COCONUT SHRIMP CURRY



Coconut Shrimp Curry image

One-pan coconut shrimp curry made with a creamy and aromatic coconut curry sauce made from scratch. This delicious dinner is so easy and ready in no time!

2 tablespoons coconut oil
½ yellow onion (finely diced)
1 teaspoon ginger (grated)
1 teaspoon garlic (grated)
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon garam masala (optional, Note 2)
½ teaspoon chili powder
1 teaspoon ground turmeric
1 cup tomato sauce (or plain passata)
1 cup coconut milk (fresh or canned)
1 teaspoon brown sugar
Salt and pepper
1 pound shrimp (peeled and deveined, I used 31-35 count)
1 teaspoon lime juice
A few mint leaves and cilantro leaves (for garnish)
Lime wedges (for garnish)
Cooked jasmine or basmati rice
Naan bread

Steps:

  • In a stainless steel skillet (see Note 1), heat the coconut oil, saute the onion, and ginger until soft and the onion is translucent (2 minutes). Add the garlic, and cook for 30 seconds.
  • Add the spices, and cook for 30 seconds.
  • Add the tomato sauce followed by the coconut milk and bring to a gentle simmer then cook for a couple of minutes until you get a smooth homogenous sauce.
  • To the sauce, add the brown sugar and season with salt and pepper.
  • Drop the shrimp in the curry sauce, and cook for 2-3 minutes then remove from heat as soon as the shrimp is no longer opaque (be careful not to overcook it). Shrimp is easy to overcook so keep an eye on it before it curls too much.
  • Garnish with chopped fresh cilantro leaves, and a squeeze of fresh lime juice. Serve over warm white rice and naan bread.

1 pound extra-large shrimp (peeled and deveined)
¼ teaspoon salt
¼ teaspoon black pepper (freshly ground )
¼ teaspoon cayenne pepper
2 tablespoon lemon juice
1 tablespoon coconut oil
1 medium onion (chopped)
3 cloves garlic (minced)
1 tablespoon fresh ginger (minced)
½ teaspoon black pepper (freshly ground )
½ teaspoon salt (or to taste)
½ teaspoon turmeric
2 teaspoon ground coriander
1 teaspoon curry powder
14½ ounce diced tomatoes
13½ ounce coconut milk
2 tablespoon cilantro (for garnish (or parsley))
cooked rice for serving

Steps:

  • In a small bowl toss the shrimp with the marinade ingredients. Cover with plastic wrap and refrigerate for 10 minutes.
  • While the shrimp is marinating, heat the oil in a medium size skillet. To it add the onion, and cook for 2 or 3 minutes until the onion softens and becomes translucent. Stir in the garlic, ginger, pepper, salt, coriander, turmeric and curry powder. Cook for another minute.
  • Add the diced tomatoes with juices and all, the coconut milk, stir and bring to a boil. Cook for about 5 minutes stirring occasionally. Add the shrimp with the accumulated juices from the marinade and cook for another 2 minutes or until the shrimp is pink and cooked through.
  • Serve over hot rice and garnish with cilantro or parsley.

One 14-ounce can unsweetened coconut milk (not low-fat)
1 tablespoon fresh lime juice
1 tablespoon curry powder
2 teaspoons minced ginger
Salt and freshly ground black pepper
1 pound large shrimp, peeled and deveined
Lime wedges, for serving

Steps:

  • In a large pot whisk together the coconut milk, lime juice, curry powder and ginger. Slowly bring to a low boil over low heat. Simmer for until slightly reduced and thickened, about 7 to 10 minutes. Taste for seasoning and add salt and or pepper, if needed. Add the shrimp and simmer, covered, until the shrimp are fully cooked, about 12 to 15 minutes. Transfer the curry to a serving bowl and serve with lime wedges.

I'm a big fan of coconut and an even bigger fan of coconut curry. Coconut milk adds another layer of flavor and a smooth texture to any curry base. Red curry and coconut go together particularly well with seafood. Shrimp is the perfect ingredient to stand up to the complex, powerful spices of this red curry sauce. And yes, this does take only 10 minutes to make, I promise!

1 teaspoon canola oil
2 tablespoons red curry paste (feel free to add more if you want to amp up the curry flavor)
One 14-ounce can coconut milk
1 teaspoon dried chili flakes
1 red bell pepper, deseeded and cut into strips
2 cups button mushrooms, halved
24 large shrimp (about 1 pound), peeled and deveined
10 fresh basil leaves
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Steamed rice, for serving

Steps:

  • In a large skillet, heat canola oil over medium-high heat. As soon as the oil begins to shimmer, whisk in the red curry paste and cook for about 1 minute. (This opens up the flavors of the paste.)
  • Pour in the coconut milk and continue whisking to combine the paste with the milk. Simmer for about 2 minutes.
  • Add chili flakes, red bell pepper, and mushrooms and cook, stirring for about 3 to4 minutes.
  • Add the shrimp to the curry sauce and cook for another 3 minutes.
  • Stir in the basil, salt, and pepper. Serve over steamed rice.

2 tablespoons unsalted butter, divided
1 small yellow onion, diced
½ red bell pepper, seeded and chopped
½ green bell pepper, seeded and chopped
½ cup unsweetened coconut milk
1 ½ teaspoons fish sauce
1 tablespoon lemon juice
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt
½ tablespoon sugar
2 teaspoons curry powder
1 tablespoon maggi, (chicken bouillon powder)
1 lb jumbo shrimp, peeled and deveined
brown rice, for serving
fresh cilantro leaf, for garnish

Steps:

  • Melt 1 tablespoon of butter in a large skillet over medium heat. Add the onion and cook until starting to soften, about 5 minutes.
  • Add the remaining tablespoon of butter and the red and green bell peppers. Cook until slightly softened, 3-4 minutes.
  • Add the coconut milk, fish sauce, lemon juice, pepper, salt, sugar, curry powder, and maggi and mix well. Bring to boil, then reduce the heat to low and simmer for 10 minutes, until the flavors start to meld together.
  • Add the shrimp and cook for 3-4 minutes, until pink and opaque.
  • Serve the curry with brown rice and garnish with cilantro.
  • Enjoy!

  • Heat oil in large, nonstick saucepan over medium heat. Saute onion, red pepper, and garlic until vegetables begin to soften, about 3 minutes.
  • Season with cumin, coriander, and curry powder. Cook for 1 more minute. Stir in coconut milk, sugar, and crushed red pepper flakes. Bring to a boil. Reduce heat, and simmer, uncovered for 2 minutes.
  • Stir in shrimp, and increase heat to medium-high. Cook and stir until shrimp is cooked through, about 4 minutes.
  • In a small bowl, combine cornstarch with 1 tablespoon water. Stir into shrimp mixture, and cook until sauce has thickened, about 1 minute. Stir in cilantro, and remove from heat.
