1 1/3 cups fresh lime juice
2/3 cup orange juice
3 large red onions, sliced 1/8 inch thick (about 11/2 pounds)
1 1/2 teaspoons salt

Steps:

  • Combine lime and orange juices in a small bowl and set aside.
  • Place the onions in a non-aluminum bowl. Pour boiling water over them and wait 10 seconds, then pour the onions into a strainer.
  • Return the drained onions to the bowl, pour on the citrus juices and stir in salt. Cover and set aside until serving time. Just before serving, drain onions and set out in serving bowl.

2 cups / 280 g finely sliced red onion (about 1 large)
3/4 cup / 180 ml fresh lime juice (from about 6 limes)
Salt, to taste
Optional: 1 tsp dried mexican or mediterranean oregano

Steps:

  • Cut the onion through the root, discarding the top and skin. Slice each onion half into thin half moons, about 1/16″ - 1/8″ thick. No thicker! Add the sliced onions to a non reactive bowl, along with the lime juice and a sprinkle of fine sea salt. Toss until the onions are evenly covered in the lime and salt.
  • Let the onions sit at room temperature until they begin to soften a little, about 30 minutes or so, stirring them every 5 - 10 minutes or so. Add the dried oregano, if using. Toss the onions again to coat, then transfer them to a glass jar (or two). Pour over the liquid from the bowl, too. Gently press the onions down with the back of a spoon or fork so that they're immersed in the lime juice. Refrigerate for at least 15 minutes or so before using - they're even better once they've hung out in the fridge for a few hours.
  • Keep in an airtight container in the refrigerator for up to a week.

1 medium red onion, halved and thinly sliced (about 2 cups)
1/4 cup apple cider vinegar
2 tablespoons packed light brown sugar
1/2 teaspoon coriander seeds, lightly crushed
Kosher salt and freshly ground black pepper

Steps:

  • Put the onions in a medium bowl. Combine the vinegar, sugar, coriander, 2 teaspoons salt and a few grinds of pepper in a small saucepan and bring to a simmer over medium heat. Cook until the sugar dissolves, about 1 minute. Pour the mixture over the onions, cover and set aside until cooled to room temperature.

Pickled onions are prepared in several ways in Mexico. For example, in the Yucatan area, it is made with pickled white onions and habanero or Xcatic peppers. Garlic and other herbs and spices can also be added. There are other recipes that are easier and quicker.

1 teaspoon dried Mexican Oregano
2 Medium-sized red onions
About 4-5 cups of water (enough to cover the onions)
1 bay leaf (Optional)
2 Allspice kernels
3 kernels black pepper
1/2 cup of White vinegar* SEE NOTE
1/2 cup of water
Salt to taste

Steps:

  • Toast Mexican oregano in a small skillet over medium-high heat for about 30 seconds. Set aside to cool.
  • Peel onions and thinly slice them. Place 4-5 cups of water in a saucepan and bring to a boil.
  • When water starts bubbling, add sliced onions, and turn the heat off.
  • After 2 minutes, quickly drain the onions into a colander over the sink.
  • Place the drained onions in a glass bowl and add the vinegar, water, oregano, bay leaf and the rest of the spices. Season with salt and mix well. Refrigerate for a couple of hours, and they are ready to eat. They keep well refrigerated for about a week. And they taste best when prepared at least one day in advance.
  • Enjoy with your tacos, tostadas, subs, sandwiches or grilled meats.

½ tbsp olive oil
2 garlic cloves , finely chopped
½ tbsp ground cumin

400ml vegetable stock
half-fat soured cream , to serve

Steps:

  • To make the lime-pickled onions, combine ½ the lime juice and ½ the onions in a small bowl, and season. Leave to pickle for 30 mins.
  • Meanwhile, heat the olive oil in a saucepan over a medium-high heat. Add the garlic and remaining onions, and season. Cook for 8 mins or until the onions are translucent. Add the spices and chipotle purée, cook for 1 min, then add the beans, stock and remaining lime juice. Simmer for 15 mins, then purée in a blender.
  • Pour the soup into a clean pan to reheat. Serve with a little of the drained pickled onions, topped with a small drizzle of soured cream and some coriander, and the tortillas on the side.

2 small red onions (1 thinly sliced into half-moons, 1 chopped)
2 tablespoons fresh lime juice, plus lime wedges for serving
Kosher salt
1 pound peeled and deveined medium shrimp
2 teaspoons chili powder
3 tablespoons extra-virgin olive oil
1/4 cup chopped fresh cilantro leaves, plus 2 teaspoons minced stems
2 plum tomatoes, chopped
4 cups low-sodium chicken broth
1 1/4 pounds Yukon Gold potatoes, peeled and diced
1 avocado, diced
1/2 cup corn nuts

Steps:

  • Mix the sliced red onion with the lime juice and 1/4 teaspoon salt in a bowl; set aside. Pat the shrimp dry and season with salt and 1/2 teaspoon chili powder. Heat 2 tablespoons olive oil in a large pot over medium-high heat. Add half the shrimp and cook, until opaque, about 1 minute per side. Remove with a slotted spoon and transfer to a plate. Repeat with the remaining shrimp. Tent with foil to keep warm.
  • Add the remaining 1 tablespoon olive oil to the pot. Add the chopped red onion and cilantro stems and cook, stirring, until softened, about 3 minutes. Stir in the remaining 1 1/2 teaspoons chili powder. Add the tomatoes and cook until starting to soften, 2 to 3 minutes. Add 1 cup water, the chicken broth, potatoes and a big pinch of salt. Cover and bring to a boil. Uncover and reduce the heat to a simmer; cook until the potatoes are tender, 8 to 10 minutes. Smash about half the potatoes with a potato masher. Simmer until thickened, 2 to 3 minutes; season with salt.
  • Stir the cilantro leaves into the red onion mixture. Divide the shrimp and soup among bowls. Top with the pickled onion, avocado and corn nuts; serve with lime wedges.
