SPICY CARAMEL POPCORN WITH PEANUTS
A touch of spice makes this crunchy popcorn recipe extra nice; try making a big batch and packaging for friends.

Steps:
- Preheat oven to 250 degrees. Line two baking sheets with nonstick baking mats. Set aside.
- Heat oil with 3 popcorn kernels in a large, heavy saucepan over medium heat. When kernels pop, add remaining 1/2 cup kernels. Cook, covered, shaking pan occasionally, until popping stops, 6 to 7 minutes. Remove pan from heat; let stand, covered, 1 minute.
- Divide popcorn evenly between prepared baking sheets; set aside. In a medium saucepan heat sugar, butter, and corn syrup over medium heat until butter is melted, sugar is dissolved, and mixture is golden brown. Stir in salt and cayenne pepper; add peanuts and stir to coat. Pour mixture over popcorn. Spray a spatula with nonstick cooking spray and toss to combine.
- Transfer baking sheets to oven and bake, stirring occasionally, for 30 minutes.
MICROWAVE CARAMEL AND PEANUT POPCORN

- Place the popped popcorn into a large brown paper bag. Set aside. In a 2-quart casserole dish, or other heatproof glass dish, combine the brown sugar, butter, corn syrup, vanilla extract and salt. Heat at full power for 3 minutes in the microwave, then take out and stir until well blended. Return to the microwave, and cook for 1 minute and 30 seconds more. Remove from the microwave, and stir in the baking soda. Pour the syrup mixture over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the popcorn. Place bag into the microwave, and cook for 1 minute 10 seconds. Remove, shake, flip the bag over and return it to the microwave. Cook for another 1 minute and 10 seconds. Dump the popcorn out onto waxed paper, and let cool until coating is set. Serve immediately or store in an airtight container.
SPICY CARAMEL POPCORN
Sweet, sticky caramel popcorn gets a kick of cayenne pepper and the combination is nonpareil. Once the caramel is poured over the popcorn, work quickly and let it cool a bit before serving. The snack is easy to make, and running out will likely be a problem -- so have extra supplies on hand.

- Lightly coat two large, heatproof rubber spatulas and a large mixing bowl with nonstick cooking spray.
- In a large saucepan or pot with a lid, heat the oil over medium-high heat. Add the popcorn kernels, cover and keep the saucepan moving until all of the kernels have popped, about 5 minutes. Transfer to the prepared bowl, removing any unpopped kernels.
- In a small bowl, whisk together the baking soda and cayenne pepper.
- Have two large baking sheets ready. In a medium saucepan, combine the sugar, butter, salt and 1/2 cup water. Cook over high heat, without stirring, until the mixture becomes a light golden caramel, 10 to 14 minutes. Remove from the heat and carefully whisk in the baking-soda mixture (the mixture will bubble up).
- Immediately pour the caramel mixture over the popcorn. Working quickly and carefully, use the prepared spatulas to toss the caramel and popcorn together, as if you were tossing a salad, until the popcorn is well coated.
- Spread the popcorn onto the baking sheets and quickly separate them into small pieces while still warm. Cool to room temperature, about 15 minutes. Once cool, store in an airtight container for up to 2 weeks.

- Heat oven to 200°F. Line cookie sheet with cooking parchment paper.
- Place popcorn and peanuts in very large bowl; set aside.
- In 2-quart saucepan, heat brown sugar, butter and corn syrup to boiling Boil 5 minutes without stirring. Remove from heat. Stir in baking soda, salt and vanilla.

PEANUT-PECAN CARAMEL POPCORN

- Preheat the oven to 300 degrees F. Prepare a baking sheet by spraying it with canola spray.
- In a large saute pan over medium-low heat, add the butter, pecans and peanuts. Saute until the nuts become fragrant, about 5 minutes. Add the caramel sauce and vanilla extract and continue to cook on low until the caramel begins to thicken, an additional 5 minutes. Next, add the popcorn and stir to coat completely with the caramel sauce.
- Remove the popcorn from the heat and spread it into 1 even layer on the prepared sheet. Place the sheet in the oven and cook for 20 minutes. Remove from the oven, sprinkle with the sea salt and let cool. Break up the popcorn with a spoon and serve family style in a large bowl.

- Spread the popcorn evenly over the lined baking sheet, then sprinkle the peanuts evenly over top of the popcorn.
- To a medium saucepan over medium heat, add the brown sugar, butter, corn syrup, and ¼ teaspoon Tony Chachere’s Original Creole Seasoning. Stir with a wooden spoon until the butter is melted and the ingredients are fully mixed. Let the mixture come to a light boil, then boil undisturbed for 5 minutes. Depending on your stove, you may have to turn the temperature down as the 5 minutes goes on to keep the temperature at the same steady temperature (like with a glass stove top).
- When the 5 minutes are up, add the baking soda and the Tony Chachere’s No Salt Seasoning Blend and stir with a wooden spoon. The mixture will puff up, and it’s important that you move very quickly. Pour the caramel over the popcorn, and use two wooden spoons to evenly coat the popcorn with the caramel.
