- Preheat the oven to 425°F. Oil a 9x5-inch loaf pan; set aside.
- Cook bacon in a large skillet over medium-high heat until just crisp, 8 to 10 minutes.
- Using a slotted spoon, transfer bacon to a paper-towel-lined plate; set aside to let cool.
- In a medium bowl, toss together flour, greens, cheese, baking powder, salt, pepper and cooled bacon.
- In a large bowl, whisk together milk, oil and eggs.
- Add flour mixture to milk mixture and fold together just until combined.
- Transfer to prepared pan and bake until cooked through and deep golden brown, 30 to 35 minutes.
- Set aside to let cool until warm; and then run a knife around the edges to loosen and turn out the loaf. Cut into slices and serve.

- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Heat a large skillet over medium heat. Add the beef and cook, stirring to break it up into small crumbles, until cooked through, 8 to 10 minutes. Meanwhile, roughly chop half of the cheese, leaving other half as slices. Set aside.
- Using a slotted spoon, remove the beef from the skillet and transfer to a large bowl; discard the fat and liquid in the pan. Let the beef cool completely in the bowl, then stir in the chopped cheese.
- On a lightly floured work surface, roll the dough into a 20-by-14-inch rectangle. Arrange the beef and cheese mixture evenly on one half of the dough, starting on the shorter end and leaving a 1-inch border on the sides. Drizzle 2 tablespoons ketchup evenly over the beef mixture and the uncovered half of the dough; repeat with all the mustard, and then the red onion. Lay down the remaining cheese slices evenly over the half of the dough with no beef mixture, leaving a 1-inch border on the sides. Arrange the bacon pieces and 24 dill pickle chips just over the beef mixture.
- Working from the short side with the beef mixture, tightly roll up the dough into a log, jelly-roll style. Pinch the open ends together to seal, then tuck them underneath the log. Transfer the log, seam side-down, to the prepared baking sheet, brush all over with water and sprinkle with sesame seeds. Bake, rotating the pan halfway through, until the bread is golden brown, about 40 minutes.
- While the bread bakes, whisk together the mayonnaise, onion flakes, sugar, a pinch of salt and pepper and the remaining 3 tablespoons ketchup, 2 tablespoons finely chopped dill pickle chips and 1 teaspoon pickle brine in a small bowl. Taste, and season the special sauce with additional salt if needed. Let the bread cool for 10 minutes. Slice into 8 pieces and serve warm with the special sauce.
BACON BREAD PUDDING

- Preheat the oven to 400 degrees F. Arrange the bacon, closely spaced, on a rimmed baking sheet. Bake, flipping halfway through, until the fat is rendered and the bacon is lightly browned but not at all crisp, about 10 minutes. Drain on paper towels.
- Meanwhile, add the sausage to a medium nonstick skillet over medium heat. Cook, crumbling with a wooden spoon, until no longer pink, about 4 minutes. Drain alongside the bacon.
- Reduce the oven temperature to 375 degrees F. Beat the eggs and half-and-half in a large bowl. Season with 1/2 teaspoon salt and a generous grinding of black pepper. Fold in the bread cubes and the cooked sausage and let soak for 5 minutes.
- In a 12-cup muffin tin, line each cup with a slice of the bacon, making a ring so the ends overlap. Divide the bread mixture among the cups, using a tablespoon to keep it neat. Sprinkle the tops with half of the Cheddar, followed by the red pepper and scallion and then the rest of the Cheddar.
- Bake until puffed and golden and a tester inserted into the center comes out mostly clean, about 20 minutes. Remove the bread puddings from the muffin tin with a fork. Serve hot or warm.
BACON RANCH CHEESY BREAD

- Preheat the oven to 350 degrees F.
- Put the Monterey Jack, Cheddar, parsley, bacon and onion whites in a bowl and mix well.
- Cut the bread in strips in one direction, being careful not to cut all the way through the loaf. Rotate the bread 90 degrees and cut in the other direction to create small squares across the top of the loaf. Move slowly and use caution. Place the bread on a large sheet of aluminum foil.
- Stuff the cheese mixture in between the rows of squares. Mix the melted butter and ranch dressing, then drizzle over the top. Wrap the loaf in the foil and bake for 25 minutes. Open the foil and continue to bake until heated through and the cheese is melted and bubbly, another 10 minutes. Sprinkle with the onion greens and serve immediately.

- Preheat oven to 350°.
- Prepare bread pan by greasing with butter; set aside.
- In a large bowl, combine flour, baking powder, salt and sugar with a whisk. Make a well in the center; add bacon, about 3/4 of cheese and beer into the well.
- Stir mixture with a spoon until combined.
- Pour mixture into prepared bread pan; add remaining cheese and drizzle with 1 tablespoon of butter.
- Bake for 30 minutes; remove from oven and drizzle remaining butter over the top.
- Bake for an additional 25-30 minutes or until browned on top and loaf thumps when you tap the top.

- Add yeast and sugar to 1/2 cup of the water. Stir to dissolve and allow to bubble.
- Add the rest of the water.
- Mix 2 cups of flour into the water and blend well.
- Allow this sponge to rise for 30 minutes.
- Mix 2 more cups of flour, bacon grease, bacon, and salt into the sponge and beat on slow speed.
- Add the rest of the flour, a little at a time to make a soft dough.
- Turn out on a floured kneading board and knead for 5 minutes or until smooth and elastic.
- Oil the ball of dough and put it into an oiled bowl to rise for one hour or until doubled. (I used bacon grease)
- Punch the dough down and divide into 3 parts.
- Form each part into loaves and place in greased pans.
- Allow to rise until doubled, about 30 minutes.
- Preheat oven to 375F
- Brush the tops of the loaves with bacon grease.
- Bake for 30 minutes or until loaves sound hollow.
- Remove from pans and cool before slicing.

- Coat 9"x5"x3" loaf pan with cooking spray.
- In a skillet, cook the bacon just until crisp.

- Discard all but 2 tablespoons of the bacon grease.
