THAI SALMON CURRY

I made this up being hungry for salmon but not wanting to do the familiar teriyaki routine. The results were delicious and also used up some hot peppers that were ready on my plants. And you can't believe how quick and easy this is to prepare! The hardest part is steaming the rice!

1 1/2 lbs fresh salmon fillets
1 (14 ounce) can light unsweetened coconut milk
1 tablespoon grated ginger
1 tablespoon palm sugar or 1 tablespoon brown sugar
2 tablespoons fish sauce
1 -3 tablespoon red curry paste (you choose how much)
1/2 lime (juice of, no seeds)
1/4 cup chopped fresh basil
2 tablespoons chopped fresh cilantro
minced Thai chile (optional; as many as you prefer)
3 cups steamed jasmine rice (or other type of rice)

Steps:

  • Remove the skin from the fillets (discarding skin) and cut the fish into medium/large cubes (about 1-inch size).
  • Place the coconut milk into a large saute pan and add ginger, sugar, fish sauce, curry paste, and lime juice.
  • Use a whisk to blend it until it is smooth.
  • Bring the coconut milk to a boil and add the fish.
  • Cook, turning fish gently to cook all sides as it cooks, for 5-7 minutes (depending on size of cubes or how well done you like your fish).
  • Sprinkle curry with chopped basil and cilantro.
  • Serve garnished with minced Thai bird chiles, if you like, but remember that these are very hot, and you might want to taste one small thin ring (preferably with some food) before adding a lot of them to your serving.
  • Ladle into bowls over steamed jasmine rice.

THAI SALMON IN FOIL

1/2 cup sweet chili sauce
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime
1 teaspoon Sriracha, optional
2 pounds salmon
1/4 cup peanuts, chopped
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with foil. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. Place salmon onto prepared baking sheet and fold up all 4 sides of the foil. Spoon the chili sauce mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed. Place into oven and bake until cooked through, about 15-20 minutes. Serve immediately, garnished with peanuts and cilantro, if desired.

COLD THAI SALMON

Quote: "An Asian dish to spice up your potluck!" I am half-Asian and always looking to surprise my friends at potlucks with all kinds of exotic Pan-Asian treats. I have personally found that many of them are not that hard to make ¿ it's just finding the right ingredients. This latest dish was born out of a need to eat healthy while being satisfied and became a staple meal while I was performing in Boca Raton, Fla., last December. It also allowed me to stay trim for my form-fitting gown! The fish can be served hot or cold - I prefer it cold for the warm months - and the leftovers make a nice salmon salad (just add a little of that naughty mayo).

1 bunch cilantro
1 to 1 1/2 pounds fresh salmon fillets
1/8 teaspoon salt (optional as the fish sauce is quite salty)
1/8 teaspoon Asian white pepper (you can substitute black pepper if you can't find it)
2 tablespoons extra-virgin olive oil (peanut oil can be substituted as well, but I like the rich flavor of the non-traditional olive oil)
2 tablespoons green curry paste
4 cloves garlic
1 shallot
2 kaffir lime leaves
1 lime
2 tablespoons fish sauce
1/4 cup white wine (the drier the better, I am not married to any particular vintage or variety)
1/4 cup chicken or fish stock (you can substitute a dreaded chicken or fish bouillon cube if you're in a pinch)
Cooked jasmine rice, for serving (optional)

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the bunch of cilantro in a bowl and let it soak for a few minutes to remove the dirt.
  • Put each salmon fillet in a parchment paper pouch, flesh side up. Season the fish with salt and pepper. Pour the olive oil over the fish, then smear the green curry paste on top of the salmon.
  • Dice the garlic and shallots and sprinkle them on top, then place the lime leaves on top, as well.
  • Cut the lime in 1/2 and squeeze the lime juice over the fish.
  • Finally add the fish sauce, wine and chicken stock.
  • Drain the bowl of cilantro leaves and pat them dry with a paper towel. (You can wrap them in a fresh paper towel, place them in a baggie and put them in the refrigerator. The leaves will stay fresh longer that way.) Garnish the top with some chopped cilantro leaves.
  • Close up the pouches and place on a baking sheet. Bake 20 to 30 minutes. Chill in the refrigerator for 1 hour and serve with fresh cilantro sprigs.
  • Jasmine rice can also accompany the dish if you are eating it hot.

