I found this copycat for The Original Roadhouse Grill's Texas Egg Rolls and the sweet spicy jalapeno jelly dipping sauce. Yummy! Prep time includes the 2 hour refridgeration.

1 (8 ounce) cream cheese, softened
12 jalapenos, chopped
1 lb egg roll wraps or 1 lb wonton skins
oil (for frying)
water, small amount, mixed with
1 tablespoon flour
3 green bell peppers, minced
8 ounces diced canned jalapeno peppers
1 1/2 cups distilled white vinegar
6 1/2 cups white sugar
1/2 teaspoon cayenne pepper
6 ounces liquid pectin
5 drops green food coloring

Steps:

  • Mix jalapenos with cream cheese.
  • Place small amount on wrapper, roll up eggroll style and seal the tip with a drop of the water-flour mixture.
  • Continue until mixture is all gone.
  • Place in refrigerator for 2 hours.
  • Heat oil to 350-375 and cook about 4 to 5 minutes or until golden brown.
  • Cool 5 minutes. Filling will be hot.
  • Serve with jalapeno jelly.
  • Jalapeno Jelly:.
  • In a large, stainless steel saucepan, combine peppers, vinegar, sugar, and cayenne pepper. Cook over medium high heat.
  • Stir frequently until mixture begins to boil.
  • Stir in pectin; boil 5 minutes longer, stirring constantly, and mix in food coloring.
  • Skim off foam, and remove from heat.
  • Ladle into sterilized jars.
  • Seal, and process in a boiling-water canner for 5 minutes.

Tex-Mex Egg Rolls With Creamy Cilantro Dipping Sauce image

1 (5-ounce) package yellow rice
1 teaspoon salt
1 pound ground hot pork sausage
1 (15-ounce) can black beans, rinsed and drained
1 (14.5-ounce) can Mexican-style diced tomatoes, undrained
2 cups (8 ounces) shredded Monterey Jack cheese
6 green onions, finely chopped
1 (1.25-ounce) package taco seasoning mix
28 egg roll wrappers
1 large egg, lightly beaten
4 cups peanut oil
Creamy Cilantro Dipping Sauce, recipe follows
Garnish: fresh cilantro sprigs
2 (10-ounce) cans Mexican-style diced tomatoes
1 (8-ounce) package cream cheese, softened
2 cups loosely packed fresh cilantro leaves (about 1 bunch)
1 cup sour cream
3 garlic cloves, minced
finely chopped fresh cilantro leaves for garnish

Steps:

  • Cook rice according to package directions, using 1 teaspoon salt. Cool completely.
  • Cook sausage in a skillet over medium heat, stirring until it crumbles and is no longer pink; drain well. Let cool.
  • Stir together rice, sausage, black beans, and next 4 ingredients in a large bowl. Spoon about 1/3 cup rice mixture in center of each egg roll wrapper. Fold top corner of wrapper over filling, tucking tip of corner under filling; fold left and right corners over filling. Lightly brush remaining corner with egg; tightly roll filled end toward the remaining corner, and gently press to seal.
  • Pour oil into heavy Dutch oven; heat to 375 degrees F. Fry egg rolls, in batches, 2 to 3 minutes or until golden. Drain on wire rack over paper towels. Serve with Creamy Cilantro Dipping Sauce. Garnish, if desired.
  • Process first 5 ingredients in a food processor until smooth. Garnish, if desired. Note: For a beautiful presentation, cut top from 1 large red bell pepper, reserving top; remove and discard seeds and membrane, leaving pepper intact. Arrange bell pepper on a serving plate, and fill with sauce.

1 pound ground pork
1 teaspoon ground ginger
1 teaspoon garlic powder
1 quart peanut oil for frying
2 tablespoons all-purpose flour
2 tablespoons water
2 cups shredded cabbage
2 ounces shredded carrots
8 (7 inch square) egg roll wrappers
2 tablespoons sesame seeds

Steps:

  • Season pork with ginger and garlic powder and mix thoroughly. Heat mixture in a medium skillet, stirring, until pork is cooked through and no longer pink. Set aside.
  • In another large skillet heat oil to about 375 degrees F (190 degrees C) or medium high heat. While oil is heating, combine flour and water in a bowl until they form a paste. In a separate bowl combine the cabbage, carrots and reserved pork mixture. Mix all together.
  • Lay out one egg roll skin with a corner pointed toward you. Place about a 1/4 to 1/3 cup of the cabbage, carrot and pork mixture on egg roll paper and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the flour paste on the final corner to help seal the egg roll.
  • Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Put on serving plate and top with sesame seeds if desired.

2 teaspoons oil
1 lb chicken breast
1 teaspoon salt
1 teaspoon pepper
2 tablespoons taco seasoning, may be more or less depending on what you are using
½ cup water
6 egg roll wrappers
tomato, diced
onion, diced
cheese, shredded/crumbled
egg wash
vegetable oil, for frying
salsa, for dipping

Steps:

  • Heat oil, add chicken, 1 tsp salt, and 1 tsp pepper. Cook until 60% done.
  • Add the taco seasoning, stir to incorporate. Add water and cook until chicken is done.
  • Fill egg roll wrapper with cooked chicken, tomatoes, onions and cheese or whatever ingredients you like.
  • Roll and seal with egg wash.
  • Fry until golden brown.
  • Serve with salsa.

1 pound bulk hot Italian sausage
1 can (15 ounces) black beans, rinsed and drained
1 can (11 ounces) Mexicorn, drained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 package (8.8 ounces) ready-to-serve Spanish rice
18 egg roll wrappers
Oil for frying
Sour cream and guacamole, optional

Steps:

  • In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking it into crumbles; drain. Stir in beans, Mexicorn, tomatoes and rice; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes, stirring occasionally., With 1 corner of an egg roll facing you, place 1/3 cup filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll up tightly, pressing at tip to seal. Repeat., In an electric skillet, heat 1 in. of oil to 375°. Fry egg rolls, 2 at a time, 1-2 minutes or until golden brown, turning occasionally. 3/4 pound bulk pork sausage
2 cups coleslaw mix
1 can (8 ounces) sliced water chestnuts, drained
1/4 cup chopped green onion
3 tablespoons soy sauce
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/8 teaspoon salt
1/8 teaspoon pepper
14 egg roll wrappers
1 egg, lightly beaten
Oil for deep-fat frying
Sweet-and-sour sauce

Steps:

  • In a large nonstick skillet, cook sausage over medium heat until no longer pink; drain well. Stir in coleslaw mix, water chestnuts, onions, soy sauce, garlic powder, ginger, salt and pepper. Cook and stir until cabbage is crisp-tender. , Position an egg roll wrapper with one point toward you. Place about 1/4 cup sausage mixture in the center. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with beaten egg; press to seal.
