Steps:
- Bring a large pot of water to a boil. Generously salt it so that it tastes like the sea. Prepare a separate large bowl of cold salted water for an ice bath.
- Add the asparagus to the boiling water and allow to blanch for about 1 minute. Transfer the asparagus using tongs or a spider to the ice bath to shock. Remove from the bath and lay the asparagus on a paper towel to dry slightly.
- Meanwhile, in a medium saute pan over medium-high heat, add olive oil to lightly coat. Add the shallot and cook until translucent, about 3 minutes. Then add the garlic and combine, cooking until tender and fragrant, about 1 minute more. Add the asparagus and saute until heated through. Season with salt and crushed red pepper. Toss with the lemon zest and plate. Serve as a side to your meal!

- Wash the asparagus and trim off the ends. Cut the stalks into bite-sized pieces.
- In large skillet, heat the olive oil over medium high heat. Add the asparagus, kosher salt, and fresh ground pepper. Cook, stirring occasionally, until the largest pieces are tender, about 5 to 8 minutes. This depends on the thickness and maturity of the asparagus, so it's different every time! Taste and remove when it's just tender and still bright green, but not crunchy (cook a minute longer if you need to).
- Meanwhile, zest the lemon and juice it. When the asparagus is done, remove from heat and stir in lemon juice and lemon zest. (Optional: top with feta cheese crumbles or shredded Parmesan.)

- Add asparagus and saute for about 3-5 minutes. The total time depends on the size of the asparagus.
- Taste for doneness. Should be crisp-tender.

- Squeeze the juice of the lemon and set it aside.
- Trim off the bottom 1½ to 2 inches of woody stems at the bottom of the asparagus and discard them. Then cut the asparagus stalks into pieces ½ to 1 inch in length.
- Melt the butter in a heavy-bottomed sauté pan over medium-high heat.
- Add the onion and sauté for 2-3 minutes or until it turns slightly translucent.
- Add the wine and let it simmer for a minute or two until it reduces by about half.
- Add the asparagus and sauté for 3-4 minutes or until it's bright green and tender but firm to the bite.
- Add the thyme and half the lemon juice and cook for a minute.
