SIMPLE MACARONI AND CHEESE

Simple Macaroni and Cheese image

A very quick and easy fix to a tasty side-dish. Fancy, designer mac and cheese often costs forty or fifty dollars to prepare when you have so many exotic and expensive cheeses, but they aren't always the best tasting. This recipe is cheap and tasty.

Categories     Thanksgiving

Time 45m

Number Of Ingredients 15

16 oz (500 g) elbow macaroni, uncooked
6 cups chicken broth
8 oz (225 g) sharp cheddar cheese, shredded
8 oz (225 g) colby jack cheese, shredded
8 oz (225 g) part-skim mozzarella cheese, shredded
8 oz (225 g) American cheese, cubed
4 oz (125 g) cream cheese, cubed and room temperature
1 cup (250 ml) half and half
1 cup (250 ml) heavy cream
Kosher salt and freshly cracked black pepper, to taste
1/2 teaspoon (4g) smoked paprika
1-2 teaspoon (3g) garlic powder
1 teaspoon (3g) onion powder
1/2 teaspoon mustard powder
2 large eggs

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Butter an 8 by 11 or 9 by 13-inch baking dish and set aside.
  • Fill a large stockpot or dutch oven halfway with chicken broth (or water if you don't have broth), and bring to a boil. Add in elbow macaroni and cook until just under al dente, according to package directions. Do not fully cook or overcook the macaroni pasta, it'll finish cooking through completely in the oven. Once just under al dente, drain the pasta.
  • While the pasta boils, use a wooden spoon to mix the half and half, heavy cream, half of the cheddar cheese, half of the Colby jack cheese, all of the mozzarella cheese, all of the American cheese, and all of the cream cheese in a large mixing bowl.
  • Add smoked paprika, garlic powder, onion powder, mustard powder, and some kosher salt and pepper, stirring well and tasting the mixture to ensure there is a good flavor. Do not add too much salt, since cheese is pretty salty and will add its saltiness as it bakes. Once satisfied with the seasoning, stir in the cooked macaroni and eggs until well incorporated with the cheese.
  • Pour the macaroni mixture into the baking dish and spread evenly.
  • Top the macaroni and cheese generously with the rest of the cheddar cheese and colby jack cheese. Sprinkle the top with a little more smoked paprika, if desired.
  • Bake the mac and cheese for 35 minutes or until the cheese crust is bubbly and nicely browned. Do not over-bake or the macaroni pasta will become mushy and the cheese mixture will become dry.
  • Let the baked macaroni and cheese cool for about 10 minutes or until just cool enough to serve. Serve hot so the cheese is nice and creamy.
  • Keep in an airtight container in the fridge for up to 4 days.

CREAMY HOMEMADE BAKED MAC AND CHEESE

Creamy Homemade Baked Mac and Cheese image

This baked mac and cheese is a family favorite recipe, loved by children and adults.

Provided by The Chunky Chef

Categories     Main Course     Side Dish

Time 35m

Number Of Ingredients 10

1 lb. dried elbow pasta
1/2 cup unsalted butter
1/2 cup all purpose flour
1 1/2 cups whole milk
2 1/2 cups half and half
4 cups shredded medium sharp cheddar cheese (divided (measured after shredding))
2 cups shredded Gruyere cheese (divided (measured after shredding))
1/2 Tbsp. salt
1/2 tsp. black pepper
1/4 tsp. paprika

Steps:

  • Preheat oven to 325 degrees F and grease a 3 qt baking dish (9x13"). Set aside.
  • Bring a large pot of salted water to a boil. When boiling, add dried pasta and cook 1 minute less than the package directs for al dente. Drain and drizzle with a little bit of olive oil to keep from sticking.
  • While water is coming up to a boil, shred cheeses and toss together to mix, then divide into three piles. Approximately 3 cups for the sauce, 1 1/2 cups for the inner layer, and 1 1/2 cups for the topping.
  • Melt butter in a large saucepan over MED heat. Sprinkle in flour and whisk to combine. Mixture will look like very wet sand. Cook for approximately 1 minute, whisking often. Slowly pour in about 2 cups or so of the milk/half and half, while whisking constantly, until smooth. Slowly pour in the remaining milk/half and half, while whisking constantly, until combined and smooth.
  • Continue to heat over MED heat, whisking very often, until thickened to a very thick consistency. It should almost be the consistency of a semi thinned out condensed soup.
  • Remove from the heat and stir in spices and 1 1/2 cups of the cheeses, stirring to melt and combine. Stir in another 1 1/2 cups of cheese, and stir until completely melted and smooth.
  • In a large mixing bowl, combine drained pasta with cheese sauce, stirring to combine fully. Pour half of the pasta mixture into the prepared baking dish. Top with 1 1/2 cups of shredded cheeses, then top that with the remaining pasta mixture.
  • Sprinkle the top with the last 1 1/2 cups of cheese and bake for 15 minutes, until cheesy is bubbly and lightly golden brown.

