I've found that these mini meatballs make a hearty, "can't-miss" appetizer year round. They are always well-received at a potluck,and the only "utensil" I need to supply is toothpicks. They also make a good entree over noodles. More Potluck Appetizers »

1 egg, lightly beaten
2/3 cup soft bread crumbs
1/2 cup grated onion
1 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon pepper
1 pound ground beef
1 tablespoon cornstarch
1 can (10-1/2 ounces) condensed beef consomme, undiluted

Steps:

  • In a large bowl, combine the first six ingredients; crumble beef over mixture and mix well. Shape into 1-1/4-in. balls. In a large skillet, brown meatballs in batches; drain., Transfer to a greased 1-1/2-qt. baking dish. Combine cornstarch and consomme until smooth; add to skillet. Bring to a boil, stirring to loosen browned bits from pan. Boil for 2 minutes or until thickened., Pour over the meatballs. Bake, uncovered, at 350° for 35-40 minutes or until no longer pink.

2 pounds ground beef
1 cup unseasoned breadcrumbs
1/2 cup grated onion
1/4 cup minced fresh parsley
2 eggs
Red pepper flakes, as needed
Salt and freshly ground black pepper
2 tablespoons olive oil
2 tablespoons butter
1 can beef consomme
1 can beef broth
2 tablespoons spicy brown mustard
2 tablespoons tomato paste
2 tablespoons cornstarch

Steps:

  • For the meatballs: Place the ground beef, breadcrumbs, onion, parsley, eggs, red pepper flakes and some salt and pepper in a large bowl and mix together thoroughly. Form the mixture into uniform-size balls.
  • Heat the oil and butter in a large pan. When hot, begin frying the meatballs in batches, setting them aside on a plate or baking sheet when brown. You may need to drain any excess fat from the pan during the frying process. Continue frying until all the meatballs are browned. Set aside.
  • For the sauce: Add the beef consomme and three-quarters of the can of beef broth to the meatball pan, reserving the remaining broth in a small bowl. Add the mustard and tomato paste to the pan, then stir and bring to the boil.
  • Add the cornstarch to the reserved beef broth and whisk so there are no lumps. As the sauce starts to boil, add the cornstarch mixture. When the sauce has thickened after a few minutes, return the meatballs to the pot and stir to make sure they are all coated in sauce. Continue to simmer until the meatballs are cooked through, about 45 minutes.

AUTUMN'S POTLUCK MEATBALLS

I'd decided to make meatballs for a potluck lunch at work- but my small rural grocery store was out of chili sauce so I had to improvise. This recipe is what I came up with! If the resulting sauce is too tangy, feel free to add up to another 1/2 cup of brown sugar.

2 lbs ground beef
1 large egg
1 cup Italian style breadcrumbs
1/4 cup dried parsley
1/4 cup onion, minced
1 tablespoon Worcestershire sauce
1 teaspoon prepared horseradish
1 (16 ounce) can jellied cranberry sauce
1 1/2 cups ketchup
3/8 cup brown sugar
3 tablespoons vinegar
3/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice

Steps:

  • Mix the ground beef, egg, bread crumbs, parsley, onion, worcestershire, and horseradish. I used my kitchen aid and it worked very well.
  • Form into 1" meatballs.
  • Bake at 350 until done, about 20 minutes.
  • Combine all the sauce ingredients in a small sauce pan, and heat until boiling.
  • Put meatballs in crock pot and pour sauce over them. Keep on low.

