1 (4 1/2 lb) chicken
sea salt
fresh ground pepper
3 large oranges
2 garlic cloves, unpeeled and crushed
2 tablespoons unsalted butter, melted
2 teaspoons herbes de provence
1 tablespoon vegetable oil
1/2 cup low sodium chicken broth

Steps:

  • Pre-heat the oven to 425' F.
  • Wash and pat the chicken dry, remove and excess fat. Season the chicken cavity with salt and pepper.
  • Squeeze the juice from 1 orange, then set the juice aside. Put the squeezed orange halves and garlic inside the chicken. Skewer the cavity closed and truss the bird.
  • Brush the chicken all over with the melted butter and then season with salt and pepperand sprinkle with herbes de provence. Cut the remaining 2 oranges into quaters.
  • Coat the bottom of a roasting pan with the oil, then place the chicken in the pan, with the orange quaters.
  • Roast chicken for 20 min then reduce oven temperature to 350' F. Continue to roast the chicken, basting with the pan juice for another hour or until an instant-read thermometer inserted into thickest part of thigh reads 165'F.
  • Transfer chicken and oranges to serving platter, placing chicken breast-side down. Let rest loosely covered with aluminium foil for 10 to 15 minute.
  • Tip the roasting pan and spoon out any excess fat. Place the pan over medium heat, add chicken stock and deglaze the pan by scraping up the browned bits with wooden spoon. Add the orange juice and bring to boil, then boil until the liquid is reduced to about 2/3 cup then season with salt and pepper.
  • Remove the trussing string from chicken, turn chicken breast side up and carve. Add any juices from the chicken to the sauce. Serve the chicken with the sauce and orange wedges.
  • (for thicker sauce add flour).

2 oranges (1 juiced, 1 thinly sliced)
3 tablespoons honey
3 tablespoons grainy mustard
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
8 skin-on, bone-in chicken thighs (about 2 1/2 pounds)
1 bulb fennel, thinly sliced, fronds reserved
1 red onion, thinly sliced
1 pound fingerling potatoes, halved lengthwise, then crosswise if large
8 sprigs thyme, halved
1 tablespoon fennel seeds, crushed

Steps:

  • Place a rimmed baking sheet in the upper third of the oven and preheat to 500 degrees F. Whisk the orange juice, honey, mustard, olive oil, 1 teaspoon salt and a few grinds of pepper in a large bowl. Add the chicken, sliced oranges, sliced fennel, red onion, potatoes, thyme and fennel seeds; toss to coat.
  • Remove the hot baking sheet from the oven and add the vegetables in a single layer. Arrange the chicken skin-side up on top of the vegetables; season with salt and pepper. Return to the oven and roast until the chicken is golden and cooked through and the vegetables are tender, about 30 minutes. Top with fennel fronds.

5 1/2 lbs whole chickens
1 orange, juice and zest
1 teaspoon dried ancho chile powder
1 teaspoon smoked paprika
1/4 teaspoon cayenne
1 tablespoon kosher salt
1/2 teaspoon black pepper
2 teaspoons fresh thyme, chopped
2 teaspoons fresh rosemary, chopped
2 teaspoons fresh Italian parsley, chopped
2 teaspoons fresh lavender, chopped
2 teaspoons fresh chives, snipped
1/4 cup agave nectar or 1/4 cup honey
3 tablespoons garlic, minced
2 yellow onions, sliced
2 teaspoons extra virgin olive oil

Steps:

  • Remove giblets and neck from cavity of chicken. Discard or save for another use. Rinse chicken inside and out and pat dry. Check the chicken for pin feathers and remove any that you see. Season liberally with salt and pepper inside the cavity of the chicken and on the skin.
  • In a gallon ziplock bag, combine orange juice, zest, ancho, paprika, cayenne, salt, pepper, thyme, rosemary, parsley, lavender, chives, agave nectar, and garlic. Place the chicken in the bag and seal. Then smoosh the chicken around to coat with the marinade and rub into the skin. Place the bag into a dish in case it begins to leak. Place in the fridge overnight or up to 24 hours. Turn the chicken over halfway through marinating time.
  • Remove the chicken from the fridge about 30 minutes before roasting to allow it to come up slightly in temperature so that it will cook more evenly. Truss the chicken ( you can find instructions on how to do this on youtube). Preheat the oven to 425* F. Place the sliced onions in the bottom of a roasting pan, place the trussed chicken on the onions and pour the marinade over all. Drizzle the chicken with the olive oil and rub into the skin slightly.
  • Roast for 20 minutes at 425* then reduce heat to 350*. Continue roasting for 45-55 minutes, basting the chicken every 15 minutes. Remove from the oven and allow the chicken to rest for 15 minutes before slicing to allow the juices to redistribute.

