(1) 20 ounce bag cheese tortellini
1 cup pesto
1 and 1/2 cups cherry tomatoes, sliced in half
(1) 12 ounce container marinated mozzarella balls, drained
1/4 cup red onion, diced

Steps:

  • Bring a large pot of salted water to boil. Add tortellini and cook for 1 and 1/2 minutes. Do not over cook!
  • Drain and rinse under cold water until cool.
  • Place tortellini in a large serving bowl. Add in pesto, tomatoes, cheese, and onion. Toss well to coat.
  • Serve at once, or cover and place in the fridge for up to 5 days.

1 (9 ounce) package cheese tortellini
1 small red bell pepper, julienned
¾ cup broccoli florets, blanched
⅓ cup shredded carrots
⅓ cup pitted green olives
1 clove garlic, chopped
½ cup mayonnaise
¼ cup prepared basil pesto
¼ cup milk
2 tablespoons grated Parmesan cheese
1 tablespoon olive oil
1 tablespoon distilled white vinegar
1 bunch fresh spinach leaves

Steps:

  • Bring a large pot of lightly salted water to a boil. Place tortellini in the pot, and cook for 7 to 8 minutes, until al dente. Drain, and cool.
  • In a large bowl, mix the cooked tortellini, red bell pepper, broccoli, carrots, olives, and garlic.
  • In a separate bowl, stir together the mayonnaise, pesto, milk, Parmesan cheese, olive oil, and vinegar. Pour over the tortellini and vegetables, and gently toss to coat. Cover, and place in the refrigerator 1 hour, until chilled. Serve over spinach leaves.

6 slices bacon
20 ounces fresh cheese-filled tortellini
½ cup mayonnaise
½ cup white sugar
2 teaspoons cider vinegar
3 heads fresh broccoli, cut into florets
1 cup raisins
1 cup sunflower seeds
1 red onion, finely chopped

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Bring a large pot of lightly salted water to a boil. Cook tortellini in boiling water for 8 to 10 minutes or until al dente. Drain, and rinse under cold water.
  • In a small bowl, mix together mayonnaise, sugar and vinegar to make the dressing.

3 tablespoons pesto sauce
2 tablespoons pine nuts, toasted (optional)

  • Add the broccoli, cook for 2 minutes then add the tortellini and cook according to pack instructions.

140g Tenderstem broccoli , cut into short lengths
250g fresh tortellini
3 tbsp pesto (fresh if you can get it)
2 tbsp toasted pine nuts
1 tbsp balsamic vinegar
8 cherry tomatoes , halved

Steps:

  • Bring a large pan of water to the boil. Add the broccoli, cook for 2 mins, then add the tortellini and cook for 2 mins, or according to pack instructions. Drain everything, gently rinse under cold water until cool, then tip into a bowl. Toss with the pesto, pine nuts and balsamic vinegar. Add the tomatoes, pack into containers and chill. Let the salad get to room temperature during the morning to get the most flavour from the tomatoes and pesto.

1 pound bacon
4 cups chopped broccoli
1 pint grape tomatoes, halved
2 green onions, finely chopped
1 cup bottled coleslaw dressing

Steps:

  • Cook the tortellini according to the package directions, drain, rinse with cold water, and refrigerate until cool, about 30 minutes.

Very happy to share! This recipe is for a small crowd. If making just for your family, omit the rotini, and add only as much of the rest of the ingredients (about half) that you'd like. Don't worry, it's really simple and easy!

1 (14 ounce) can artichoke hearts, drained, quartered
1 (10 ounce) cont. grape tomatoes, halved lengthwise
1 (6 ounce) can medium black olives, drained, sliced in half lengthwise
1 green bell pepper, diced
1 (20 ounce) package cheese-filled egg tortellini, cooked al dente, drained (fresh or frozen)
1/3 cup olive oil, more if needed
1/4 cup parmesan cheese, the kind in the can
1 (8 ounce) jar basil pesto
1/2 teaspoon salt, more if needed
2 teaspoons minced garlic
12 ounces mozzarella cheese, cubed
8 ounces half of a 1 lb. box rotini pasta, cooked al dente, drained

Steps:

  • Cook pastas, set aside to drain and cool a bit.
  • In large bowl or punch bowl, add rest of ingredients, folding gently til well mixed.
  • Gently fold in pastas well.
  • Adjust seasoning to taste, meaning, add more salt, parmesan, etc., til you like it.
  • Serve immediately, or refrigerate.
  • *If you make this say a day ahead of time, you'll need to "refresh" this. Just add a bit more olive oil, salt and parmesan before serving.
  • This salad is best, though, room temp, or even slightly warm.

1 cup fresh parsley leaves, remove stems
1/4 cup pine nuts
2 garlic cloves
2 teaspoons dried basil
1 teaspoon salt
2/3 cup olive oil
1/2 cup grated parmesan cheese
1 lb cheese tortellini

Steps:

  • Chop parsley in a blender or food processor.
  • With motor still running, add pine nuts, garlic cloves, basil and salt.
  • Continue processing until garlic is finely chopped.
  • Slowly drizzle in olive oil.
  • Then stop machine and fold in parmesan cheese.
  • Cook tortellini according to package directions.
  • Drain and toss with sauce.

2 cups uncooked fancy pasta
2 cups chicken or 2 cups turkey
2 cups broccoli florets, steamed til barely tender
1 1/2 cups shredded low-fat mozzarella cheese
1/2 cup shredded parmesan cheese
1 cup lightly packed fresh basil leaf
2 -3 cloves garlic
1 cup fat-free mayonnaise or 1 cup low-fat mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt

Steps:

  • Cook and drain pasta; cool.
  • Combine pasta, meat, broccoli, and cheeses in large bowl.
  • Put basil and garlic in food processor or blender; whiz.
  • Add mayo to food processor or blender.
  • Mix thoroughly.
  • Stir into pasta mix.
  • Toss to coat.
  • Refrigerate for at least 4 hours before serving.
  • During the last 1/2 hour of chilling time, toss once to mix.
  • For color contrast, serve with cherry tomatoes, cut in halves.