1 1/2 pounds ground beef
3/4 cup quick oats
1 cup milk
3 tablespoons very finely minced onion
1 1/2 teaspoons salt
Plenty of ground black pepper
4 tablespoons canola oil
1/2 cup all-purpose flour
1 cup ketchup
4 to 6 tablespoons minced onion
3 tablespoons distilled white vinegar
2 tablespoons sugar
2 tablespoons Worcestershire sauce
Dash of hot sauce, such as Tabasco

Steps:

  • For the meatballs: In bowl, combine the ground beef and oats. Pour in the milk, and then add the onions, salt and pepper. Stir to combine. Roll the mixture into tablespoon-size balls and refrigerate them for 30 to 45 minutes to firm.
  • Preheat the oven to 350 degrees F.
  • Heat the canola oil in a large skillet over medium heat. Dredge the meatballs in the flour, and then brown the meatballs in batches until light brown. As they brown, place them into a rectangular baking dish.
  • For the sauce: Stir together the ketchup, onions, vinegar, sugar, Worcestershire sauce and hot sauce. Drizzle the sauce evenly on the meatballs.
  • Bake until bubbly and hot, about 45 minutes.

APPLESAUCE MEATBALLS

This was my mother's standard dinner recipe for guests. These meatballs are juicy and packed with flavor! They go great with scalloped potatoes as a side dish.

1 cup applesauce
1 egg
1 cup bread crumbs
½ teaspoon salt and pepper to taste
1 pound ground beef
flour
1 tablespoon vegetable oil
4 carrots, peeled and thinly sliced
2 onions, thinly sliced
3 cups tomato juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine applesauce, egg, bread crumbs, and salt and pepper, with ground beef; mix until well blended. (This is best done by hand.) Form mixture into medium-sized meatballs, and roll in flour.
  • Heat 1 teaspoon of oil in a large skillet over medium high or high heat. Cook meatballs, turning occasionally, until evenly browned but not cooked through. Transfer to a baking dish and set aside.
  • In the same skillet, partially cook the carrots and onions over medium high heat. Add tomato juice, season to taste with salt and pepper, and bring to a boil. Reduce heat, and simmer for 5 minutes, then pour over meatballs.
  • Cook, covered, in the preheated oven for 45 minutes, or until carrots are tender and meatballs are cooked through. Cook uncovered for 10 minutes before removing from the oven.

1 cup grape juice
1 cup apple jelly
1 cup ketchup
1 can (8 ounces) tomato sauce
1 package (64 ounces) frozen fully cooked Italian meatballs
Minced fresh parsley, optional

Steps:

  • In a small saucepan, combine juice, jelly, ketchup and tomato sauce. Cook and stir over medium heat until jelly is melted., Place meatballs in a 5-qt. slow cooker. Pour sauce over the top and gently stir to coat. Cover and cook on low for 4-5 hours or until heated through. If desired, sprinkle with parsley.

GRANDMA'S APPLESAUCE MEATBALLS



Grandma's Applesauce Meatballs image

This is one of my family's favorite 'comfort' foods - by all six generations. Don't let the applesauce scare you off; you can't taste it, but it keeps the meatballs tender and moist. Add mushrooms and/or pearl onions for an even heartier 'comfort' meal! Serve over hot buttered noodles or rice. We like a salad and garlic bread, or a plate of sliced tomatoes and cucumbers. Enjoy!

1 egg
½ cup milk
1 ½ cups herb seasoned croutons
⅔ cup applesauce
3 tablespoons chopped onion
3 tablespoons minced garlic, or to taste
½ cup shredded Cheddar cheese
salt and black pepper to taste
1 ½ pounds ground beef
1 (10.75 ounce) can condensed cream of celery soup
½ cup evaporated milk
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Whisk the egg and milk together in a large bowl, and stir in the croutons. Allow the croutons to soak up the milk mixture for about 2 minutes. Lightly stir in the applesauce, onion, garlic, Cheddar cheese, and salt and pepper, and mix in ground beef with your hands until thoroughly combined. Form the meat mixture into 1 1/2-inch balls, and place into the prepared baking dish. In the same bowl, whisk together the cream of celery soup with evaporated milk. Pour the sauce over the meatballs.
  • Bake, uncovered, in the preheated oven until the sauce is bubbling and thickened and the meat is no longer pink in the middle, about 45 minutes. Sprinkle with Parmesan cheese 15 minutes before end of baking, and bake until the cheese is melted and beginning to brown. An instant-read thermometer inserted into the center of a meatball should read 160 degrees F (70 degrees C).
