the freezer until completely frozen and solid (about 8 hours or overnight).

1/2 cup coconut cream
1/2 cup plain whole milk yogurt (or a dairy-free yogurt )
1/2 cup orange juice
3 TB honey
1/2 tsp pure vanilla extract
1/4 cup shredded unsweetened coconut (optional)

Steps:

  • In a medium-size bowl, combine: coconut cream, yogurt, orange juice, honey, and vanilla. Whisk together. To get the coconut cream, use canned coconut milk and remove the top layer of cream from the milk. You can also purchase coconut cream in a can versus purchasing milk (with the cream layer on top).
  • Pour the liquid into the popsicle molds and freeze for at least four hours.
  • To enjoy, run the outside of the popsicle molds under cold water for a few seconds, then remove from the molds.
  • If desired, roll or sprinkle shredded coconut over the top of the creamsicles popsicles and bites.

Juice of 3 oranges (1 cup orange juice)

Steps:

  • In a bowl, beat the cream with a whisk until soft peaks form. Set aside.
  • In another bowl, beat the egg whites until soft peaks form. Add the honey and vanilla extract and continue beating until firm peaks form.
  • Combine the egg whites mixture to the cream and add the orange juice and orange zest.

1 cup of raw cashews, soaked for at least 6 hours and drained
1 cup of orange juice
½ cup of full-fat coconut milk, divided
¼ cup of light agave nectar or maple syrup, divided
1 tablespoon of orange zest
1 teaspoon of vanilla extract
¼ teaspoon of salt

Steps:

  • Place the soaked cashews, orange juice, half of the coconut milk, and half of the agave or maple syrup in your blender. Puree on high speed, pausing to scrape down the sides of the container if necessary, until completely silky-smooth. If you still see a few stray pieces remaining after 5 - 6 minutes of continuous blending, pass the mixture through a fine mesh strainer and discard any solids.
  • Stir in the orange zest. Separately, whisk together the remaining coconut milk and agave along with the vanilla and salt.
  • Pour the orange cashew mixture into popsicle molds, filling them about ⅔ of the way to the top. Add the vanilla coconut mixture the fill the rest of the space. Lightly swirl the two together with a popsicle skewer before inserting sticks and placing in the freezer.
  • Let set for at least 6 hours, ideally overnight, before unmolding and enjoying.

7 ounces marshmallow creme
12 ounces white chocolate chips (1 bag)
1 cup granulated sugar
2/3 heavy cream
12 tablespoons salted butter
3 teaspoons orange extract
3 drops red food coloring
5 drops yellow food coloring (suggested)

Steps:

  • Line a 9 inch square pan with "Release" foil or line with regular foil and spray with cooking spray.
  • Place marshmallow crème and white chips in a large mixing bowl.
  • Combine sugar, cream and butter in saucepan.
  • Turn heat to medium and cook, stirring once or twice, until mixture reaches 235°F
  • Remove from heat immediately and pour hot cream mixture into mixing bowl with chips and marshmallow crème.
  • Stir well with a wooden spoon -- mixture might look slightly stretchy and unappetizing, but don't worry, it will smooth out.
  • Remove 1 cup of mixture and set aside.
  • Stir orange extract and a few drops of each color food coloring into mixture which remains in bowl.
  • Stir until it reaches a lovely orange hue.
  • Adjust colors if needed.
  • Pour orange mixture into prepared pan. Pour or spoon white mixture on top.
  • Drag a knife through both to make swirls.
  • Using a sheet of foil, press down slightly to smooth top.
  • Let cool to room temperature (about 40 minutes) then chill for one hour or until set.
  • Lift fudge from pan using foil handles and using a large knife, score into squares.
