FRESH CAPRESE QUINOA SALAD



Fresh Caprese Quinoa Salad image

This bright and flavorful Caprese Quinoa Salad is made with toasted quinoa, cherry tomatoes, creamy mozzarella and fresh basil. With added protein and nutrients, it takes the classic Caprese salad to the next level.

2 tablespoons extra virgin olive oil (divided)
1 cup quinoa
2 cups chicken broth (low sodium)
1 cup cherry tomatoes (sliced in half)
1 cup fresh mozzarella
10 leaves basil (cut chiffonade)
2 tablespoons lemon juice
Salt and pepper to taste

Steps:

  • In a medium pan, heat half of the olive oil (one tablespoon) over medium-high heat, toast the quinoa for 3-4 minutes until lightly brown and fragrant.
  • Add the chicken broth and bring to a boil. Cover and reduce heat to low. Cook for 15 minutes then remove from heat. Fluff quinoa with a fork and set aside.
  • In a medium bowl, add cooked quinoa, cherry tomatoes, mozzarella, basil, lemon juice, remaining one tablespoon olive oil and salt/pepper.
  • Toss salad to combine and check for seasoning before serving.

Caprese salad is a classic recipe with fresh tomatoes, mozzarella cheese, and basil. This version adds a little brown rice and quinoa for a heartier salad. The honey balsamic dressing gives the dish a lightly sweet and tangy flavor. It's delicious and will be great for a picnic or even a dinner party.

1 lb Campari tomatoes
1 lb fresh mozzarella balls
1/4 c red onion, diced
1 oz fresh basil, chopped
1 pkg quinoa and brown rice
1/2 c light honey balsalmic dressing

Steps:

  • 1. Cut tomatoes into wedges.
  • 2. Chop red onion and basil.
  • 3. Prepare quinoa/brown rice as directed on the package.
  • 4. Mix together quinoa/rice, tomatoes, onion, and basil in a bowl.
  • 5. Add mozzarella balls and gently toss in honey balsamic vinaigrette.
  • 6. Refrigerate and serve cold.
