TEX MEX SEASONING
A batch of homemade Tex Mex Seasoning is the best shortcut to making tacos, burrito bowls, fajitas, soups, or other Southwestern-style dishes. Keep a batch of this in your pantry and use it in any Southwestern or Mexican recipe. NOTE: This makes enough for any recipe that makes 4 servings, but use the slider below (next to "Servings") to easily adjust the measurements so you can make a big batch to store for future recipes.

Steps:
- Salt is always optional in homemade seasoning. Feel free to add it to the blend now or wait and add it, to taste, when you make a recipe later. (Just don't forget it entirely. Salt will bring out the flavors in the recipe you're making and will allow this seasoning blend to really shine.)
- Combine all ingredients in a bowl. Store in an airtight container for up to 6 months.

Steps:
- For the Tex-Mex chili rub: Mix together the paprika, brown sugar, chili powder, cumin, chipotle chile powder, garlic powder and 1 teaspoon salt in a small bowl. Toss the chicken in a container with the olive oil and lime juice, then rub with the spice mixture. Refrigerate, covered, for at least 30 minutes and up to 2 hours before cooking.
- For the peppers and onions: Heat a cast-iron pan over medium-high heat until hot. Toss the peppers and onions in a bowl with the olive oil, lime juice and 1 teaspoon salt. Add the pepper-onion mixture to the hot pan and cook, stirring occasionally, until the vegetables are tender and the edges are charred, 8 to 10 minutes. Set aside.
- Prepare a grill for medium-high heat and brush the grill grates with oil.
- Grill the chicken breasts until marked and cooked through, 5 to 6 minutes per side. Transfer to a cutting board and thinly slice.
- Serve with the warm tortillas and toppings.
MEXICAN DRY RUB
This rub is great for chicken, fish, veggies or pork. The chicken tastes like El Pollo Loco chicken to me(a fast food chain in California). For extra heat, double the red pepper flakes!

- To use, generously rub over chicken thighs, breasts, drumsticks, or tenders or a whole chicken before cooking. You can first rub some olive oil over the chicken to help the rub stick to the meat better.
- For the most flavor, let the rub marinate on the meat for 1 hour (and up to 12 hours) in the refrigerator before cooking. Discard any rub that has come in contact with raw chicken or your hands when rubbing on the chicken.
- Cook chicken as desired, such as in the oven, on the grill or in an air fryer, Instant Pot or slow cooker.