THAI SALMON NOODLES

200g egg or rice noodles
1 tsp olive oil
2-3 tsp Thai red curry paste
2 spring onions , chopped
1 sweet potato , cubed
200ml vegetable or chicken stock
100ml skimmed milk
2 skinless salmon fillets , cut in half and then into fine strips
½ small bunch coriander , roughly chopped

Steps:

  • Cook the noodles following the pack instructions, rinse and drain. Heat the oil in a deep saucepan and fry the curry paste for 1 min until fragrant. Add the spring onions, reserving 1 tbsp, the sweet potato, stock and milk, bring quickly to the boil and simmer for 5 mins until the potato is tender. Add the salmon pieces and cook for 2 mins, then stir in half the coriander.
  • Divide the noodles between 4 bowls and spoon over the salmon and sauce. Sprinkle over the remaining coriander and spring onions.

1 onion, sliced
250ml reduced-fat coconut milk
500g skinless salmon fillet, cut into chunks
200g pack trimmed green bean

Steps:

  • Heat the oil in a large pan, then add the curry paste. Stir in the onion, then cook gently for about 5 mins until softened. Pour in the coconut milk and bring to the boil. Reduce to a simmer, then add the salmon chunks and beans.
  • Leave to gently simmer for 5 mins until the fish flakes easily and the beans are tender. Scatter with the coriander or basil, and serve with plain rice.

4 x 140g/5oz salmon fillets
2 tsp sunflower oil
small knob of root ginger , peeled and grated
1 mild red chilli , finely sliced (deseed if you want less heat)
bunch spring onions , finely sliced
1 ½ tbsp sweet soy sauce
¼ tsp sugar
1 x 20g pack coriander , leaves only chopped

Steps:

  • Heat grill to high. Place the fish in a shallow baking dish, then grill for 4-5 mins until cooked through, but still a little pink in the centre. Cover and set aside.
  • Heat a wok, add the oil, then stir-fry the ginger, chilli and spring onions for 2-3 mins. Stir in the soy, sugar and a splash of water, then take off the heat. Throw in the coriander and serve immediately with the salmon. Delicious with rice or noodles.

ONE-PAN THAI GREEN SALMON

2 tbsp vegetable oil
2 shallots , thickly sliced
1 green chilli , deseeded if you like, and sliced, plus extra to serve
300g baby new potatoes , quartered
1 lemongrass stalk, bashed
4 tbsp Thai green curry paste
400g can coconut milk
200-300ml vegetable stock
1-2 tbsp fish sauce
½-1 tbsp brown or palm sugar
1 courgette , trimmed and peeled into ribbons
100g baby spinach
4 skinless salmon fillets
3 limes , 2 juiced plus 1 cut into wedges to serve
3 spring onions , finely sliced (optional)
handful of coriander or Thai basil, roughly chopped, to serve
cooked jasmine rice or rice noodles, to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Put the oil in a deep roasting tin or dish about 30 x 25cm and toss through the shallots, chilli, potatoes and lemongrass. Roast for 10 mins until fragrant, keeping an eye on the shallots to ensure they don't burn. Remove from the oven and stir in the curry paste to coat everything. Return to the oven for 2 mins until its aroma is released before mixing in the coconut milk and 200ml stock. Put back in the oven again for 15-20 mins until the sauce is slightly thickened and the potatoes are turning tender.
  • Season to taste with the fish sauce and sugar, then stir through the courgette ribbons and spinach. Add another 50ml-100ml stock now if the sauce is too thick, but be aware that the courgette and spinach will release some water as well. Nestle the salmon fillets in the sauce and bake for a further 10-15 mins until the salmon is cooked to your liking.
  • Add the lime juice and taste the sauce for a balance of sweet and sour, adding more lime juice and fish sauce, if you like. Scatter over the spring onions, if using, along with the herbs and chilli. For a more filling meal, serve with rice or noodles and the lime wedges on the side.

