THE BEST EVER LEMON BARS
Our The Best Ever Lemon Bars is a classic Lemon Bar recipe perfected over the years until it had just the right amount of lemon flavor on top of a soft and chewy shortbread crust.

Steps:
- Prepare a 9x13" pan. Lightly spray the pan with cooking spray and then cover the pan with parchment paper vertically. Spray the parchment paper and then cover that piece with another piece of parchment paper horizontally.
- In a bowl, combine flour, powdered sugar and corn starch.
- Cube the cold butter and add to bowl.
- With your hands or a pastry blender combine the dry ingredients until the dough in crumbly.
- Pour the crust mixture into the pan and press down evenly.
- Bake crust in a 350 degree oven for 20-25 minutes or until golden brown around the edges.
- While the crust is in the oven, make the lemon filling.
- Squeeze lemons until you have 1 cup of lemon juice.
- Zest lemons until you have 2 tablespoons of lemon zest.
- Add Eggs, Granulated Sugar and flour into a mixing bowl. Stir until smooth and fully combined.
- Add lemons and lemon zest and mix until combined.
- When crust is done, pour lemon mixture onto the crust as soon as you pull it out of the oven.
- Place the Lemon Bars back in the oven and cook for another 20-25 minutes or until the lemon filling is set.
- Allow the Lemon Bars to cool.
- Sprinkle the Bars with Powdered Sugar.
- Cut into squares.
GRANDMA'S FROSTED LEMON BARS
A cool pop of lemon frosting dresses up this dessert, and is the perfect topping for the chewy, tangy bar cookies.

Steps:
- Heat oven to 350°F. Grease bottom and sides of an 8-inch square pan.
- In medium bowl, mix butter, flour, and 1/4 cup powdered sugar with a pastry blender or two knives until mixture becomes crumb-like. Press evenly into bottom of pan.
- Bake 20 to 25 minutes or until edges of crust begin to brown. DO NOT over bake.
- Meanwhile in medium bowl, beat all filling ingredients with electric mixer on medium-high speed until smooth.
- Pour filling mixture over warm crust. Return pan to oven; bake for an additional 25 minutes or until filling is set.
- Cool completely before frosting.
- In small bowl, beat butter and 1 1/2 cups powdered sugar with electric mixer on low speed until blended. Add remaining ingredients; beat on high speed until well blended. Spread frosting over filling.
- Cut into 4 rows by 4 rows. Serve chilled or at room temperature.

- Preheat over to 350 degrees.
- Mix first 3 ingredients until crumbly.
- Pat into 9 x 13 pan.
- Bake for 20 minutes.
- Bet eggs in a bowl.
- Mix sugar with 3 Tbsp sugar.
- Add to beaten eggs.
- Juice the lemon and add to mixture along with lemon rind.
- Mix and pour over hot crust.
- Return to oven and bake for an additional 20 minutes.
- Once cool, sift powder sugar over the top and cut into squares.

GRANDMA ILA NELSON'S LEMON DREAM BARS
This recipe came from Whitefish, Montana and was given to me years ago by a dear friend. It had been passed down from her family for generations. I love the fragrance and flavor of lemons. This is by far the easiest and best tasting lemon bar I have come across. I have made it for bake sales, gifts, and simply to serve, and I always have requests for the recipe.

Steps:
- For Crust: In medium sized bowl, stir together flour and powdered sugar.
- Cut in butter with pastry blender or the tines of two forks. Press into greased 10x15x1 pan. Bake in 350 degree oven for 10-15 minutes.
- For Filling: Beat together eggs, lemon juice, zest and juice of fresh lemon, flour, sugar, baking powder and coconut. Mix well and pour over hot crust. Return pan to oven and bake uncovered for 25 minutes or until golden brown. Cool completely on wire rack.
- For Frosting: Beat together butter, lemon juice, vanilla and powdered sugar. Spread over filling when cool.
- Cut into bars & serve. Store covered.