1/2 cup orange juice
1/2 lime, juiced (about 1 tablespoon)
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons canola oil
2 boneless skinless chicken breasts, about 8 ounces each
1 ripe Haas avocado, diced
1/2 small red onion, thinly sliced
1/3 cup fresh cilantro, coarsely chopped
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 lime, juiced (about 1 tablespoon)
1 tablespoon extra-virgin olive oil
Three 6-inch blue or white corn tortillas
1 tablespoon extra-virgin olive oil
1/2 lime juiced (about 1 tablespoon)

Steps:

  • For the chicken: Preheat 2 cast-iron grill pans over medium heat.
  • Whisk together the ancho chile powder, New Mexican chile powder, oregano, cumin, garlic powder, onion powder, orange juice, lime juice and season with salt and pepper in a medium bowl. Add the canola oil and whisk. Put the chicken in the marinade, turning the chicken to coat both sides.
  • Grill the chicken until golden brown and slightly charred on one side, about 4 minutes. Flip and cook the other side until the chicken is cooked through, about 4 more minutes; the juices should run clear and the meat thermometer should read 165 degrees F.
  • Meanwhile, for the salad: Put the avocado, onions, cilantro, salt, pepper, lime juice and olive oil in a medium bowl. Fold the ingredients with a rubber spatula, gently breaking up the avocado in the process.
  • To serve: Grill the tortillas on both sides until lightly marked and warmed through, about 10 seconds per side. Then fold in half and place on the side of a serving dish.
  • Place the chicken in the center of the serving dish and top with a scoop of the salad. Drizzle with olive oil and lime juice and garnish with a sprig of cilantro.

ROASTED ORANGE ROSEMARY HONEY GLAZED CHICKEN

This is always a hit when I make it for dinner parties and Boxing Day dinner because the chicken is always fall-off-the-bone juicy and people love the glaze. People always go for seconds! You may quarter 2 chickens instead if you aren't able to get just legs from your butcher, but I find the legs are juicier and save money. Serve this dish with fragrant rice and dilled carrots or roasted asparagus.

8 large chicken legs
1 tablespoon salt
1 cup honey
1 cup orange juice with pulp
½ cup unsalted butter, at room temperature
7 sprigs fresh rosemary, finely chopped
2 oranges, zested

Steps:

  • Sprinkle chicken with salt and place in a large glass or plastic bowl.
  • Whisk together honey, orange juice, butter, rosemary, orange zest, and garlic. Pour orange mixture over chicken; cover with plastic wrap and refrigerate at least 1 hour or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken legs in a single layer in a roasting pan; pour orange mixture over chicken.
  • Roast for 30 minutes in the preheated oven; reduce temperature to 325 degrees F (160 degrees C). Baste chicken with pan juices every 20 minutes until chicken is a deep orange brown color, no longer pink at the bone, and juices run clear, about 90 minutes. Whole tangerines, peel and all, roast alongside chicken in a sweetened soy sauce that thickens into a glaze and lacquers the bird. The fruit wedges soften in the syrupy sauce while infusing it with their floral bittersweetness. Reminiscent of savory Cantonese soy sauce chicken and tangy American Chinese orange chicken, this dish also combines the warmth of ginger with the bit of heat from ground hot chiles. You can eat the tangerine wedges along with the chicken, which is delicious with its sauce over steamed rice or boiled noodles. Serve with stir-fried brussels sprouts or bok choy.

