Bright and tangy plant-based tacos with mango slaw, guacamole, and baked tofu.

Provided by Brie Norris

Categories     Meatless Meals For Two

Time 28m

Number Of Ingredients 12

4 fajita-sized flour tortillas
1 teaspoon olive oil
7 ounces baked tofu, storebought, sriracha or teriyaki flavor
2 ounces prepared guacamole (or half a small avocado, seeded and sliced)
1 cup coleslaw mix (about 3 ounces), or shredded cabbage
1/2 cup diced mango, about half a large mango
1/2 cup cilantro leaves, roughly chopped (see note)
A small chunk of red onion (about 1-inch wide), thinly sliced
Half a small jalapeno, seeded and diced (omit if you prefer less spicy heat)
Juice of 1 lime, about 2 to 3 teaspoons
1 teaspoon maple syrup or honey (optional)
Salt and Pepper, to taste

Steps:

  • In a large bowl combine the coleslaw mix, mango, cilantro, red onion, jalapeno, and lime juice. Toss well to combine. Taste and add a little maple syrup or honey and salt and black pepper as desired, set aside.
  • Remove tofu from packaging and slice into 8 equal pieces. Heat the oil in a large skillet over medium-high heat. Add tofu and cook until browned about 3 to 4 minutes on each side.
  • While the tofu is heating, warm the tortillas using one of the methods in the notes section. Once warmed through, place tortillas in a clean towel and cover to keep warm.
  • To assemble the tacos, spread tortillas with guacamole. Layer each one with 2 tofu pieces and 1/4 of the slaw mixture. Serve immediately with extra lime wedges, if desired.

HONEY GARLIC CHILE BURGERS WITH MANGO SLAW

Honey Garlic Chile Burgers with Mango Slaw image

My local butcher in Southampton, New York makes a garlic chile chicken sausage with traditional Thai ingredients that I love. So, I wanted to make my own version of that, but in burger form! I love the fresh flavor of this burger. The cool, crisp cabbage and sweetness of the mango in the slaw pair perfectly with spicy chile garlic paste and the salty umami flavor of the fish sauce in the patty. Every bite is better than the last!

Time 40m

Yield 4 servings

Number Of Ingredients 25

1 pound ground chicken
2 tablespoons fish sauce
1 tablespoon low-sodium soy sauce
1 teaspoon chile-garlic paste, such as sambal
1 teaspoon freshly grated garlic
1 teaspoon grated fresh ginger
1 teaspoon sesame oil
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh mint
1 tablespoon avocado oil
2 tablespoons lime juice
2 tablespoons avocado oil or vegetable oil
2 tablespoons rice vinegar
1 tablespoon honey
Kosher salt and freshly ground black pepper
1 small head napa cabbage, very thinly shredded
1/4 cup very thinly sliced red bell pepper
1/4 cup very thinly sliced mango
1 tablespoon chopped cilantro leaves
1 tablespoon chopped mint leaves
1 tablespoon thinly sliced scallions, white parts only
2 tablespoons mayonnaise
1 tablespoon chile garlic paste, such as sambal
1/2 teaspoon honey
4 potato rolls, for serving

Steps:

  • For the patties: In a medium bowl, combine the ground chicken, fish sauce, soy sauce, chile-garlic paste, garlic, ginger, sesame oil, cilantro and mint. Gently but thoroughly combine with your hands and form into 4 equal patties.
  • Preheat the avocado oil in a large skillet over medium-high heat. Cook the patties until golden brown and the internal temperature reaches 165 degrees F, about 5 minutes per side.
  • For the slaw: Meanwhile, in a large bowl, whisk together the lime juice, avocado oil, rice vinegar, honey and salt and pepper to taste. Add the cabbage, bell pepper, mango, cilantro, mint and scallions and toss to coat well. Season with salt if necessary. Set aside.
  • For the mayo: In a small bowl, whisk together the mayonnaise, chile garlic paste and honey. Set aside in the refrigerator until ready to use.
  • Spread the mayo on the rolls. Transfer the patties to the rolls and top with the slaw. Serve.

Got this low fat, tasty main vegetarian recipe from a grocery store in Los Angeles. Presentation is beautiful, and it tastes as good as it looks. Try to marinate the tofu for as long as you can. Prep time includes minimal marinade time.

MEXICAN GRILLED TOFU WITH JICAMA SLAW

Mexican Grilled Tofu With Jicama Slaw image

Although this recipe is from Vegetarian Times Magazine (June, 1999, page 26), this marinade is really good, and would work well on anything you might wish to grill (e.g., chicken, flank steak). "To round out the meal, toast some corn tortillas on the grill alongside the tofu (add toward the end of grilling time) and serve with the salad." (Prep time does not include time to drain or marinate.)

Provided by Heather U.

