- Preheat oven to 400°F. Mash butter, parsley, garlic, 1/2 teaspoon ground mixed peppercorns, and lemon peel in small bowl. Season to taste with salt.
- Heat oil in heavy large ovenproof skillet over medium-high heat. Sprinkle swordfish with salt and ground mixed peppercorns. Add swordfish to skillet. Cook until browned, about 3 minutes. Turn swordfish over and transfer to oven. Roast until just cooked through, about 10 minutes longer. Transfer swordfish to plates. Add seasoned butter to same skillet. Cook over medium-high heat, scraping up browned bits, until melted and bubbling. Pour butter sauce over swordfish and serve.

- Cut swordfish into 1-inch pieces; place in a shallow dish.
- Combine soy sauce, sherry, garlic, and gingerroot, stirring well; pour over fish.

- Mix the ingredients for the Cajun rub.
- Cut the swordfish into bite-size pieces and place it into a sealable bag with olive oil and Cajun rub.
- Gently massage the bag to ensure the fish is well coated. Place in the fridge for about 30 minutes to allow the flavours to develop.
- Toss the cucumber, celery, baby spinach and mint in a serving bowl.

- Season the swordfish steaks with salt and pepper and place in a shallow dish. Mix all the marinade ingredients together, and pour over the swordfish. Leave to marinade for no longer than 15 minutes (you don't want to risk the lemon "cooking" the fish).
- Meanwhile, to make the sauce, blanch the broad beans in a pan of boiling water for 2 minutes, then drain and set aside.
- Make the gremolata by mixing together the lemon zest, olives, capers and parsley.
- Heat a tablespoon of olive oil in a heavy-based frying pan. When the pan is very hot, add the swordfish steaks and fry for 3-4 minutes on each side.
- Remove from the pan and leave to rest while you finish the sauce. Deglaze the pan with the white wine, then add the butter. Swirl until the butter has melted, then add the blanched broad beans. Heat through.
- Serve the swordfish with the sauce spooned over and the gremolata on the side.

- In a large, oven-proof pan, heat the olive oil over medium high heat. Immediately turn heat off and pour mixture over the cooked fish. Be sure to pour on any juices from the swordfish pan as well.
