I am not sure why, but I had never used much couscous in my cooking until I played ZWT & No Africa was 1 of the Tour destinations. I fell deeply in "serious like" w/it & use it a lot in my cooking now. I am also a big fan of recipes that combine pasta plus veggie elements to work well as a single side-dish w/most meat choices. All that said, I found this recipe at a cooking-by-country website, captured it for myself & decided to share it w/you. Times were vague -- So I opted to allow 5 min for ingredient prep, 20 min cook time & not include the 1 hr chill time. Enjoy!

1 lb uncooked couscous or 450 g uncooked couscous
1/2 teaspoon salt
boiling water (as directed below)
4 ounces diced carrots or 100 g diced carrots
1 bell pepper (deseeded & diced)
4 ounces green beans (cut in short lengths ) or 100 g green beans (cut in short lengths )
1 red onion, chopped
2 ounces raisins or 50 g raisins
1 ounce almonds or 25 g almonds, chopped
1/2 cup olive oil
1/4 cup lemon juice
1/2 teaspoon salt
1/4 teaspoon cinnamon
3 tablespoons orange juice
4 tablespoons fresh parsley
1 tablespoon of fresh mint, chopped

Steps:

  • Place the couscous & salt in lrg bowl. Add enough boiling water to cover it by ¼-inch. Cover tightly w/cling-film & allow to stand for 8-10 minutes.
  • Meanwhile, place the carrots, bell pepper & beans in a saucepan w/enough water to just cover. Bring to a boil & cook for 8-10 min until just tender.
  • Meanwhile, mix together all dressing ingredients in a sml bowl.
  • Drain the cooked vegetables well & add to the cooked couscous, mixing well w/a fork.
  • Add onions, raisins & almonds. Then pour in the dressing & toss well. Chill for at least 1 hr before serving.
  • NOTE: I can look into my creative cooking future & foresee that I may eventually play w/the flavor profile of this recipe. Using the salad dressing as the flavor mechanism would allow for different fruit flavors & even a sweet version that adds sugar or honey to the mix. Feel free to use your own imagination.

  • In a large bowl combine boiling water, couscous and salt, stir and let stand 5 minutes, fluff with fork steam the bell pepper, carrots, and green beans for 1 minute& mix with couscous Mix remaining ingredients together& pour over couscous.

2 garlic cloves, mashed
1 teaspoon salt
2 tablespoons lemon juice, freshly squeezed
1 teaspoon Dijon mustard
2 teaspoons white balsamic vinegar
3 tablespoons extra virgin olive oil
fresh ground black pepper
1 1/3 cups black olives
1 1/3 cups green olives
1/4 cup red onion, finely diced
1/2 cup fresh cilantro, minced or 1/2 cup flat leaf parsley
2 -3 tablespoons of fresh mint, minced
1/4 cup parmesan cheese (shaved) (optional)

Steps:

  • Couscous - Bring 2 ½ cups of water to a boil in a med saucepan. Salt the water & add couscous. Cover the saucepan & reduce the heat to low. Simmer for 5 minutes. Remove the pan from the heat & allow the couscous to sit (still covered) for another 5-10 minutes. Drain any excess liquid & chill until ready to make the salad.
  • Dressing & Assembly - Mash together the garlic & salt. Stir in the lemon juice, mustard, vinegar, olive oil & pepper. Toss the dressing w/the olives, red onion, cilantro & mint into the couscous. Refrigerate until ready to serve.
  • Notes: Can be made a dy in advance. Optional before serving to shave Parmesan cheese over the salad.

It can be served hot or cold, can be served as a starter or a side-dish to virtually all main-courses, can be made ahead, is ingredient friendly & has a 35 min prep time (Cool time not included)..I rest my case. 1 1/2 lbs potatoes or 675 g potatoes
4 tablespoons vegetable oil or 4 tablespoons ghee
1/4 teaspoon garam masala
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon chili powder
salt

Steps:

  • Place unpeeled potatoes in a lrg saucepan, cover w/water, bring to the boil & cook for 20 min or until very tender. Remove from the heat & allow to cool.
  • Peel the cold potatoes & cut into 1-in cubes (2.5 cm).
  • Heat the oil (or ghee) in a lrg frying pan until hot. Add potato cubes & fry until golden brown on all sides.
  • Sprinkle potatoes w/the remaining ingredients, stir to evenly coat & add salt as desired. Remove w/a slotted spoon & serve hot or cold.

Entered for ZWT-9, this is the 1st of 3 recipes from an article at the Eating Well website titled "Healthy Couscous Recipes". The recipe list at the website pays homage to the main Moroccan Berber dish most people are familiar with & consider a national delicacy - Couscous. Per Wikipedia, couscous is a staple food throughout the No African cuisines of Morocco, Algeria, Tunisia, Mauritania & Libya. From the website intro: "This cinnamon & cumin-spiked couscous w/chicken takes its inspiration from Morocco. It's made mostly w/pantry staples. All you require is some chicken thighs (or breasts), a bunch of cilantro & an orange. The orange slices become tender after cooking, so you can eat them - skin & all. For a variation, sub diced leg of lamb for the chicken. Serve w/steamed green beans or a spinach salad." Prep & Cook times were given as an identical total, but I have allowed an extra 10 min for assembly of ingredients & Prep Step 1. Enjoy!

