1/2 pound good black olives, such as kalamata, pitted and diced
3 tablespoons capers, drained
8 anchovy fillets
1 garlic clove, minced
1/2 cup good olive oil
1 tablespoon freshly squeezed lemon juice
2 teaspoons Dijon mustard
1 teaspoon minced fresh thyme leaves
1 tablespoon chopped fresh parsley leaves
1 baguette, sliced and toasted

Steps:

  • Combine the olives, capers, anchovies and garlic in a food processor fitted with a steel blade, and pulse 3 times. Add the olive oil, lemon juice, mustard, thyme and parsley and process until chunky.
  • Serve on toasts.

10 cloves garlic
2 lemons, juice of
1 (10 ounce) can black olives
1 cup chopped parsley
8 green onions, coarsely chopped
1 tablespoon chopped basil
1 cup walnuts
2 cups finely chopped grated parmesan cheese
3/4 cup olive oil
1 loaf baguette, sliced in thin rounds

Steps:

  • Press the garlic into the lemon juice or if you don't have a garlic press, mince and put it into the lemon juice, while you prepare the other items.
  • Put the rest of the ingredients into a food processor and process into a finely chopped paste.
  • Put in a bowl and mix in the garlic, lemon juice and olive oil well.
  • Serve with bread slices.

1 (2 ounce) can anchovy fillets, rinsed
2 tablespoons capers
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
3 tablespoons lemon juice
4 tablespoons olive oil

Steps:

  • Combine garlic, olives, anchovies, capers, thyme, rosemary and lemon juice in an electric blender. Slowly drip the olive oil into the blender while you are blending the ingredients together. Blend until a paste is formed.

4 anchovy fillets
2 tablespoons capers, drained
1 garlic clove, peeled
1/8 teaspoon cayenne pepper
1/4 teaspoon grated orange zest
8 sprigs of thyme, leaves only
4 tablespoons olive oil

Steps:

  • Place all the ingredients except the olive oil in the work bowl of a food processor. Pulse to blend. Add the oil and pulse a few more times to form a cohesive but still coarse paste.

2 cups pimiento-stuffed green olives
½ cup pitted black olives
1 (6 ounce) jar marinated artichoke hearts, undrained
2 hot banana peppers, seeded and cut into pieces
1 red bell pepper, seeded and coarsely chopped
2 cloves garlic, minced
2 tablespoons capers, drained and chopped
½ teaspoon dried basil
1 tablespoon lemon juice
¼ cup olive oil

Steps:

  • In a food processor or blender, chop green olives, black olives, and artichoke hearts in batches until just spreadable; pour into a mixing bowl. Puree banana peppers and red bell pepper until just spreadable; mix into olive mixture.
  • Stir in garlic, capers, basil, lemon juice, and olive oil until well blended. Tapenade will keep in refrigerator for up to 1 week.

3 cloves garlic, chopped
6 ounces anchovy filets, drained and patted dry
16-ounce can good-quality canned tuna in oil, drained
1/2 cup capers, drained
1 tablespoon green peppercorns in brine, drained and chopped
1/4 teaspoon chopped fresh thyme
2 tablespoons grated lemon zest
1/2 cup fresh lemon juice
2 tablespoons cognac (optional)
2/3 cup extra-virgin olive oil
Lemon shells (recipe above)

Steps:

  • Pulse all ingredients except oil and shells in a food processor until just combined. With motor running, slowly pour in oil. Do not overprocess: the tapenade should have some chunkiness. Refrigerate for later use or spoon into lemon shells.

290g jar of pitted kalamata black olives (160g drained weight)
1 tbsp capers
2 anchovy fillets
50ml olive oil
1 tsp red wine vinegar
sprig fresh thyme, leaves only (optional)

Steps:

  • Blitz all the ingredients except the thyme in a small food processor. Season with black pepper then transfer to a jar or serving dish and scatter over the thyme leaves if using. Keeps in the fridge for 3 days.

2 garlic cloves, minced
3 tablespoons capers
1 tablespoon basil, slivered
1 tablespoon lemon juice
2 tablespoons olive oil

Steps:

  • Thoroughly rinse the olives in cool water.
  • Place all ingredients in the bowl of a food processor(mini on is just right).¨.
  • Process to combine stopping to scrape down sides of bowl until mixture becomes a coarse paste app 1 to 2 minutes.
  • Transfer to a bowl and refrigerate until ready to serve.
