Whip up these delicious classic Cranberry Meatballs for the upcoming holidays. Completely homemade, super simple and bursting with savory-sweet flavor!

1 small onion (grated or finely chopped)
1 ½ pound ground pork (extra lean)
1 cup breadcrumbs (such as Panko)
2 large eggs
⅓ cup ketchup
2 tablespoon Worcestershire sauce
¼ cup parsley (fresh, chopped)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 cups cranberry sauce (homemade or store bought)
1 cup ketchup
3 tablespoon brown sugar (packed)
1 tablespoon lemon juice (freshly squeezed)

Steps:

  • Preheat your oven to 350 F degrees. Line a baking sheet with parchment paper. Set aside.
  • In a large bowl combine all the meatball ingredients together and mix well.
  • Wet your hands and form the mixture into medium size meatballs. You should end up with about 32 meatballs. Watch the video to see how to use a small ice cream scoop to make the meatballs.
  • Transfer the meatballs to the prepared baking sheet and bake for 20 to 25 minutes or until a thermometer reads 160 F degrees.
  • While the meatballs are baking, prepare the sauce. In a large skillet add all the sauce ingredients, stir and cook over medium heat until it comes to a boil. Turn down the heat and stir in the meatballs. Cook until heated through.
  • Garnish with parsley if preferred and serve warm.

1 c. leftover cranberry sauce
1/4 c. rive wine vinegar
2 tbsp. low-sodium soy sauce
2 tbsp. ketchup
2 tsp. Worcestershire sauce
1 tsp. brown sugar
1/4 c. water
2 lb. frozen precooked cocktail-size meatballs

Steps:

  • In a large saucepan, combine cranberry sauce, vinegar, low-sodium soy sauce, ketchup, Worcestershire sauce, sugar, and water.
  • Cook on medium-low, stirring until smooth. If desired, strain through a medium-mesh strainer, then return to the pan.
  • Add meatballs and cook, covered, stirring occasionally, until heated through, 12 to 15 minutes.

1 large egg, lightly beaten
1 small onion, finely chopped
3/4 cup dry bread crumbs
1 tablespoon dried parsley flakes
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1 pound bulk pork sausage
1 can (14 ounces) jellied cranberry sauce
3 tablespoons cider vinegar
2 tablespoons brown sugar
1 tablespoon prepared mustard
1 package (1 pound) miniature smoked sausage links

Steps:

  • In a large bowl, combine the first six ingredients. Crumble bulk sausage over the mixture and mix well. Shape into 1 in. balls. In a large skillet, cook meatballs over medium heat until a thermometer reads 160°.; drain., In a large saucepan, combine the cranberry sauce, vinegar, brown sugar and mustard. Cook and stir over medium heat until cranberry sauce is melted. Add the meatballs and sausage links. Bring to a boil. Reduce heat; simmer, uncovered, until sausage links are no longer pink and sauce is slightly thickened, 10-15 minutes.

2 cups quick-cooking or rolled oats
1 can (12 ounces) evaporated milk
1 cup chopped onion
2 teaspoons salt

2 cups ketchup
1-1/2 cups packed brown sugar

Steps:

  • In a large bowl, beat eggs. Add oats, milk, onion, salt, pepper and garlic powder. Add the ground beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls. These delicious meatballs are made with ground beef, and ground pork sausage, which they are then cooked in a tangy cranberry-tomato sauce. The sauce is made of 2 kinds of canned jellied cranberries, (cranberry and cran-raspberry) along with tomato soup and a bit of water. This is a good way to use up those leftover canned cranberries, after the holidays are over. Update about this recipe: I have noticed that the grocery stores, (at least where I live) no longer sale the jellied cran-raspberries, so I'm sure these meatballs will taste just as good using the regular jellied canned cranberry sauce.

1 3/4 lbs ground beef
8 ounces pork sausage (*See note)
1 medium onion, finely chopped
2 eggs, beaten
2 -3 teaspoons garlic, minced
3 -5 dashes salt & pepper
1 cup Italian style breadcrumbs
1 (16 ounce) can jelled ocean spray cranraspberry sauce
8 ounces jelled ocean spray cranberry sauce
1 (10 3/4 ounce) can tomato soup
3/4 cup water

Steps:

  • In a large bowl, mix all the meatball ingredients together.
  • Shape into 34 (1 1/2-inch meatballs).
  • Place on a greased (15 1/4 x 10 1/4 x 3/4-inch) baking sheet.
  • Bake 20 minutes in a 350 degree oven.
  • In the meantime, add both cranberry sauces and the can of tomato soup, in a Dutch Oven; mix together thoroughly.
  • (I mix mine with a potato masher).
  • Add water; stir until all is combined.
  • When meatballs are done, add to the cranberry mixture.
  • Cook over low heat (covered) for 20-25 minutes.
  • We enjoy these with hot-cooked mashed potatoes.
  • Note: For this recipe, I use seasoned ground pork sausage, which already has garlic, sage, salt, pepper, and onion in the sausage.
