- Beat 3 sticks softened butter and 1/4 teaspoon salt with a mixer on medium-high speed until fluffy, 2 minutes. Gradually beat in 1 1/2 cups confectioners' sugar on low speed until combined.
- Add 2 tablespoons unsweetened cocoa powder and 2 teaspoons vanilla and beat on medium-high speed until fluffy, about 3 minutes. Beat in 6 ounces cooled melted semisweet chocolate until smooth and fluffy, 2 to 3 more minutes.
- Spread the frosting on the cake. Refrigerate 30 minutes before serving.
MOM'S FUDGY FROSTING
This is my Mom's frosting that she always made to go with her brownies, cupcakes, or cakes. She also used it to fill between graham crackers as a treat for all the kids.

Steps:
- In a 2 quart saucepan, melt the margarine and chocolate over low heat, stirring constantly.
- Add milk, vanilla and salt and remove from heat.
- Stir in powdered sugar to make a rather stiff frosting.
- Beat until lumps disappear and frosting is smooth. You may have to use a small additional amount of milk.
- Return pan to stove, heat over low heat stirring constantly until frosting is lukewarm. This makes the frosting more liquid and easier to spread on brownies or cakes.

I'm not sure where the original recipe comes from, but my mom gave me the BEST chocolate frosting recipe. Once you try this, I doubt you will ever use another. Seriously.

MOM'S CHOCOLATE COCA-COLA CAKE & FROSTING
This is the recipe my mom used to make my birthday cake when I was a little girl, and the recipe for my son's cake when he requests chocolate. It is very similar to the other Chocolate Coca-Cola Cakes, but the main difference is the little bit of cinnamon that is in it. It is our favorite chocolate birthday cake. For a prettier cake, you can use double-boiler seven minute frosting....it's not chocolate, but it does make a very pretty cake! It is a nice white frosting...almost like a meringue type frosting. Cook time does not include the 7 minutes for the white icing!

- In a large bowl, mix together 2 cups flour, 1/2 tsp cinnamon, and 2 cups sugar.
- In a heavy saucepan combine 1/2 cup margarine or butter, 1/2 cup oil, 3 tbsp cocoa, and 1 cup coke. Bring to a boil. Pour over the dry ingredients mixed earlier. Mix until blended.
- In a small bowl, mix together 1/2 cup buttermilk and 1 tsp baking soda. Then add it to the mixture.
- Add 2 eggs and 1 tsp vanilla and beat inches Then fold in the marshmallows.
- Bake in a 13 x 9 x 2 inch pan for 30 to 35 minutes (or until a toothpick inserted in the middle comes out clean) in a 350 degree oven.
- For the frosting: Place 1/2 cup margarine or butter, 3 tbsp cocoa, and 5 tbsp coke in a saucepan and bring to a boil. Add the confectioners sugar and vanilla. Mix well. If it is too thick, and a drop or two more of coke.
- If you want the white 7 minute frosting: (These ingredients are not listed above!) In the top of a double boiler, combine 1 1/2 cups sugar, 1/4 cup + 1 tbsp cold water, 2 egg whites, 1 tbsp light corn syrup, and a dash of salt. Beat at a low speed of an electric mixer 30 seconds or just until blended. Place over boiling water; beat constantly on high speed 7 minutes or until stiff peaks form. Remove from heat. Add vanilla and beat 2 minutes or until frosting is thick enough to spread.

- In a medium saucepan, bring the cream and sugar to a boil over moderately high heat. Reduce the heat to low and simmer, stirring occasionally, until the liquid reduces slightly, about 6 minutes. Pour the mixture into a medium bowl and add the chocolate, butter, vanilla and salt. Let stand, stirring occasionally, until the chocolate and butter are melted.
- Set the bowl in a larger bowl of ice water. Using a hand-held electric mixer, beat the frosting on medium speed, scraping the sides occasionally with a rubber spatula, until thick and glossy, about 5 minutes. Use at once.
