I love a spicy and thick chili during fall and winter months; this recipe (made with ground turkey) kicks butt! The cocoa powder is the secret ingredient! Works best to have all your ingredients chopped drained and ready before you start, as it thickens up pretty fast over the heat.

3 tablespoons extra-virgin olive oil
2 yellow onions, chopped
1 green bell pepper, seeded and minced
1 red bell pepper, seeded and minced
6 cloves garlic, minced
1 ⅓ pounds ground turkey
2 tablespoons chili powder
2 tablespoons dried oregano
1 tablespoon paprika
1 tablespoon ground cumin
2 teaspoons seasoned salt
1 ½ teaspoons red pepper flakes
1 teaspoon ground black pepper
1 teaspoon unsweetened cocoa powder
2 (14.5 ounce) cans diced tomatoes with green chile peppers, liquid drained and reserved
1 (15 ounce) can red chili beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (6 ounce) can tomato paste
¾ cup light beer (such as Miller Lite®)
1 tablespoon Worcestershire sauce
½ teaspoon hickory-flavored liquid smoke
½ cup low-sodium tomato juice
2 tablespoons hot pepper sauce (such as Tabasco®)

Steps:

  • Heat olive oil in a large pot over medium heat. Cook and stir onions, green bell pepper, red bell pepper, and garlic in hot oil until the onion is translucent, 7 to 10 minutes.
  • Crumble ground turkey into small pieces and add to the pot. Place a cover on the pot and cook, stirring occasionally, until turkey is cooked through and no longer pink, about 5 minutes.
  • Season turkey with chili powder, oregano, paprika, cumin, seasoned salt, red pepper flakes, ground black pepper, and cocoa powder. Add diced tomatoes with green chile peppers, red chili beans, black beans, tomato paste, light beer, Worcestershire sauce, liquid smoke, and tomato juice to the pot. Loosely cover the pot and cook mixture at a simmer, stirring occasionally, until thickened but still moist, for about 1 hour. Stir reserved liquid from diced tomatoes with green chilies into chili as it simmers to keep it from becoming too dry.
  • Stir hot pepper sauce through the chili. Reduce heat to low and cook another 10 minutes. Allow to cool slightly before serving.

1 Tbsp olive oil
1 (28 oz) can crushed tomatoes, no-salt added
1 (15 oz) can petite diced tomatoes, no-salt added
3 Tbsp tomato paste
1/2 tsp. hot sauce (I used Texas Pete)
1 (15 oz) can kidney beans, no-salt added, drained and rinsed
1 red bell pepper, chopped
1 green bell pepper, chopped
2 jalapenos, chopped
1 1/2 tsp. sea salt
Pinch of pepper
1 packet Stevia
3 Tbsp chili powder
2 tsp. oregano
1/8 tsp. cayenne pepper

Steps:

  • Drizzle olive oil in a large pot and saute onion and garlic until fragrant, about 3 minutes. Add ground turkey and cook until crumbled and brown, draining excess liquid as necessary.

Steps:

  • Heat the oil in a Dutch oven or large soup pot over medium heat. Add the garlic, onions, bell peppers, carrots, celery, and sweet potato. Sauté for 5 to 7 minutes, until soft.

1 cup any stock or broth (low sodium)
1 large onion (diced)
3 large garlic cloves (minced)
1 bell pepper (diced)
1 1/2 cups corn (canned or frozen)
14 oz can low sodium red kidney beans (rinsed and drained)
14 oz can low sodium cannellini or navy beans (rinsed and drained)
14 oz can low sodium pinto beans or black eyed peas (rinsed and drained)
2 tbsp chili powder (makes mild, 3 tbsp for spicy)
1 tsp cumin
1 tsp oregano (dried)
1/2 tsp paprika
3/4 tsp salt
28 oz can diced tomatoes (low sodium)
6 oz can tomato paste (low sodium)
Avocado oil
Green onion (cilantro, cheese, plain yogurt (for toppings))

Steps:

  • On 6 or 8 quart Instant Pot, press Sauté and let appliance preheat until display says Hot.
  • Swirl a bit of oil to coat, add ground turkey and cook for 4 minutes, breaking into small pieces with spatula often. Meat doesn't have to cook through.
  • If you see bottom of the pot has stuck browned bits of meat, add 1/2 cup broth and deglaze the pot. If not - then it's fine. My 6 quart Instant Pot runs hotter than 8 quart.
  • Press Cancel and add remaining 1/2 cup (if deglazed) or 1 cup broth.
  • Add onion, garlic, bell pepper, corn, beans, chili powder, cumin, oregano, paprika, salt, diced tomatoes and tomato paste. Do not stir to avoid Burn.
  • Close the lid, set pressure vent to Sealing and press Pressure Cook on High or Manual for 15 minutes.
  • After release pressure using Quick Release by turning pressure valve to Venting position, which takes 2-3 minutes. Open the lid, stir and serve hot with your favourite toppings.

  • Heat the canola oil in a large skillet, preferably cast iron, on high heat. Add the ground turkey and saute until browned, about 3 minutes. Add the onion and garlic and continue cooking until the turkey is cooked through. Add the chili powder, paprika, cumin, salt, and pepper and stir until evenly coated.
  • Reduce the heat to medium low and add the canned tomatoes with juices (or sauce) and kidney beans and stir. Add the ketchup, salsa, tomato paste, and Sriracha stirring until well combined. Let simmer for at least 20 minutes. The longer it cooks, the spicier it will be.