OLD-FASHIONED SCRATCH MACARONI AND CHEESE

Old-Fashioned Scratch Macaroni and Cheese image

Make and share this Old-Fashioned Scratch Macaroni and Cheese recipe from Food.com.

Provided by Mark Cebron

Categories     Cheese

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 9

8 ounces uncooked macaroni
8 ounces sharp cheddar cheese, cut in cubes
1/2 cup grated sharp cheddar cheese
1/2 cup butter, cut into tablespoons
1 (10 ounce) can condensed cheddar cheese soup
2 eggs, lightly beaten
Lawry's Seasoned Salt (to taste)
Lawry's Seasoned Pepper (to taste)
1/2 cup milk

Steps:

  • Cook macaroni according to package directions.
  • Drain.
  • Immediately place cooked macaroni into large bowl.
  • While still hot, stir in the butter, the cubed cheddar, and the handful of grated cheddar.
  • Mix well for one minute.
  • Add the eggs and the can of cheddar soup.
  • Mix through.
  • Season liberally with Lawry's salt and pepper.
  • Mix through.
  • At this point, I like to give it a taste (I know, I know, raw eggs, but I live dangerously), to test for seasoning.
  • Adjust seasoning as needed.
  • Add the milk and mix again.
  • Place mixture into a mid-size casserole.
  • I use an 11x8x3 or so.
  • Don't use a dish too deep or browning will be a pain.
  • Spread evenly.
  • Bake at 375 for 35-45 minutes, until golden brown and bubbly.
  • Let sit for 10-15 minutes before serving.
  • This is a very old family recipe from a woman I work with.
  • I am kind of a mac&cheese junkie and have tried many over the years.
  • This one is tops, bar none.
  • Enjoy!
  • PS If you have trouble finding Lawry's seasoned pepper, you can substitute McCormick's, not as good, but will do.

  • Prepare a roux: The first step in making macaroni and cheese from scratch is to make the roux for your béchamel sauce. A roux is a mixture of equal parts flour and fat that is used to thicken sauces, soups, and stews. For macaroni and cheese, we use butter as the fat component and make a light-colored (blond) roux.
  • Whisk in the milk: When the roux has reached the right color and consistency, whisk in some warm milk and continue cooking until the sauce is smooth and creamy, and thick enough to coat the back of a spoon.
  • Add the cheeses: When the béchamel sauce has reached the right thickness, it’s time to stir in your grated cheese.
  • Add the pasta: Once all the cheese has melted and the sauce is smooth and creamy, it’s ready for the pasta and any other ingredients you might be adding.

  • In a large Dutch oven or saucepan, bring about 4 quarts of salted water to a rolling boil. Cook the macaroni until al dente. Drain through a colander, rinsing briefly to keep the pasta from sticking.
  • Rinse the saucepan with cool water and dry off, then place back on the burner over low heat and add the butter (if the pan is still hot, remove from the heat while the butter melts to keep it from browning).
  • Once the butter has melted, add the flour and begin whisking to form a paste. Continue whisking constantly over low heat until the paste (technically known as a roux), turns slightly yellow and begins to smell fragrant, 1-2 minutes. Slowly whisk in the milk, then turn the heat up to high. Whisk in the mustard, cayenne pepper, and garlic, if using.
  • Cook, whisking constantly, until the sauce bubbles and thickens, 7-10 minutes. You’re looking for the consistency of cream soup.

  • 1) Bring a pot of water to a boil. GENEROUSLY salt the water. It's critical to salt the water enough, otherwise you pasta will be tasteless. Add the pasta and cook to your preferred doneness. Drain and return pasta to pan (I like to use a pot with a draining lid).
  • 2) Add the butter to the still-hot pasta, cover and allow to melt a bit. Add the cheese and cream and give it a good stir. Put the lid back on and let it rest a bit. Give it another stir after a few minutes. Everything should come together into a smooth sauce. Taste and season with more salt if needed. Serve immediately.
  • 3) Store any leftover in the refrigerator. Make sure to add a little cream to the pot when you reheat; otherwise the cheese will separate.
