Absolutely delicious! I am very pleased how this soup came out. Luxurious and comforting at the same time. :)

Categories     Chicken Breast

Time 45m

Yield 4 serving(s)

Number Of Ingredients 16

2 boneless skinless chicken breasts, in small cubes
2 tablespoons olive oil
2 cups whole milk (or 1 cup half and half and 1 cup water)
3 cups unsalted chicken stock
1/2 teaspoon dried french tarragon leaf, pieces
1 clove garlic, smashed and minced
2 scallions, white and light green parts, minced
1/8 teaspoon white pepper
1/4 teaspoon mild curry powder
8 ounces swiss cheese, grated
1/4 cup dry white wine
2 tablespoons sour cream
1 cup diced cooked ham or 1 cup smoked ham
salt
fresh ground black pepper or tricolor pepper, to taste
1 tablespoon freshly minced basil

Steps:

  • In a skillet over medium high heat, sauté the chicken breasts in the olive oil until browned, about 7 to 9 minutes; remove from skillet, drain of excess oil, and set aside, keeping warm.
  • In a large heavy saucepan, heat the milk and chicken broth over medium temperature.
  • Add the tarragon (crushing it a bit in your hand, first), garlic, scallion, white pepper, and curry powder, and bring to a light simmer.
  • Add 3/4th of the Swiss cheese gradually (reserving the remaining 1/4 for garnish), stirring constantly, until well-incorporated.
  • Gradually add the white wine, then the sour cream.
  • Using an immersion blender, whir the soup until all ingredients are smoothly incorporated (soup may have a tendency to separate before this point); alternately, you can pour it all into the blender or food processor.
  • Put the soup back in the saucepan if you removed it, then add the ham, and the cooked chicken breast; season to taste with salt and freshly ground pepper.
  • Simmer on low heat for 10 minutes.
  • Garnish with reserved grated Swiss cheese and basil and serve immediately.

CHICKEN CORDON BLEU SOUP

Chicken Cordon Bleu Soup image

I found this recipe somewhere on the internet and have had it for many years. The woman who posted this said that her son worked at the Diamond Run Golf Club (I have no idea where that is) and that when he made this, he couldn't make enough of it. I have revised the recipe somewhat because the original post was for 20 servings, and had no herbs/spices listed. I have included seasonings that are ones that I have enjoyed in this easy soup.

1 1/2 cups chicken, diced (approximately 2 skinless boneless chicken breasts)
1/2 cup onion, diced
1/2 cup celery, diced
salt, to taste
white pepper or fresh ground black pepper, to taste
1/2 teaspoon garlic powder (optional)
1 1/2 teaspoons tarragon (optional)

Time 55m

Yield 6 servings

Number Of Ingredients 23

Oil, enough for deep-frying
Six 10-ounce chicken breasts, pounded out to 1/2 inch in thickness
12 ounces thin-sliced ham
6 ounces Gruyere cheese
Breading:
3 cups all-purpose flour
2 cups ground breadcrumbs (biscuit crumbs preferred)
2 cups wheat flour
1 cup rice flour
1 tablespoon Cajun seasoning
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon salt
1 tablespoon freshly ground black pepper
1/2 teaspoon cayenne pepper
12 eggs, well beaten
4 egg yolks
Pinch fine salt
Pinch white pepper
Pinch paprika
1/4 teaspoon lemon juice
1/4 teaspoon hot sauce
1 pound clarified butter, warmed until soft

Steps:

  • Preheat the oven to 350 degrees F.
  • Take a piece of chicken and place 2 ounces ham and 1 ounce Gruyere cheese in the middle. Roll up the chicken breast tightly and place toothpicks in the ends and middle. Place the chicken breasts in an oiled baking dish and bake for 18 minutes.
  • For the breading: Combine the all-purpose flour, breadcrumbs, wheat flour, rice flour, Cajun seasoning, garlic powder, paprika, salt, pepper and cayenne pepper, mix well, and place on a large platter.
  • For the hollandaise sauce: Gently place 4 egg yolks in a food processor and add a pinch of salt, white pepper, paprika, the lemon juice and hot sauce. Place the warmed clarified butter into the food processor very slowly until it thickens. To thicken the sauce, add an egg yolk and to thin it out add warm water.
  • Place the baked chicken cordon bleu in the egg wash and then coat evenly with the breading mixture. Repeat process again.
  • Deep-fry the breaded chicken at 325 degrees F for 3 minutes. Drizzle the hollandaise sauce over the top of the chicken.

Provided by Food Network Kitchen

Time 25m

Yield 4 servings

Number Of Ingredients 9

4 chicken cutlets (1/4 inch thick; 3/4 to 1 pound total)
1 1/2 tablespoons extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground pepper
4 slices Black Forest ham
8 slices smoked mozzarella
1 baguette
3 tablespoons unsalted butter, softened
3 tablespoons dijon mustard
1 bunch watercress or arugula, tough stems removed

Steps:

  • Remove the baking sheet from the oven and top each piece of chicken with 1 slice ham and 2 slices mozzarella. Broil until the cheese melts, 1 to 2 minutes. Season with salt and drizzle with olive oil.
  • Meanwhile, cut the baguette crosswise into 4 equal pieces, then split open. Spread the bottom halves with butter and the top halves with mustard. Toss the watercress with the remaining 1/2 tablespoon olive oil and season with salt and pepper. Sandwich the chicken and watercress between the baguette halves.
