PORTUGUESE PERI PERI CHICKEN
Portuguese Peri Peri Chicken with Crispy Potatoes - smoky, flavorful and delicious, served over crispy potatoes, with a flavorful cilantro yogurt sauce.

- Preheat oven to 425F
- Rehydrate dried chilies in a small pot of simmering water on the stove for 20 minutes. Remove stem and seeds.
- Butterfly the chicken: Rinse inside and out, removing innards. Pat dry. Place on a cutting board, breast down. Using sharp kitchen scissors, cut along both sides of the spine, remove and discard. Turn the chicken over, and placing your hand on the breast bone, press down hard with the palm of your hand, to flatten.
- Make the marinade by blending the marinade ingredients into a paste with a blender or food processor. Brush a layer of the marinade on the bottom of your large sheet pan.
- Place the thinly sliced potatoes on top of the marinade and sprinkle with a generous pinch of kosher salt, overlapping slightly but not too much.
- Brush all sides and crevasses of the chicken with the marinade, coating fairly heavily. (You will add more marinade during cooking, so be sure to save the remaining.) Place chicken, skin side down on the potatoes and place in the hot oven.
- Turn chicken over after 15 minutes, and place back in the oven. After 15 minutes, brush more marinade all over the chicken on the skin side, really lathering it up. Return to the oven and bake until cooked through another 15-30 minutes, or until leg/ thigh reaches an internal temperature of 165 F. The bigger the chicken, the longer this will take. ( A large, 5-6 pound chicken may take an additional 20 minutes!) To crisp the skin and get it deeply brown, broil for a few minutes. A little char is good here!!! Remove chicken when done and let rest 5-10 minutes before serving. You can continue to cook the potatoes or crisp them up ( with broiler) while resting the chicken and cutting it into pieces.
- While chicken is roasting, combine Cilantro Sauce ingredients together, either in a bowl- mixing by hand, or in a food processor. Serve cilantro sauce on the side.

CHICKEN IN GARLIC SAUCE - POLLO AL AJILLO

- Wash the chicken thighs and pat them dry with paper towels. Season the chicken generously with salt and pepper. Heat the oil in a large heavy skillet over medium-high heat. Add as many of the chicken thighs, skin side down, as will fit without touching.
- Cook until the skin is golden brown, about 10 minutes. Flip the chicken pieces and cook until the other side is golden brown, about 5 minutes more.
- Remove the pan from the heat and spoon off all but about 2 tablespoons of the fat, leaving all the lovely brown bits behind. Return the pan to low heat, stir in the garlic and thyme and cook until the garlic starts to turn golden, about 1 to 2 minutes. Pour in the sherry, increase the heat to medium and bring to a boil. Let it boil a minute or 2, then return the chicken to the pan skin side up. Reduce the heat to low, pour in the chicken stock and bring to a simmer. Cover the pan tightly and cook 20 minutes. Flip the chicken pieces (or rotate them top to bottom if using a smaller pan) and cook until the chicken is very tender, about 20 minutes. Serve hot.
- Note: If you like a mix of white and dark meat, substitute a 4-pound chicken cut into 10 pieces. Let the thighs, drumsticks, and wings cook in the sauce for 15 minutes before adding the browned breast pieces. If you'd like to use all white meat, cut the breasts in half crosswise, brown them as described above, but let the sauce cook down 10 to 15 minutes before adding the chicken breasts.
PORTUGUESE ROASTED CHICKEN

- Preheat the oven to 400 degrees F. Place chicken on cutting board, breast-side down. Use a pair of poultry shears or heavy-duty kitchen scissors to cut along either side of the bird's backbone; remove. Turn the chicken over; use palms to press on breast bones to flatten the chicken. Using a sharp, heavy knife, cut the chicken between breast halves. The chicken will be in 2, flat pieces.
- Place an ovenproof cooling rack on a large rimmed baking sheet. In a small bowl, mix together the lemon juice, garlic, 1/4 cup olive oil, 1/2 teaspoon salt, pepper, and pimento paste, then rub over the chicken. Transfer the chicken to a rack, then pour 2 tablespoons olive oil and 1/2 cup wine over the chicken. Roast 30 minutes; turn the chicken over and pour the remaining 2 tablespoons oil and 1/2 cup wine over the chicken. Roast the chicken until golden, moist, and opaque throughout, about 30 minutes.
PORTUGUESE GARLIC CHICKEN
Its very old,but i decided to try to make it in my crock pot. NOW tome going to work.Just lay your chicken and spices in the c.pot and have a great day. Mom is to put it on the stove top and cook it low for hours and put in the oven for roasting color.The smells invited everyone to moms.

- 1. COMBINE onions,garlic tomatoes, ham and raisins. RESERVE the neck and giblets for other uses.
- 2. RISE or bathe your chicken inside and out, and pat dry.TUCK wingtips under; the drumsticks together. Place chicken on top of all the onions mixture.
- 3. Mix port wine ,port and brandy mustard and tomato paste and pour over the chicken. COVER and cook on LOW setting until meat near thighbone is very tender ,when pierced (7 to 1/2 to 8 hours) CAREFULLY lift chicken to rack of a broiler pan.
- 4. BROIL 4-6 inches below heating ,until Golden brown.(about 5 minutes.
- 5. TRANSFER to warm platter and cover .SKIN and discard fat from cooking liquid .BLEND in cornstarch mixture. IN cornstarch mixture .INCREASE slow ,heat setting to high.Cover liquid and stirring two or three times until sauce is thickened (about 10 minutes)
- 6. STIR IN VINEGAR ;and season to taste. TO SERVE ,garnish the happy chicken with parsley springs and tomato wedges. CARVE the bird and top with some of the sauce .
- 7. SERVE remaining sauce in gravy picture or gravy boat.
- 8. ENJOT It this recipe remandes me of my mom.s house cooking all day long.Our family together for a sunday dinner .Serve with portuguese mountain bread ,and glass of white wine.OR glass of water sliced lemons.
