BEST GREEN BEANS EVER!!! These beans are also known as Kentucky Wonders. They were the variety that my father always grew in our garden and are of the flat bean type. They have flavor galore! I have included a photo of the cans to show the brand and kind to purchase. A dish is always included on the menu at our family gatherings and are looked forward to.

4 slices bacon (save drippings)
2 (14 1/2 ounce) Italian cut green beans, drained
4 cups water
1/2 onion, diced
1 tablespoon sugar
1/2 teaspoon salt

Steps:

  • Fry bacon until crisp, crumble and set aside.
  • Place drained beans with water in a medium size saucepan with lid.
  • Add bacon drippings, onion, sugar and salt.
  • Simmer on low heat for approximately 1 1/2 hours.
  • Pour beans in a serving bowl and sprinkle crumbled bacon on top.
  • Enjoy!

3 green onions, chopped
2 cloves garlic, chopped
2 (15 ounce) cans green beans, drained
1 (14.5 ounce) can Italian-style diced tomatoes
1 pinch dried basil
1 pinch dried oregano
¼ cup brown sugar

Steps:

  • Cook bacon in a skillet over medium heat until crisp. Remove from the pan to drain on paper towels. Reserve the grease in the skillet and add the onions; cook and stir over medium heat until softened. Add garlic and cook for about 30 seconds more. Remove from the heat.
  • In a saucepan, combine the green beans, tomatoes, basil, oregano and brown sugar. Crumble in the bacon and add the onion and garlic from the skillet. Warm over medium heat until heated through, 5 to 10 minutes.

1 small onion, chopped
2 tablespoons olive oil
2 to 3 garlic cloves, minced
1 can (14-1/2 ounces) stewed tomatoes, coarsely mashed
1/2 cup water
3 tablespoons minced fresh oregano or 1 tablespoon dried oregano
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons dried basil
1 teaspoon sugar
1 teaspoon salt
1/4 to 1/2 teaspoon coarsely ground pepper
2 pounds fresh green beans, cut into 1-inch pieces
2 tablespoons grated Romano cheese

Steps:

  • In a small saucepan, saute onion in oil until tender. Add garlic; saute 1 minute longer. Add the tomatoes, water, oregano, basil, sugar, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 40 minutes., Meanwhile, place beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain. Add tomato mixture and cheese; cook for 5 minutes or until heated through.

¼ cup butter
½ cup Italian-seasoned bread crumbs

Steps:

  • Warm olive oil over medium heat in a large, deep frying pan on the stove.

This is a go to recipe for me for pot luck. It is always a hit. Even among people who don't think they like beans or greens. If I make it as a side dish instead of a main, I substitute quartered sauteed mushrooms for the Italian sausage. The Kale is one of the big bags in the produce section. Of course, you can chop your own. I also roast my own garlic on the weekends and save in a jar. It's really worth it for this dish. This is great on it's own, on top of or with with slices of crusty bread. It's hard to mess this dish up. Just don't under cook the kale or it will be too tough.

1 (16 ounce) bag kale (can sub raw baby spinach, do not pre cook)
3 (12 ounce) cans cannellini beans, rinsed
4 large shallots, chopped (can sub onion)
2 -3 tablespoons roasted garlic (can sub sauteed garlic)
1 lb Italian sausage (or mushrooms)
olive oil
sea salt
black pepper
red pepper flakes (optional)

Steps:

  • Simmer kale in a large pot of salted water until al dente, drain.
  • (Can refrigerate kale after cooked for dish preparation at another time.).
  • Pre-heat a large pot or frying pan. Add olive oil to taste.
  • Saute chopped shallot until translucent.
  • Remove skin from the Italian sausage, Break up into bite sized chunks.
  • Add sausage to the shallots and brown / cook sausage completely.
  • Add drained beans to the sausage.
  • Add roasted garlic, sea salt and pepper to taste and stir / flip mixture gently while cooking for 5 minutes.
  • If the beans start to stick, add a little water.
  • Add cooked kale.
  • Add a little water to make a small amount of thick sauce.
  • Cover with a lid and simmer for 5 minutes or until ready to serve.
  • Also very good made a head and reheated.
  • It will keep for a week.

This comforting vegetarian side dish is sure to appeal to even the picky vegetable eaters around your table! It's hearty, simple and classic Italian-American! And, you might be surprised to find out that overcooking the beans is the secret to what makes it so good!

1 1/4 pounds romano beans, (ends trimmed & beans cut in half)
2 pounds all-purpose potatoes, (rinse, scrubbed and cut into 1" chunks⁠, stored in cold water until cooking)
4-6 Tbsp olive oil ((see NOTE below)⁠)
1 medium yellow onion, (peeled and sliced)
2 heaping TBSP chopped or thinly sliced garlic
pinch crushed red pepper, salt and black pepper

Steps:

  • Prep all vegetables according to specifications above.
  • Bring a large pot of water to a boil.⁠ Once the water comes to a boil, add salt, then the beans. (See NOTE below.)
  • Boil the beans for about 5 minutes or until they are soft. Remove & set aside, keeping the water for boiling the potatoes.
  • Bring the pot of water back up to a boil, covering the pot if necessary. Then, add the potatoes to the boiling water and cook for about 10 minutes or until the potatoes are soft. Remove & set aside.⁠ Reserve 1-2 cups of the starchy potato water before discarding the rest of the water.
  • While the vegetables are boiling, heat the oil in a large sauté pan on medium-high heat. Once the oil is hot, add the onions and sauté until they begin to lightly caramelize (about 10 minutes), stirring occasionally. Add the garlic and crushed red pepper and continue to sauté another 2 minutes.⁠
  • Add the cooked beans and potatoes to the onions and mix well. Continue to cook the mixture until the beans are very soft, adding a bit of the starchy potato water if more moisture is needed and partially covering the pan.
  • Once the beans are cooked to your desired doneness, season the dish with salt and pepper, then finish with a drizzle of extra-virgin olive oil.
  • Serve warm or at room temperature. Buon Appetito!
