6 Italian sausages
3 large green peppers, sliced into strips
1 large sweet onion, sliced into strips
2 garlic cloves, minced
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 teaspoon italian seasoning
1 tablespoon Worcestershire sauce
butter
oil

Steps:

  • Boil sausage links in water for 15 minutes or until cooked through.
  • In large sautee pan in 2 tbsp oil on med low heat, sweat peppers and onions with salt, pepper, italian seasoning and worcestershire sauce until all veggies are soft (about 7-10 mins).
  • Add minced garlic and cook 1 more minute.
  • Add 1 Tbsp butter and stir through.
  • Remove veggies from pan and set aside.
  • In same sautee pan, on med heat add 2 tbsp oil and add sausage links.
  • Turn sausages as needed to brown all sides. This doesn't take long.
  • After sausages haved browned, pour pepper and onion mixture over top of the sausages and remove from heat.
  • Cover pan and let sit 5 minutes.
  • Enjoy!

12 fresh Italian sausages, hot or sweet (about 1- 3/4 to 2 pounds)
1 large Spanish onion, cut in halved, and cut into 1/4 inch slices
1 tablespoon tomato paste
2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 large yellow peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 poblano peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
4 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
6 crusty sandwich rolls, toasted

Steps:

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.

1 pound potato-and-onion pierogi (about 12 pieces)
1 tablespoon extra-virgin olive oil
3 sweet or hot Italian sausages (about 12 ounces), casings removed and crumbled
1 8-ounce package baby bell peppers, halved or quartered lengthwise
1/2 onion, thinly sliced
3 cloves garlic, smashed
1/4 teaspoon red pepper flakes (optional)
1 tablespoon unsalted butter
1/2 cup torn fresh basil

Steps:

  • Bring a large pot of salted water to a boil. Cook the pierogi as the label directs. Reserve 3/4 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 6 to 8 minutes. Reduce the heat to medium. Add the bell peppers, onion, garlic and red pepper flakes and cook, stirring, until the vegetables are tender, 7 to 9 minutes. Season with salt.
  • Add the pierogi to the skillet and toss. Add the butter and 1/4 cup of the reserved cooking water; cook over medium heat, stirring gently, until the butter melts, adding more cooking water as needed to loosen. Stir in the basil.

2 yellow peppers, roasted and cut 1/2-inch slices
1 dried ancho chile
Salt and pepper, to taste
2 cloves garlic, minced
8 fresh basil leaves, torn
1 teaspoon fresh oregano, minced
2 pounds sweet Italian sausage
2 cups dry red wine
28-ounce can whole San Marzano tomatoes, crushed by hand

Steps:

  • Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.
  • Prick sausage all over with a fork. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Remove sausage and slice into 1-inch pieces. Can be served on pasta or with bread.

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
  • Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
  • Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
  • Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

5 medium red bell peppers, cut into thin strips

6 hoagie rolls, split lengthwise three-quarters of the way through and toasted

Steps:

  • In a large saute pan, heat 2 tablespoons of the olive oil over medium-high heat. Add the sausage to the skillet and brown on all sides, 10 to 12 minutes. Transfer the sausage to a plate.
  • Add the bell peppers, onions and remaining 1 tablespoon of olive oil to the saute pan used for the sausage and cook, stirring occasionally, until the vegetables are soft, about 10 minutes. My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

1 -2 lb Italian sausage (hot or sweet, a good alternative is turkey sausage)
3 -4 bell peppers (any color or a combination of colors)
1 lb mushroom
2 onions
4 potatoes
3 garlic cloves
1/2 cup olive oil (vary amount based on preference)
3 tablespoons balsamic vinegar
fresh oregano or dried oregano
fresh parsley or dried parsley
fresh basil or dried basil

Steps:

  • Cut up the italian sausage in 1 inch pieces.
  • Mince garlic.
