Uncle Bill's Deep Fried Onion Rings in Batter and Panko Crumbs image

I have tried so many different recipes for Onion Rings and many were very good. However, I was looking for a real tasty, crispier Onion Ring and finally found this recipe posted by BlogChef. I made some modifications and this is my crispy, crunchy recipe.

2 cups canola oil, if required (for deep frying, or more)
1 large vidalia onions or 1 large regular onion, sliced into 1/4 inch slices and separated into individual rings
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1 teaspoon seasoning salt
1 large egg, lightly beaten
1 cup whole milk, homogenized
1 1/4 cups panko breadcrumbs (more if required)
1/2 teaspoon seasoning salt, for sprinkle

Steps:

  • In a deep 8 inch saucepan or a small deep fryer, add the oil and heat to 365°F.
  • Slice onions into 1/4 inch thick slices (across the onion) and separate into individual rings; set aside.
  • In a large bowl, sift together flour, baking powder and seasoning salt.
  • Dredge all the onion rings in the flour mixture until well coated; set aside.
  • In another bowl, whisk the egg and milk and add to the remaining flour mixture that was used for dredging the onion rings. Whisk, until a creamy batter is formed; not too thick. If too thick, add some milk to thin.
  • Place a wire rack on a sheet of aluminum foil to catch drippings.
  • Dip the flour coated onion rings in the batter to coat well.
  • Using a fork, remove and place the coated onion rings on the wire rack and let the excess batter drip off, about 1 minute.
  • In another mixing bowl, add the Panko bread crumbs.
  • Roll the onion rings in the bread crumbs until thoroughly coated and place on a baking sheet lined with parchment paper.
  • Deep fry the onion rings in batches of 4 to 6 for 1 minute, turn over and continue to deep fry for another 30 seconds to 1 minute or until golden in color. Do not overcook.
  • Remove to paper towels to drain and season with seasoning salt.
  • When serving, spinkle with Malt vinegar and some ketchup on the side for dipping.
  • You can use regular or seasoned bread crumbs if Panko is not available.

1/2 teaspoon salt
6 large onions, peeled and sliced 1/4 inch thick
1/2 cup milk
1 teaspoon sugar
1 egg, well beaten
1 tablespoon melted shortening
vegetable oil (for frying)

Steps:

  • Cover onion slices with cold water and let stand 30 minutes.
  • Remove to paper towels and press to dry.
  • Separate into rings.
  • Combine flour, sugar and salt.
  • Combine milk and egg in a medium bowl and add dry ingredients and melted shortening; mix thoroughly.
  • Dip onion rings in batter and fry in deep fryer or skillet filled with a couple of inches of oil until golden brown on both sides.
  • Remove and drain on paper towels.
  • Serve immediately.

2 1/2 cups buttermilk
1/2 teaspoon cayenne pepper
8 ounces plain flour
1 teaspoon celery salt

Steps:

  • Cut the peeled onions into 1/2in slices and separate into rings.
  • Soak the rings in the buttermilk mixed with the cayenne pepper. Leave for up to 1/2 an hour - the longer they soak the better.
  • In another bowl mix together the flour, celery salt, garlic powder, and paprika.
  • Drain the onion rings and drop them in the seasoned flour.

2 large Spanish onions (or 3 yellow onions)
2 cups buttermilk
Kosher salt and freshly ground black pepper
1 1/2 cups all-purpose flour
1/4 cup (medium) yellow cornmeal
1 quart vegetable oil

Steps:

  • Peel the onions, slice them 1/2 to 3/4-inch thick, and separate them into rings. Combine the buttermilk, 1 1/2 teaspoons salt, 1 teaspoon pepper in a medium bowl. Add the onion rings, toss well, and allow to marinate for at least 15 minutes. (The onion rings can sit in the buttermilk for a few hours.) In a separate bowl, combine the flour, cornmeal, 1 teaspoon salt, and 1/2 teaspoon pepper. Set aside.
  • When you're ready to fry the onion rings, preheat the oven to 200 degrees F. Line a baking sheet with paper towels.
  • Heat the oil to 350 degrees F in a large pot or Dutch oven. (A candy thermometer attached to the side of the pot will help you maintain the proper temperature.) 2 large onions, cut into 1⁄2-inch rounds
2 quarts peanut oil
1 cup all-purpose flour
1⁄2 cup cornstarch
1 teaspoon baking powder
1⁄4 teaspoon baking soda
1⁄2 teaspoon paprika
3/4 cup light-flavored beer (such as PBR or Budweiser), ice-cold
1/4 cup 80-proof vodka
Kosher Salt

Steps:

