Steps:
- Heat oven to 350ºF.
- Spread TATER TOTS onto bottom of 13x9-inch pan sprayed with cooking spray. Bake 15 min.
- Meanwhile, brown meat in large skillet on medium heat; drain. Return meat to skillet. Stir in tomato paste. Add tomatoes, beans, seasoning mix and water; mix well. Bring to boil, stirring frequently. Simmer on medium-low heat 10 min., stirring occasionally. Stir in onions.
- Sprinkle 3/4 cup cheese over TATER TOTS; top with meat mixture and remaining cheese.
- Bake 20 to 25 min. or until heated through.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place potato nuggets in the bottom of a glass baking dish. Bake in the preheated oven until cooked through and crisp, about 20 minutes.
- Cook ground beef in a large skillet over medium heat until no longer pink, 10 to 12 minutes. Drain off fat and discard. Stir in taco seasoning and water. Reduce heat to low and simmer until sauce is reduced and thick, about 10 minutes.
- Spoon cooked beef mixture over the potato nuggets. Pour nacho cheese dip evenly over the beef. Top with canned tomatoes, olives, 1/2 cup shredded Cheddar cheese, and taco sauce. Bake in the oven until cheese is melted and the casserole is warmed through, about 10 minutes. Remove from oven and top with 1/2 cup shredded Cheddar cheese. Serve atop shredded lettuce and garnished with sour cream.

- Preheat oven to 375 degrees.
- In a large pan, brown the ground beef until cooked through. Remove beef from skillet and drain any excess grease.
- Add the onions and bell peppers to the pan, saute on medium high heat for 2-3 minutes, until vegetables are softened.
- Transfer the ground beef back to the pan, along with the salsa, green chiles, taco seasoning, black beans, salt and pepper. Mix well. Add the softened cream cheese and stir until well combined.
- Spread the meat mixture evenly into the bottom of a 9x13 casserole dish. Pour the shredded cheese evenly across the top. Line tater tots in rows on top of the cheese until completely covered.
- Bake in the oven at 375 degrees for 25-30 minutes, or until tater tots are cooked through and slightly crispy on top. Top with the sliced green onions. Serve hot as is or garnish with toppings. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add corn, salsa, processed cheese, cream cheese, and taco seasoning to ground beef and stir until combined.

This is from Deborah Madisons Vegetarian Cooking for Everyone. Baked Tofu smothered with a fragrant stew of summer vegetables and sprinkled with Romano cheese. You can replace the mushrooms with artichoke hearts or asparagus. The sauce MAKES this dish so I often double it:-). It's also great used for pasta salad. This dish can easily be made vegan by omitting the cheese.

- Place the tofu on a baking sheet and bake in a 450°F oven for about 20 minutes or until it firms and releases its liquid. Set aside.
- While the tofu is baking prepare the vegetables.
- Warm the olive oil in a large saute pan and add the onions, peppers, garlic, mushrooms and dried herbs. Saute until the onions start turning translucent and the peppers begin to soften, about 5 minutes. Add the parsley, olives, wine and salt and cook until the vegetables are coated in a syrupy sauce, about 8 minutes.
- While the vegetables are cooking whisk all the ingredients for the sauce together in a small bowl. Set aside.
- Place the vegetables in a large casserole dish and wiggle the tofu down into the vegetables. Pour the prepared sauce over the vegetables and tofu and sprinkle with the Romano cheese. Bake in a 400°F oven for about 25 minutes. Serve with rice or noodles and a green salad.

- By hand or by using a food processor, mince the olives, parsley, parmesan, black pepper, jalapeno, garlic, and oil. Then make a 2 inch horizontal slit through each of the chicken breasts to create a pocket. Divid the stuffing between the four breasts. then brush flour over each piece.
- Preheat oven to 400 degrees and spray a baking dish with cooking spray.
- Add oil to a skillet and saute the stuffed breasts on all sides for about 5 minutes or until just starting to brown.

- In bowl, mix sour cream and Taco seasoning mix.
- In large gallon zip lock bag, add half of the thawed tator tots.
- Add half of the sour cream seasoning mixture. Close bag and shake, shake, shake.
- Spray Pam onlarge flat baking tray with small sides.
- Preheat oven 425*.
- Empty plastic sack on baking tray on one side.
- Fill plastic sack with other half of tator tots and balance of sour cream seasoning mixture. Close bag, shake, shake, shake.
- Emply plastic sack on other side of baking tray.
- Bake 10 minutes. Take out of oven, turn the tots with spatula.Bake 10 minutes more. Sprinkle with shredded cheese. Bake until cheese is melted and golden. Sprinkle sliced olives on one section, two kinds of peppers on other sections. Serve from tray with spatula.

- Preheat oven to 375 degrees and spray a 9x13 baking dish with cooking spray. For extra crispy tater tots, bake tater tots for about 10 minutes while preparing the beef mixture - otherwise prepare as follows.
- In a large skillet, brown the beef and the onion. Add the garlic towards the end of the browning process and cook for 1 minute. Drain.
- Add the green chiles, taco seasoning mix, black beans, corn, and 2 cups of the cheese. Stir together to combine. If your skillet isn’t big enough you may need to stir it together in a bowl.