Categories     Soy/Tofu

Time 40m

Yield 4 serving(s)

Number Of Ingredients 15

1 lb extra firm tofu, well-drained
4 medium garlic cloves, crushed
1 tablespoon cumin seeds or 1 teaspoon ground cumin
1 teaspoon dried oregano
3/4 teaspoon salt
6 tablespoons fresh lime juice, divided
1 tablespoon fresh orange juice
2 tablespoons light olive oil or 2 tablespoons vegetable oil, divided
2 teaspoons honey or 2 teaspoons pure maple syrup
1/4 teaspoon hot sauce
1 1/4 lbs jicama, peeled and grated (1 small)
1/2 lb carrot, peeled and grated (3 medium)
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges, for garnish
2 fresh cilantro stems, for garnish

Steps:

  • Cut tofu in half crosswise, then holding knife parallel to work surface, split each piece in half horizontally. Place tofu pieces in baking dish and lay large piece of plastic wrap over surface. Place plate on top and weigh down with one or two cans. Refrigerate tofu 30 to 45 minutes to draw out excess moisture.
  • Meanwhile, using mortar and pestle or side of chef's knife, mash garlic, cumin, oregano and salt into paste. Transfer to small bowl. Whisk in 3 tbsp lime juice and the orange juice with 1 tbsp oil. Season with pepper.
  • Remove tofu pieces from baking dish and blot dry with paper towels. Discard liquid in dish. Return tofu to dish. Spoon half of lime juice mixture over tofu, spreading spices evenly and turning tofu to coat. Cover and refrigerate at least 2 hours or up to 1 day, turning occasionally.
  • Prepare a hot charcoal fire or preheat gas grill on high.
  • While grill is heating, prepare slaw. In medium bowl, whisk together 3 tbsp lime juice, the remaining 1 tbsp oil, honey and hot sauce. Add jicama, carrots and cilantro; toss well. Season with salt and pepper.
  • Lightly oil grill rack. Remove tofu from marinade, reserving marinade for basting. Grill tofu, basting occasionally, until lightly browned, 3 to 4 minutes per side.
  • Divide slaw among serving plates. Top each with a piece of grilled tofu. Garnish with lime wedges and cilantro sprigs and serve right away.

Yield 4 Servings

Number Of Ingredients 36

Tofu
2 14-oz. blocks extra-firm tofu, drained
2 small red onions, coarsely chopped
10 scallions, cut into 2" pieces
12 garlic cloves
4-6 Scotch bonnet or habanero chiles, seeds removed, or 1-2 tsp. Scotch bonnet chile powder
12 sprigs thyme, leaves picked
2 1" pieces ginger, peeled
16-20 allspice berries or 2 Tbsp. ground allspice
⅔ cup soy sauce
½ cup (packed) dark brown sugar
½ cup distilled white vinegar
¼ cup fresh lime juice
1 Tbsp. plus 1 tsp. browning sauce (preferably Grace; optional)
1 Tbsp. freshly ground black pepper
2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt
½ tsp. freshly grated nutmeg
½ tsp. ground cinnamon
¼ cup avocado oil or vegetable oil
Salsa
Juice of 1 lime
1 Scotch bonnet chile or jalapeño, seeds removed
2 cups coarsely chopped ripe mango
⅔ cup coarsely chopped red bell pepper
½ cup coarsely chopped red onion
2 Tbsp. coarsely chopped cilantro
2 tsp. agave nectar or honey (optional)
½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, plus more
Plantains and assembly
¼ cup avocado oil or vegetable oil, plus more for grill
⅔ cup (packed) dark brown sugar
¼ cup distilled white vinegar
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
1 tsp. freshly ground black pepper
4 very ripe (almost black) plantains, halved lengthwise
Thinly sliced scallions and lime wedges (for serving)

Steps:

  • Tofu
  • Wrap tofu in 2 layers of paper towel, place on a rimmed baking sheet, and weigh down with something heavy (large cans or a small cast-iron skillet work well). Let sit 30 minutes. (Alternatively, press tofu in a tofu press 15-30 minutes.)
  • Meanwhile, process red onions, scallions, garlic, chiles, thyme, ginger, allspice, soy sauce, brown sugar, vinegar, lime juice, browning sauce (if using), black pepper, salt, nutmeg, and cinnamon in a food processor or blender to a coarse purée. With motor running, stream in oil and process to a fine purée. Transfer jerk sauce to a bowl.
  • Unwrap tofu and cut each block crosswise into 6 slices. Pour 1 cup jerk sauce into a baking dish, then add tofu slices and turn to coat. Set remaining jerk sauce aside for brushing and serving. Cover and chill tofu at least 30 minutes and up to 1 day. Do ahead: Jerk sauce can be made 3 weeks ahead. Cover and chill.
  • Salsa
  • Pulse lime juice, chile, mango, bell pepper, red onion, cilantro, agave (if using),and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a food processor just until coarsely chopped, 5-10 pulses. Taste salsa and season with more salt if needed. Transfer to a bowl; cover and chill until ready to serve.
  • Plantains and assembly
  • Prepare a grill for medium-high heat; lightly oil grate. Arrange tofu on grate, cover, and grill, brushing with reserved jerk sauce as you turn tofu, until lightly browned and grill marks appear, about 5 minutes per side. Transfer to a plate and brush with additional sauce, if desired.
  • Meanwhile, mix brown sugar, vinegar, salt, pepper, and remaining ¼ cup oil in a small bowl. Brush cut sides of plantains generously with mixture.
  • Arrange plantains, cut side down, on grate, cover, and grill, brushing all over with brown sugar mixture as you turn, until deep golden and grill marks appear, about 7 minutes per side. Transfer plantains to plates with tofu.
  • Top tofu and plantains with scallions and serve with salsa and lime wedges.