6 chicken thighs (boneless, skinless. May use breasts, About 1 1/2 lbs)
1/4 teaspoon salt
1/4 teaspoon black pepper (freshly ground)
1 1/4 teaspoons cinnamon (divided)
1 1/4 teaspoons cumin (divided)
2 tablespoons olive oil (divided)
1 medium onion (thinly sliced)
1 (14 ounce) can diced tomatoes (with juice)
1 (15 ounce) can chickpeas (rinsed)
1 cup reduced-sodium chicken broth
4 tablespoons fresh cilantro (chopped & divided)
1 orange (scrubbed, halved & cut into 1/4-in slices)
1 cup whole wheat couscous

Steps:

  • Pat chicken thighs dry w/a paper towel. Season w/salt, pepper, 1/4 tsp cinnamon & 1/4 teaspoon cumin.
  • Heat 1 tbsp oil in a Dutch oven over med heat. Add the chicken thighs & cook until browned (3-4 min per side). Transfer to a plate & set aside.
  • Add the remaining 1 tbsp oil & onion to the pan. Cook (stirring occ) until the onion is softened (about 2 min). Add the remaining 1 tsp each of cinnamon & cumin. Cook (stirring constantly) for 30 seconds. Add tomatoes & their juice, chickpeas, broth, 2 tbsp cilantro & orange slices. Bring to a simmer (stirring w/a wooden spoon to scrape up any browned bits). Return the chicken & any collected juice to the pan. Cover & cook over med-low heat until the chicken is cooked through (5-10 min). Transfer the chicken to a clean plate.
  • Bring the cooking liquid back to a boil. Stir in couscous & place the chicken thighs on top of the mixture. Remove from heat, cover & let stand for 5 min before serving. Garnish w/the remaining cilantro.
  • NOTE: Altho not mentioned in the recipe, I have allowed for using chicken breasts vs thighs because I prefer them. However, if lrg breasts are used, you may want to consider adjusting the ingredients & cooking times accordingly.

FRESH is a sml chain of Canadian-owned & operated restaurants, which originally began as a juice bar 20 yrs ago. Everything on their menu is vegan, altho they offer some vegetarian dishes at their takeout counter. 1 of their MOST requested recipes is their Tangled Thai Salad (recipe entered by me) & FRESH uses this "Salad Topper" w/the Tangled Thai Salad. Per the recipe intro: "This crunchy mix adds great flavor & texture to any salad. If you want to use it as a topper for fruit salad, yogurt or oatmeal - Leave the salt out & replace it with sugar. If you can't find puffed quinoa at your local health food store, you can sub puffed millet. This recipe makes 1 3/4 cups & the mixture keeps for months in an airtight container." Altho used w/the Tangled Thai Salad, the intro suggested a wider variety of uses & I saw it as an optional add to the Tangled Thai Salad. SO I decided to enter it as a separate recipe. Enjoy!

Everything on their menu is vegan, altho they offer some vegetarian dishes at their takeout counter. They have published 3 cookbooks described as "for those relatively comfortable w/cooking (particularly vegan cooking)" & "with restaurant quality pretty much guaranteed". This recipe is FRESH's famous Tangled Thai Salad - 1 of their MOST requested recipes. FRESH uses a "spiralizer" to cut the carrot & yellow beets into super-long, thin strands that form a big round tangle of a salad, but a julienne peeler will give you nice long strands as well. If you have no spiralizer or julienne peeler, just cut the veggies into sticks as thin & long as you can. Said to serve "1 person as a complete meal", it also serves 2-3 as a side-salad. FRESH uses their "Salad Topper" w/this Thai salad, but I saw it as optional & have entered it as a separate recipe. This is a no-cook recipe & I have allowed 20 min for ingredient prep plus assembly.   • Pile the carrot & beet on top & drizzle w/the dressing.
  • Garnish w/cucumber, peanuts, Salad Topper (if using - recipe entered separately), lime & cilantro. Drizzle w/4 tbsp of the Peanut Lime Dressing.
  • For the Dressing:.
  • In a blender, puree all ingredients except the sunflower oil.
  • W/blender running, add sunflower oil in a thin stream until dressing is emulsified.
  • NOTE - "The Peanut Lime Dressing makes 1 cup, keeps for a wk in the fridge, is delicious on the Tangled Thai Salad & would be equally good on any salad or even poured on top of cold noodles.".

Found at the biggirlssmallkitchen website, this easy-fix & sure-to-be-tasty sandwich was featured by Kelsey Brown in a "Brown Baggin' It" article primarily directed at college students & the working masses who dine in "Break Rooms" more often than not. Kelsey said: "Make your fellow students or co-workers jealous when they're unwrapping their frozen "diet" entrées & you whip out this fresh, light & flavorful Moroccan Chicken Salad Sandwich in Pita Bread." Do not be intimidated by what may appear to be a complex set of ingredients. The ingredients are simple & the rest is a matter of spicing. Ingredient prep & assembly time was estimated. There was no cook time since the recipe begins w/pre-cooked chicken. Enjoy!

  • In a med-sized bowl, combine chicken w/onion, herbs, olives & raisins. In a larger bowl, combine orange juice w/olive oil, garlic & spices. Stir vigorously.
  • Add chicken mixture to the liquids & stir to coat. Do a taste test. If too dry or not enough "kick", adjust spices &/or olive oil to taste.
  • Cut 1 pita bread round down the middle & open gently to fill. Smear inside walls w/mayo (or avocado) & stuff lightly w/lettuce. Fill ea of the 2 pita halves w/approx 1/6 of the chicken mixture & wrap them in foil. 2/3 of the meat mixture should be left for 2 more dys of pita sandwiches.
