BACON AND SWEET POTATO SKILLET
This savory Bacon & Sweet Potato Skillet isn't just for breakfast but also makes for a great side dish for a hearty evening meal or Thanksgiving feast. Five ingredients and 25 minutes is all you need to whip up this comforting one-skillet dish.

Steps:
- Start by preparing the bacon and the sweet potatoes. Remove most of the visible fat from bacon but leave just enough to use as cooking fat. Chop it into small pieces. Peel and cut sweet potatoes into even-sized cubes.
- Heat a non-stick skillet over medium/high heat. Add bacon and cook until it releases some fat. Add sweet potatoes to the skillet and stir to cover with bacon fat. Season with kosher salt, freshly ground pepper and herbs if using.
- Cook until sweet potato cubes are crispy on the outside and tender on the inside, about 10 to 20 minutes depending on the size of your skillet and your stove, stirring often to make sure it doesn't burn and cooks evenly.

BACON-POWERED SWEET POTATO VEGGIE SKILLET
Most breakfast proteins-ham, sausage, bacon-are loaded with flavor, but that indulgence comes at a sodium- and saturated fat-filled cost. Have your bacon (and eat it, too) by using a small amount to season an entire pan of plants. Bonus: The fat helps you absorb the fat-soluble vitamins A and K. If you don't have feta, you can try substituting goat cheese. And if you can have the extra calories and fat, adding a fried egg on top isn't a bad idea by any means.

- Place bacon in a large cast-iron skillet over medium heat; cook 5 minutes or until just starting to crisp. Add onion; sauté 3 minutes. Add garlic; sauté 1 minute. Add bell peppers; sauté 4 minutes. Add potato, salt, crushed red pepper, and stock. Cover and cook 9 minutes or until potatoes are tender. Add spinach; cook, uncovered, 1 minute or until spinach wilts. Divide mixture between 2 bowls; sprinkle with cheese.

MAPLE GLAZED SWEET POTATOES WITH BACON AND CARAMELIZED ONIONS
I made this for Thanksgiving dinner and my family went crazy over it. It is simple, looks great on the table and has already been requested for Christmas dinner! This recipe can be adjusted as you like by adding more or less bacon and onions.

- Preheat oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks, olive oil, salt, and black pepper in a large bowl, and spread the sweet potatoes out onto a large rimmed baking sheet.
- Roast in the preheated oven until browned and tender, about 40 minutes; stir after the first 20 minutes.
- Cook the bacon until crisp and brown in a large skillet over medium heat, about 10 minutes; transfer bacon to a bowl, but leave the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, stirring frequently. Reduce heat to low, and cook the onions until very soft, brown, and sweet, another 10 to 15 minutes. Stir often. Mix the onions with the bacon in the bowl, and set aside.
- Pour the maple syrup into the hot skillet with the thyme, and bring to a rolling boil. Boil the syrup until reduced by half, 3 to 4 minutes. Place the roasted sweet potatoes and onion-bacon mixture into the skillet, and stir to coat the vegetables with maple glaze. Transfer to a serving dish.