1 salmon fillet
2 garlic cloves, chopped up finely
1 gingerroot, 3cm x 1cm, chopped up finely
1/2 red chili, chopped up finely
1/2 lime
1 bunch coriander, roughly chopped
salt
unsalted butter

Steps:

  • Start by using a pestle and mortar to crush up the garlic and ginger. Pound it in a while to release the flavor. Now add the chili and coriander and finally the lime to create a marinade.
  • Now, heat a good quality pan so it's hot.
  • While this happens, spread the marinade from the mortar onto the skinless side of the salmon fillet. Now add a little salt.
  • Next, add a good sized knob of butter into the hot dish and place the salmon into the pan, skin size down on a medium to high heat.
  • Allow the salmon to cook for about 6-8 minutes allowing the skin to become crispy and also cook the salmon a little too.
  • Now turn it about, so the salmon is on the marinade bed and allow it to cook on a medium heat. Allow to cook for about 15 minutes.
  • The bed will burn on the pan side, but the salmon will remain unburnt, so don't worry!
  • After about 15 minutes, the salmon should be cooked through depending on the thickness of the fillet.
  • Remove carefully and serve on a plate with the skin size down.
  • Serve with a combination of items, including stir-fry noodles, or traditional vegetables including new potatoes, green vegetables or maybe something a little more experimental!

BROILED THAI SWEET CHILI SALMON

6 x 6 oz wild salmon fillets (skin on or off)
Pinch of salt
1/2 cup + 2 tbsp Thai sweet chili sauce (divided)
2 - 3 tbsp green onions (finely chopped)
Cooking spray (I use Misto)

Steps:

  • Make Thai sweet chili sauce or use store-bought (I like Thai Kitchen brand).
  • In a large baking dish, add salmon in a single layer. Each fillet: sprinkle with a pinch of salt and top with 1 tbsp of Thai sweet chili sauce. Brush or rub with your fingers to coat fish with sauce evenly on top, bottom and sides. Cover and let marinate in the fridge for at least 2 hours or overnight is the best (up to 24 hours).
  • Turn on oven's broiler on High and position top oven rack 5" - 6" below the heat source. Line large baking sheet with foil or silicone mat, spray with cooking spray and place salmon fillets skin side down (if any). Coat with remaining marinade from the dish (if any).
  • Broil for 8 minutes, rotating baking sheet once. Remove from the oven and brush top of each fillet with 2 tsp of Thai sweet chili sauce. Return to the oven and broil for another 5 minutes or until salmon has caramelized.
  • Serve hot garnished with green onions, extra sauce (if desired) and brown rice or quinoa + any salad.

Steps:

  • For salmon:
  • Mix first 7 ingredients in small bowl to blend. Place salmon fillets, skin side down, on rimmed baking sheet. Sprinkle 1 1/2 teaspoons spice mixture over each fillet. Cover with plastic and refrigerate at least 3 hours or overnight.
  • For dressing:
  • Whisk vinegar and next 5 ingredients in small bowl to blend. for rice: Melt butter in heavy large saucepan over medium heat. Add rice and sauté until rice begins to turn opaque, about 2 minutes. Stir in 1 cup water and coconut milk and bring to boil. Cover and reduce heat to low; cook until rice is cooked through and liquid is absorbed, about 18 minutes. Season to taste with salt and pepper.
  • Meanwhile, heat vegetable oil in heavy large skillet over medium-high heat. Add salmon fillets, flesh side down, to skillet. Sear until brown and crisp, about 3 minutes. Turn fillets over and sear skin side until salmon is just cooked through, about 3 minutes.
  • Spoon rice onto plates, dividing equally. Top each serving with seared salmon fillet, then Thai Vegetables. Drizzle dressing around and serve immediately, passing extra dressing separately.

1 salmon fillet
2 cm piece fresh ginger, peeled
2 kaffir lime leaves
1 stick lemongrass
1/2 garlic clove, chopped finely
1/2 large red chili, seeded, sliced
fresh coriander, chopped
1 tablespoon grated palm sugar
1 tablespoon limes or 1 tablespoon lemon juice
splash light soy sauce
splash fish sauce

Steps:

  • Remove the skin from the salmon if desired. Remove the pin bones in the salmon with tweezers.
  • Preheat barbecue or preheat oven to 220°C/200°C fan-forced.
  • Slice ginger thinly then cut into long thin strips. Remove the centre rib from the lime leaves; shred the leaves finely. Cut about 6cm from the end of the lemon grass stalk - you will only need the tender white section. Discard tough outer layer and green top section. Split lemon grass in half, remove the v-shaped centre. Chop the lemon grass finely.
  • Place the salmon on a sheet of lightly greased foil on an oven tray; top with all ingredients. Fold up foil to enclose salmon and form a parcel. Barbecue (or cook in oven) for about 8 minutes or until done as desired. Salmon is best served rare in the centre.
  • Serve with steamed rice, Chinese broccoli and lime wedges, if desired.
