DATE ENERGY BALLS
I like making these date energy balls with cashews. They remind me of the cashew cookie Larabar.

HEALTHY DATE BALLS
This is very similar to already-posted recipes, but with healthier ingredients. I experimented with my favorite no-bake cookie recipe and was delighted to find that there's almost no difference in taste!! I can't keep my hands off these! By the way, the dates I use are whole pitted dates, that I "dice" with a scissors. I'm not sure if the pre-chopped, flour coated version would work.

CHOCOLATE DATE ENERGY BALLS
Eating just one of these healthy chocolate date energy balls satisfies my sweet tooth without added refined sugar. My recipe is a spinoff of an energy ball my daughter made for me when I was testing for my taekwondo black belt. -Barbara Estabrook, Appleton, Wisconsin

WALNUT DATE BALLS
Love these as a snack or dessert! There's no added sugar. You can press them into a 9x9-inch pan and cut into bars, if you prefer.

DATE BALLS
A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Grind the almonds in a food processor until finely chopped. Move chopped almonds to a baking sheet and toast in the oven for 5 to 7 minutes, until fragrant and just a shade darker.
- Coarsely chop dates and add to food processor. Pulse until finely chopped and dates form a ball. Remove from processor to a bowl.
- Add half of the ground almonds to the dates, leaving the reserved almonds on the baking pan to roll the balls in once formed.
- Add the honey to the date and almond mixture. Mix together until evenly mixed and smooth.
- Coat your hands with some vegetable oil so mixture does not stick too much.
- Form mixture into 1-1/2" balls. Roll each ball in ground almonds to coat well. Place in a sealed container until ready to eat.
- Any leftover chopped nuts for coating can be sprinkled over the balls to keep them from sticking together when moving.
- Will keep for up to 5 days at room temperature or up to a week in refrigerator.
