ERIN'S CANADIAN FRIED DOUGH



Erin's Canadian Fried Dough image

This recipe is passed down from my Nana who was famous for her doughnuts. This is one she would make us on a cold winters day after skating all day on the outdoor rink. It is a popular treat when skating on the Rideau Canal in Ottawa, Canada.

1 cup milk
1 egg
¾ teaspoon salt
3 tablespoons white sugar
1 tablespoon butter
3 ¼ cups all-purpose flour
¾ teaspoon active dry yeast
1 quart vegetable oil for frying
¼ cup cinnamon sugar, or to taste

Steps:

  • Place the milk, egg, salt, sugar, butter, flour, and yeast into a bread machine in that order. Start the machine's Dough cycle.
  • Once the dough cycle has completed, remove the dough from the bread machine to a lightly floured surface. Cover with a large mixing bowl, and let rest 10 to 15 minutes. Divide the dough into 10 balls, then flatten, and gently stretch into 8x6-inch ovals (a beaver tail shape.)
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Cook the dough one or two at a time in the hot oil until lightly browned on each side, about 2 minutes per side. Drain on a paper towel-lined plate, and sprinkle with cinnamon sugar to serve.

1 cup sour cream
1 cup granulated sugar
2 large eggs
1 teaspoon baking soda
1/2 teaspoon salt
3 cups all-purpose flour
1/8-1/4 teaspoon nutmeg (optional)
1 teaspoon vanilla extract

Steps:

  • Beat sour cream with sugar well.
  • Add eggs and mix well.
  • Mix all dry ingredients seperately and add into wet mixture.
  • Roll out the dough onto a lightly floured surface about 3/4 inches thick.
  • Cut with a doughnut cutter.
  • Fry in deep hot fat.
  • Deep fat should be temp of 370 degrees.
  • Turn once to brown both sides.
  • Place onto paper towels to drain.
  • Sprinkle or dust with granulated sugar, powdered icing sugar.

700 g pizza dough
¼ cup butter, softened
3 cups strawberry
1 ⅓ cups blueberry
3 tablespoons orange juice
1 teaspoon lemon zest
¼ cup white sugar
1 cinnamon stick
whipped cream, for garnish
1 cup chocolate hazelnut spread
12 graham crackers
2 cups mini marshmallows
1 cup caramel sauce
1 apple, large
4 granola bars, crumbled
1 cup chocolate hazelnut spread
1 cup milk chocolate, crushed or bite-sized

Steps:

  • Preheat oven to 400°F (200°C).
  • Cut dough into 4 equal pieces, and roll out into long oval-like shapes about ¼ inch thick, spread thin layer of butter on each and bake in oven for 10 minutes or until baked through and just starting to brown on top. Do not over bake your dough.
  • In a medium saucepan, add strawberries, blueberries, orange juice, lemon zest, granulated white sugar, cinnamon stick and cook over medium heat for about 10 - 15 minutes or until strawberries and blueberries are soft and desired consistency reached.
  • Remove from oven and garnish with your desired toppings.
