Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven over medium heat, cook and stir chicken and onion in oil for 5 minutes or until chicken is no longer pink. , Stir in soup and cream. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, for 2 minutes. Stir in the spinach, cheese and pepper; cook for 1-2 minutes or until spinach is wilted and cheese is melted. , Drain pasta; add to chicken mixture and toss to coat.

1/2 lb. thin spaghetti pasta, cooked according to package
1lb. roasted cauliflower (recipe follows)
Chicken
4 tablespoons olive oil
2 lbs. chicken tenderloins
3 teaspoons kosher salt
2 teaspoons coarsely ground black pepper
2 teaspoons McCormick's Cajun Seasoning
Sauce
1 tablespoon olive oil
2 tablespoons butter
1 shallot, finely chopped
1 garlic clove, finely chopped
2 tablespoons flour
1 cup chicken stock
2 cups milk
1/2 cup parmesan cheese
1 teaspoon McCormick's Cajun Seasoning
1 1/2 teaspoon garlic powder
1 1/2 teaspoon onion powder
1 teaspoon kosher salt
4oz. baby spinach
Garnish
1/4 cup chopped sun-dried tomatoes, (drained of oil)
2 tablespoons chopped chives

Steps:

  • To make the chicken: Drizzle 3 tablespoons olive oil over chicken and toss to coat. Season both sides of chicken with kosher salt, black pepper and McCormick's Cajun seasoning. Heat the remaining tablespoon of olive oil in large frying pan over medium high heat. Add the chicken, making sure not to crowd the pan (cook in two batches if needed), and cook for 3 minutes, then turn chicken and cook for another 3 minutes. Remove the chicken and transfer it to a plate and set aside to make the sauce. Scrape up any burnt or severely browned chicken bits from the bottom of the pan and discard.
  • To make the sauce: Using the same pan, add the olive oil and the butter. Add in the shallots, stir and cook until translucent, about 1 to 2 minutes. Add the garlic and cook for another 30-seconds. Sprinkle flour on top, stir and scrape the pan until a paste-like texture appears, about 1 minute. Stir in chicken stock, add the milk and whisk until well blended. Add the cheese and stir constantly until cheese is fully melted. Stir in the cajun seasoning garlic powder, onion powder and kosher salt, whisk until blended. Turn off heat and remove pan from the stove top. (Sauce will be appear thin at this point, but will thicken as it cools. Don't be tempted to add more cheese of flour, or else the sauce will be too thick once the pasta and spinach is added).
  • To assemble: Add the spinach and stir until wilted. Add the chicken and pasta and toss to coat. Garnish with sun-dried tomatoes and chives. Serve immediately.
  • To roast the cauliflower: Heat oven to 395 degrees F. Trim and slice cauliflower into 1/4-inch thick slices. Place slices onto a baking sheet and toss drizzle about 3 tablespoons of olive oil. Season generously with salt and pepper toss to coat. Bake until cauliflower starts to caramelize at the edges, about 25 to 30 minutes.

  • Heat oil in large skillet set over medium heat; cook chicken and pepper for 3 to 5 minutes or until slightly browned. Stir in onion and garlic; cook for 3 to 5 minutes or until slightly softened.
  • Stir in reserved cooking liquid, cream and Roasted Chicken Base; bring to boil. Reduce heat to medium-low; cook for 8 to 10 minutes or until thickened slightly.
  • Stir in spinach and green peas; cook for 1 minute. Add pasta to skillet, tossing until well coated. Stir in Parmesan; sprinkle cracked pepper over top.

2 pounds chicken tenders, patted dry

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and transfer to a serving bowl or a deep platter.

2 tablespoons olive oil
1 lb chicken ((skinless, boneless chicken breasts or tenderloins))
1 teaspoon paprika
1 teaspoon Italian seasoning ((thyme, oregano, basil - combined))
salt (to taste)
1.5 cups heavy cream
1/2 cup Parmesan cheese (shredded)
5 tomatoes ((medium, chopped in large cubes))
3 cups fresh spinach (or 1 cup cooked spinach)
5 garlic cloves (minced)
1/4 teaspoon red pepper flakes (crushed)
6 bacon strips (cooked, drained off fat, and chopped)
10 oz penne pasta ((for gluten-free version, use gluten-free brown-rice penne))
1/2 cup Parmesan cheese (shredded, for serving)

Steps:

  • Heat 2 tablespoons of olive oil in a large skillet, on medium-high heat. Add chicken and cook on one side on medium-high heat for 4 minutes. While it cooks, sprinkle the uncooked sides of the chicken with paprika, Italian seasoning, and salt. Flip the chicken over, and cook on the other side for 3 more minutes on medium-high heat. Reduce heat to low-medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm.
  • To the same pan (but without chicken), add heavy cream and bring to boil. Only after the heavy cream starts boiling, add shredded Parmesan cheese. Immediately reduce to simmer (low-medium heat) and stir, while simmering, until the cheese melts and the sauce is creamy, for about 1 or 3 minutes.
  • To the same pan with the creamy sauce, add chopped tomatoes, fresh spinach, garlic, crushed red pepper. Stir in the sauce on medium heat just until the spinach starts to wilt and sinks into the sauce. Add 1/3 of the cooked chicken (sliced into small strips) and half the bacon (already cooked and drained of fat). Mix everything. Remove from heat.
  • In the meantime bring a large pot of water to boil, add pasta, and cook according to instructions (usually 10 to 15 minutes). Drain the pasta.
  • Add cooked pasta to the skillet with the sauce and reheat on low heat. When ready to serve, top the pasta with the remaining half of bacon (cooked, drained of fat, chopped, gently reheated) and the remaining 2/3 of the cooked chicken (sliced into small strips, gently reheated). This is done for presentation purposes.
  • When serving, top the pasta with 1/2 cup of shredded Parmesan cheese.

  • Cook the pasta following pack instructions. Reserve 100ml of the water and drain the pasta in a colander.