  • Separate the onion rounds into individual rings. Place in a gallon-sized zipper-lock freezer bag and put them in the freezer until completely frozen, at least 1 hour (they can stay in the freezer for up to 1 month).
  • When ready to fry, remove the onion rings from the freezer bag, transfer to a bowl, and thaw under tepid running water. Transfer to a rimmed baking sheet lined with a clean kitchen towel or several layers of paper towels and dry the rings thoroughly. Carefully peel off the inner papery membrane from each ring and discard (the rings will be very floppy). Set aside.
  • Preheat the oil to 375°F in a large wok or a Dutch oven over medium-high heat. Combine the flour, cornstarch, baking powder, baking soda, and paprika in a medium bowl and whisk together. Combine the beer and vodka in a small bowl.
  • Slowly add the beer mixture to the flour mixture, whisking constantly until the batter has texture of thick paint (you may not need all of the beer). The batter should leave a trail if you drip it back into the bowl off the whisk. Do not overmix; a few small lumps are OK. Dip one onion ring in the batter, making sure that all surfaces are coated, lift it out, letting the excess batter drip off, and add it to the hot oil by slowly lowering it in with your fingers until just one side is sticking out, then dropping it in. Repeat until half of the rings are in the oil. Fry, flipping the rings halfway through cooking, until they are deep golden brown, about 4 minutes. 1 Onion (sliced into 1/2? thicken slices and divided into rings)
1/2 cup Flour
2 Large Eggs
1/2 cup Milk
1 cup Panko Bread Crumbs
Vegetable Oil For Frying

Steps:

  • You will need 3 small bowls. Place flour in one bowl, eggs and milk in a second bowl (beat them together) and then the Panko crumbs in a third bowl.
  • Coat the sliced onions in the flour, then in the egg mixture and then in the bread crumb mixture. Place on a separate plate until ready to air fry.
  • Continue to do this until all of the onions have been coated.
  • Add oil to a small saucepan. You'll need about 2? of oil. Heat on medium heat until it has reached a temperature of 375 degrees F.
  • Place the coated onions in the oil and fry on each side until the pickles are golden brown. I cooked mine for approximately 2-3 minutes per side.
  • Then transfer the fried onion rings to a plate lined with a paper towel. Allow them to cool (they will be hot). You can top them with salt to keep them crisp at this time.

1/2 cup store-bought dried sour cream and onion dip mix
4 teaspoons onion powder
1 teaspoon garlic powder
1 1/4 cups (150 grams) all-purpose flour
1/2 cup (60 grams) cornstarch
1 teaspoon kosher salt
1 teaspoon baking powder
1 cup chilled seltzer water
1/2 cup (120 grams) sour cream
1/2 cup (18 grams) chopped chives
2 large yellow onions, sliced into 1/2-inch-thick rings and separated
Ketchup, for serving

Steps:

  • Heat 2 inches of oil in a Dutch oven to 370 degrees F.
  • Whisk together the sour cream and onion dip mix, 2 teaspoons of the onion powder and 1/2 teaspoon of the garlic powder in a large bowl (large enough to use for dredging). Set aside 2 tablespoons of the seasoning mixture for later. To the mixture in the bowl, stir in 1/4 cup of the flour. Set aside.
  • In a separate large mixing bowl, whisk together the remaining 1 cup flour, the cornstarch, remaining 2 teaspoons onion powder, the salt, baking powder and remaining 1/2 teaspoon garlic powder. Add the seltzer and sour cream and whisk until just smooth. Stir in the chives. The batter should be the consistency of thick paint.
  • Add the onion rings to the seasoned flour and toss to lightly coat. Working in 2 batches, dredge the floured rings in the batter, letting the excess drip back in the bowl, and add to the oil. Fry, flipping occasionally, until very crisp and deep golden, about 4 minutes per batch. Drain on a wire rack set over a baking sheet.
  • While still hot, season the onion rings with the reserved sour cream and onion seasoning mixture. Serve immediately, with ketchup.

Steps:

  • Slice your onions into 1/2-inch slices. In a one bowl, add the almond flour, salt, and pepper. In another bowl, add the keto bread crumbs and in a third bowl, add the eggs and whisk together.
  • Get one onion and dip in the egg mixture, followed by the almond flour mixture, then the egg mixture again, and finally in the keto bread crumbs. Shake off excess coating and set aside. Repeat the process until all the onions are coated in the batter.
  • Add one inch of oil to a saucepan or deep pot. Once the oil reaches an internal temperature of 350C, add the battered onions and fry for 2-3 minutes, flipping halfway through. Once the onions are golden brown, place them on a plate lined with some paper towels. Repeat the process until all the onions are fried.

1 egg (well beaten)

Cooking oil for deep frying

Steps:

  • Gather the ingredients.
  • Heat the oven to 200 F. Line a baking sheet with paper towels and have a spare baking sheet or pan ready for keeping the fried onion rings warm.
  • Wash and peel the onions and then cut them into 1/4-inch thick rounds. Separate rounds into rings.
  • Heat 3 to 4 inches of vegetable oil in a deep, heavy pan or deep fryer to 365 F.
  • In a bowl, combine flour, seasonings, and baking powder. In a small bowl, whisk together egg and milk. Add milk mixture to dry ingredients. Stir until well blended.
  • Dip onion rings into batter, then drop into deep fat at about 365. Work with just a few at a time; don't crowd them.