5 small tangerines or clementines
1/2 packed cup dark brown sugar
1/4 cup soy sauce
1 1/2 teaspoons rice vinegar or distilled white vinegar
1 teaspoon ground cayenne or other hot red ground chile
1 (4-pound) whole chicken
Salt and black pepper
8 slices peeled fresh ginger

Steps:

  • Heat oven to 400 degrees.
  • Squeeze 1/4 cup juice from 2 to 3 tangerines into a small bowl; reserve the spent peels. Cut the remaining tangerines into wedges with their peels intact, and set aside. Add the brown sugar, soy sauce, vinegar and cayenne to the tangerine juice and whisk until the sugar dissolves.
  • Generously season the chicken inside and out with salt and pepper. Tuck the wingtips behind the body. Stuff the tangerine peels and 6 ginger slices into the cavity, then tie the legs together using kitchen twine. Place in a large ovenproof skillet, and scatter the tangerine wedges and remaining 2 slices ginger around the chicken.
  • Slowly pour the juice mixture all over the chicken, then slide the skillet into the oven. Roast for 30 minutes.
  • Using a large spoon or baster, quickly and carefully coat the chicken with the pan sauce. Continue roasting, basting every 10 minutes, until the chicken is browned and cooked through, 20 to 30 minutes longer. An instant-read thermometer inserted in the thickest part of the breast should register 155 degrees and, in the leg, 170 degrees. The chicken will continue to cook while it rests.
  • Transfer the chicken to a cutting board and let rest for about 5 minutes. If the pan sauce isn't already syrupy, bring it to a boil over medium-high heat on the stovetop. Be sure to wear oven mitts or use a kitchen towel to hold the skillet (the handle is hot). Cook, stirring occasionally, until the bubbles grow larger and paler brown, and the sauce is the consistency of syrup, about 5 minutes. Discard the ginger.
  • Serve the chicken whole or carved with the glaze poured all over the meat. Arrange the tangerine wedges from the pan around the bird. You can eat them, if you'd like.

  • Toss chicken with ancho chile powder, cumin, and 2 teaspoons salt in a large bowl to coat. Cover and chill for 2 hours. Heat a large cast-iron skillet over medium-high heat. Coat pan with a thin layer of oil. Working in batches, place thighs in skillet in a single layer (do not crowd). Cover and cook until a crust forms, about 5 minutes. Turn; cook, uncovered, until thighs are just cooked through, 3-4 minutes longer. Transfer to a platter; let rest for 5 minutes.
  • Cut chicken into 1/2" cubes. Transfer with any accumulated juices to a medium bowl. Season with salt. DO AHEAD: Can be made 1 day ahead. Let cool slightly. Cover; chill. Rewarm before serving.

SPICED ORANGE ROAST CHICKEN

80 ml fresh orange juice
80 ml honey
2 teaspoons olive oil

1 (7 -8 lb) oven stuffer roasting chickens
1 large red onion, roughly chopped in 1 inch pieces
8 medium red potatoes, quartered
2 tablespoons ground rosemary
1 tablespoon onion powder
1 tablespoon butter
1/4 cup olive oil

Steps:

  • Preheat oven to 300 degrees.
  • Clean chicken cavity and rinse thoroughly.
  • Place in a large roasting pan.
  • Place half of chopped onion inside the of the chicken, and other half around chicken as a bed.
  • Add chopped potatoes to the bed around the chicken.
  • Drizzle olive oil over chicken and vegetables.
  • Season entire dish with rosemary, onion powder, salt and pepper.
  • Rub herbs into the chicken, evenly coating and pushing some of it under the skin on the breast.
  • Bake chicken for approximately 2 hours.
  • Rub butter over skin of chicken and bake another few minutes or until chicken is done (perhaps another 1/2 hour).

1 fresh orange, quartered
2 whole white onions, halved
1/4 cup soy sauce
1 tablespoon brown sugar

Steps:

  • Wash and clean the chicken, pat dry.
  • Mix the soy sauce, brown sugar, garlic and salt and pepper.
  • Place the whole chicken in a gallon zip lock bag.
  • Add the soy preparation to the bag and seal.
  • Place in fridge for 1 hour.
  • Preheat oven to 350°F.
  • Peel and halve the onions.
  • Quarter the orange.
  • Remove chicken from bag and place in a roasting pan.
  • Save the soy preparation.
  • Place the onion halves and orange quarters in the chicken cavity.
  • Salt and pepper the outside of the chicken well.
  • Place the "stuffed" chicken in the preheated oven.
  • Place the soy preparation in a small saucepan and heat over medium heat until boiling.
  • Add salt and pepper to taste.
  • Turn off heat and use warm to baste.
  • Baste the chicken with this mixture every 15 minutes until the chicken is cooked through.
  • Cook until juices run clear and meat is no longer pink.
