Tomato Salad with Lemon and Mint image

This fresh and bright tomato salad is good with cheeseburgers, grilled chicken, or tuna steaks.

1 tablespoon finely grated lemon zest
4 teaspoons fresh lemon juice
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1/4 cup thinly sliced white onion
2 pounds assorted plum and cherry tomatoes, coarsely chopped
2 tablespoons fresh mint leaves

Steps:

  • In a large bowl, whisk together lemon zest, lemon juice, and oil. Season with salt and pepper.
  • Add onion and tomatoes to bowl. Toss to combine. Season to taste with salt and pepper and sprinkle with mint leaves.

2 ripe red tomatoes (5 ounces each)
1 ripe yellow tomato (6 ounces)
3/4 teaspoon finely ground sea salt
1/4 teaspoon freshly ground black pepper
1 tablespoon plus 1 teaspoon lemon marmalade (see headnote)
1 tablespoon plus 1 teaspoon plain rice vinegar
1 tablespoon plus 1 teaspoon olive oil
Finely grated zest of 1 large lemon (1 1/2 teaspoons )
1 tablespoon Stilton cheese with lemon, crumbled (see headnote)
4 sprigs mint (finely chop the leaves from 2 sprigs; use 2 sprigs for garnish)

Steps:

  • 1 Wash, dry and core the tomatoes
  • 2 Cut off a thin slice from the bottom of each one so the fruit sits flat, then cut each tomato into 1/4-inch slices
  • 3 Alternate 2 red slices, then a yellow slice, in a circle pattern on a white dinner plate, overlapping edges slightly, until the plate is covered
  • 4 Sprinkle the tomatoes evenly with the salt and pepper
  • 5 Whisk together the marmalade, vinegar and oil in a small bowl until it has emulsified
  • 6 Use a spoon to drizzle the dressing evenly over the tomatoes
  • 7 Sprinkle with the lemon zest, followed by the crumbled cheese and then the chopped mint
  • 8 Garnish each portion with the remaining mint sprigs
  • 9 Serve at room temperature

3 cups (about 1 1/2 pints) cherry or grape tomatoes, halved
2 kirby cucumbers, seeded, and diced
1 lemon, juiced
3 teaspoons kosher salt
1 1/2 cups instant couscous (a 10-ounce box)
2 cups water
2 wide strips lemon zest
1/4 cup extra-virgin olive oil
Pinch cayenne
1/2 cup torn mint leaves, stems saved
1/2 cup roughly chopped flat leaf parsley, stems saved
3 scallions (white and green), chopped
1/2 cup toasted pine nuts, optional

Steps:

  • Toss the tomatoes, cucumbers, and lemon juice in a bowl with 2 teaspoons of the salt. Set aside.
  • Put the couscous into a large bowl. Bring the water, lemon zest, 3 tablespoons of the oil, the remaining salt, cayenne, and herb stems to a boil over high heat. Pour the liquid over the couscous, stir to separate any clumps. Cover with a lid, plate, or plastic wrap, set aside for 5 minutes. Remove the zest and herb stems and fluff with a fork.
  • Add the tomato mixture, scallions, mint, parsley, and pine nuts. Drizzle the remaining oil over the salad, toss and serve.

400g cherry tomato
1small red onion
handful of mint leaves
extra-virgin olive oil , for drizzling
a little lemon zest

Steps:

  • Halve the tomatoes and scatter over a large plate. Finely chop the red onion and tear up the mint leaves. Throw the onion and mint over the tomatoes. Can be kept, covered, 3-4 hours ahead. Just before serving, drizzle with extra virgin olive oil, season with salt and ground black pepper and finely grate a little lemon zest over the top.

Steps:

  • Salad:
  • Cut the tomatoes in half crosswise and squeeze lightly to remove the seeds. With a serrated knife, dice the tomatoes and transfer to a strainer to drain. In a salad bowl, mix together the cucumber, greens, scallions, herbs, jalapeños, and capers. Add the tomatoes.
  • Dressing:
  • To make the dressing, whisk together the olive oil, lemon juice, vinegar, lemon zest,and salt and pepper to taste. Pour over the salad and toss. Taste and adjust the seasoning. Refrigerate for 20 to 30 minutes to give the flavors time to meld. Sprinkle with sumac before serving if you like.

Chill the salad for 20 minutes, sprinkle it with the minced herbs, and garnish it with the herb sprig.

I adapted this from a "secret" Lebanese salad dressing recipe that was given to me by an old friend. This salad can be prepared up to 24 hours in advance -- just keep the tomato-mint-garlic mixture separate from the lettuce until ready to serve.

1 medium garlic clove
1/4 teaspoon salt
1 lemon, a second lemon if needed
1/4 cup olive oil
4 tomatoes, diced
8 -10 leaves of fresh mint, chopped
1 head romaine lettuce

Steps:

  • First, we make the dressing --
  • Mince (or press using a garlic press) the garlic and set in a glass or glass measuring cup.
  • Pour salt on the garlic.
  • Squeeze the lemon over the garlic. If the lemon wasn't very juicy, you might need to squeeze more lemon.
  • Add the olive oil GRADUALLY. The proportion of oil should be slightly less than half the amount of the lemon-garlic mixture.
  • Whisk the dressing with a fork until it is slightly creamy.
  • Place the diced tomatoes and chopped mint in a non-reactive bowl.
  • Pour the dressing over the tomato-mint mixture and stir well.
  • Cover and place in the fridge until ready for use. This mixture can keep up to 24 hours.
  • Meantime, rinse, dry and finely shred the Romaine lettuce and refrigerate until ready to use. If dry enough, the lettuce can also keep up to 24 hours.
  • When ready to use, pour the tomato-mint-garlic mixture over the lettuce, toss and serve.

Combine roasted lemon with fronds of fennel, cherry tomatoes, pomegranate and herbs to make this colourful summer salad. It makes a perfect sharing dish

2 lemons
2 tbsp extra virgin olive oil
pinch of sugar
500g mixed tomatoes (I used cherry tomatoes and some larger ones)
3 fennel bulbs
100g pomegranate seeds
1⁄2 small pack tarragon leaves
1⁄2 small pack parsley leaves
1⁄2 small pack mint leaves

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Slice 1 lemon into thin rounds and spread out on the baking tray, drizzle over 1/2 tbsp oil and sprinkle over the sugar. Roast for 20-25 mins until shrivelled and caramelised in places. Keep an eye on them - you may have to take some out the oven before the others are done. These can be made in the morning and kept at room temperature.
  • While the lemons are cooking, roughly chop the tomatoes and thinly slice the fennel, saving the fronds. Put in a bowl with the remaining olive oil, juice from the other lemon and pomegranate seeds. Season to taste, then give everything a good mix.
  • When you're ready to serve, roughly chop all the herbs and mix them into the salad along with the roasted lemons and fennel fronds.
