SPECTACULAR SPAGHETTI SALAD



Spectacular Spaghetti Salad image

This started with evelyn/athens' Macaroni Salad (63733) and morphed based on the ingredients I had on hand and my personal tastes. I brought it to a BBQ and my foodie friend pronounced it spectacular, so I had to post the recipe! BTW, the cooking time is actually refrigeration time.

Number Of Ingredients 11

1 1/2 cups mayonnaise
3 tablespoons vinegar
1 1/2 tablespoons yellow mustard
1 1/2 teaspoons sugar
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 lb thin spaghetti
4 celery hearts, thinly sliced (with leaves)
1/2 green pepper, chopped
3 green onions, thinly sliced (white & green parts)
1 tomatoes, chopped

Steps:

  • Cook spaghetti according to package directions.
  • Mix all dressing ingredients together.
  • When spaghetti is done, drain and rinse with cold water.
  • Mix salad ingredients with dressing.
  • Cover and refrigerate at least 1 hour before serving.

MAGIC NOODLE SALAD

3 ounces woonsen noodles (mung bean thread noodles; also called cellophane or glass noodles)
1/2 ounce dried butterfly pea flowers
4 whole shrimp, blanched
2 cherry tomatoes, halved
1 tablespoon ground peanuts
1 tablespoon chopped cooked bacon
1 teaspoon chopped green onion
1 teaspoon chopped fresh cilantro
1 teaspoon sliced shallot
1 teaspoon chopped garlic
1 Thai chile, chopped
2 tablespoons palm sugar
1 tablespoon fish sauce (salt may be substituted)
2 tablespoons lime juice

Steps:

  • For the noodles: Soak the noodles and butterfly pea flowers in 16 ounces water overnight.
  • Once soaked, remove the noodles from the flower water. Bring the blue flower water to a boil; cook the noodles in the blue water until done, about 2 minutes. Immediately transfer the noodles into temperate water to stop the cooking process.
  • For the toppings: Place the noodles in a mixing bowl and add the shrimp, tomatoes, peanuts, bacon, green onion, cilantro and shallot.
  • For the dressing: Mash the garlic and chile in a mortar and pestle. Add the palm sugar and fish sauce and pound until dissolved. Stir in the lime juice.
  • Add the dressing to the noodles and toppings and toss together!

I call this "Magic Spaghetti Salad", because when you serve it, turn your head, and look back, it has DISAPPEARED! A true family-pleaser...everyone loves this dish. Simple and inexpensive. ***PLEASE NOTE*** "cooking time" below includes marinating time.

1 (1 lb) box spaghetti
2 medium green bell peppers
2 bunches green onions
2 large ripe tomatoes
1 cup pitted black olives
1/2 cup parmesan cheese
salt & pepper
1 cup sugar
1 (24 ounce) bottle Italian salad dressing
1 (16 ounce) bottle French dressing

Steps:

  • Cook and drain spaghetti, rinsing it cold water.
  • Chop green peppers, green onions and tomatoes and put in deep salad bowl.
  • Add cooked & cooled noodles.
  • Add olives and Parmesan cheese, mix well with other ingredients all ready in the bowl.
  • Combine salad dressings with sugar and pour over salad bowl mixture. Mix well.
  • Add salt & pepper, mix again.
  • Cover with a lid and let sit for 12 hours or overnight before serving.

1 1/4 cups mayonnaise, Hellman's
3 tablespoons vinegar
1 tablespoon fresh parsley, chopped
6 -10 garlic cloves, chopped
1 cup tomatoes, chopped
1 cup mushroom, sliced
1 cup onion, chopped
1 cup green pepper, chopped
1/2 lb pepperoni, sliced

Steps:

  • Break the pasta into thirds and cook as directed.
  • Drain.
  • Place in a large bowl and while it is still hot, add the mayonnaise, vinegar, parsley and garlic.
  • Mix well.
  • Add the remaining ingredients.
  • Toss, chill and serve.

1 pint grape tomatoes, sliced in half, can use cherry tomatoes
1 cup chopped onion
1 cucumber, seeded and diced
1 bell pepper, diced
2 1/4 ounces sliced black olives, drained
8 -12 ounces low-fat Italian salad dressing, depending on how wet you want it
2 tablespoons grated parmesan cheese
1/4 teaspoon celery seed
1/8 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon dill weed
salt, to taste

Steps:

  • Cook spaghetti according to package directions; drain and rinse in cold water until completely cool; drain again.
  • Place cooked, cooled spaghetti into a large bowl; mix in tomatoes, onion, cucumber, bell pepper, and olives.
  • Whisk together salad dressing and seasonings and pour over salad. Toss to coat well.
  • Cover and refrigerate for at least 2 hours before serving.
