VEGAN SUGAR COOKIES
These vegan sugar cookies have the familiar flavor and texture of other classic sugar cookies--crisp edges, a soft center and slight chew--but contain no animal products. A touch of baking powder ensures the cookies puff slightly without spreading too much. Top them with a simple confectioners' sugar glaze and decorate with sprinkles for any holiday or festive occasion throughout the year.

- For the vegan sugar cookies: Beat the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 2 minutes. Add the vanilla and 2 tablespoons of the almond milk, then continue to beat until smooth and combined. Whisk together the flour, cornstarch, baking powder and salt in a medium bowl until combined. Add the flour mixture to the butter mixture, then beat on low speed until a dough comes together; it should be similar in texture to Play-Doh. If the dough seems too dry, add the remaining 1 tablespoon almond milk, then stir again until combined.
- Transfer the dough to a clean work surface and roll it into a smooth and even log that's about 2 inches wide and 8 1/2 inches long. Wrap tightly with plastic wrap and refrigerate until chilled through, at least 2 hours and up to overnight.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
- Unwrap the log of dough and trim the ends with a sharp chef's knife. Cut the dough into 1/4-inch-thick rounds, then transfer to the prepared baking sheets. Bake the cookies, one sheet at a time, until the tops and edges are set and the bottoms are just starting to turn golden brown, 15 to 17 minutes. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the vegan icing: Once the cookies are cool, whisk together the confectioners' sugar and almond milk in a small bowl until a smooth icing forms; it should be thick enough to spread on a cookie without dripping off the sides. If the icing is too thick, add an extra 1 to 2 teaspoons of almond milk until the desired consistency is achieved. Leave the icing plain or tint with food coloring.
- Use a small offset spatula to spread the icing onto the cooled cookies and immediately top with some sprinkles. Return to the wire rack until set, about 15 minutes. The cookies can be stored in an airtight container for up to 3 days.

- Preheat oven 350 degrees F (175 degrees C).
- In a large bowl, cream together the vegan margarine, oil, confectioners' sugar, and 1 cup vegan white sugar until light and fluffy. Beat in pre-mixed egg replacer and stir in the vanilla. Combine the flour, baking soda, and cream of tartar; stir into the creamed mixture. Roll dough into 1 inch balls, and then roll the balls in remaining white sugar. Place onto ungreased cookie sheets and flatten with a fork.
- Bake for 8 to 10 minutes in the preheated oven, or until the edges begin to brown. Cool on wire racks, if desired.

We adore these vegan cookies for several reasons, including their golden-brown edges, soft centers and generous portion of dairy-free chocolate chips in each. Vegan brown sugar and a touch of vegan molasses are included for a hint of caramel-like flavor in each bite. Also good: The cookie dough can be baked immediately, no refrigeration or chilling required first, making these treats as convenient to make as they are delicious to eat.

- Position a rack in the center of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Whisk the flour, baking powder, baking soda and salt together in a medium bowl until combined. Whisk the brown sugar, coconut oil, applesauce, 1/4 cup of water, vanilla and molasses together in a large bowl until smooth and combined. Stir the flour mixture into the brown sugar mixture until just combined, then fold in the chocolate chips until evenly dispersed.
- Scoop heaping tablespoons of dough onto the prepared baking sheets leaving at least 1 inch between each mound. Bake one tray at a time in the center of the oven until the edges are lightly set and the bottom and the centers are still soft, 12 to 15 minutes. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
VEGAN DROP COOKIE
This recipe was found in "Clean Food". I must recommend this cookbook for anyone who is vegan and likes to eat clean; it's absolutely fabulous! This cookie recipe can be modified in so many ways. It uses mashed bananas as the binder, so if you don't like bananas, next... That said, I think it would be a lovely way to make a "banana bread cookie" and I hope to try that next! The cookies turn out soft and cake-like, so yum. Feel free to play with this (or any recipe) to cater to your taste or needs! I cannot use a lot of sugar, so I try to substitute with Stevia or Agave.

- Preheat oven to 350.
- In bowl, combine mashed bananas, oil, liquid sugar and vanilla, or stevia vanilla. In separate bowl, combine oats, flour, baking soda and coconut (if using). Stir the wet mixture into the dry until just combined. Add your choice of "fun yum" for final stir, i.e., coco chips, raisins, dried fruit, or anything your taste desire with banana!
- Drop onto prepared cookie sheet. They will not change from the dropped shape, so it is up to you if you wish to have round, drop cookies; or thinner, oblong cookies. Bake for about 18 minutes, until golden. Place 'em on a rack and then test the moment they are cool enough!

- Tip the coconut oil and sugars into a bowl and whisk until completely combined, then whisk in the coconut milk and vanilla. Tip the flour, baking powder, bicarb and a good pinch of flaky sea salt into the mix to make a thick batter, then fold through the chocolate chips. Chill the batter for at least 1hr. Can be made two days ahead.
- Heat the oven to 180C/160C fan/gas 4. Line a couple of baking sheets with baking parchment, then scoop or roll plum-sized balls of the dough and place them on the baking sheets about 2cm apart. Flatten ever so slightly and sprinkle with a bit more flaky salt if you want. Cook on the middle shelf for 12-15 mins, turning the tray once, until the cookies have spread and are golden but still soft in the middle. Leave to cool slightly, then lift the cookies onto a cooling rack while you bake another batch. Will keep in a biscuit jar for up to three days.

VEGAN LEMON COOKIES
This recipe was given to me by a friend when I was starting to cook for my boyfriend (now husband) with food allergies. I used her original written recipe so often I had to post it here so I wouldn't lose it before it became unreadable (Thanks, K!) These don't last long around our house! Try substituting lime for some of the lemon!
