Sweet and Sour Pearl Onions image

The initial blanching of the onions insures that they'll be tender when cooked through. If the raisins are hard, pour boiling water over them and let stand for 5 minutes. Drain and proceed with the recipe.

2 tablespoons extra-virgin olive oil
1/2 cup chicken broth
1/4 cup cider vinegar
3 tablespoons sugar
2 tablespoons plump golden raisins, optional
1/2 teaspoon coarse salt

Steps:

  • Working in 2 batches, blanch the onions in a medium pot of boiling water for 3 minutes. Peel.
  • Heat the oil over medium heat in a large skillet. Cook, turning the onions over as they brown, until almost tender, about 15 minutes. Add the broth, vinegar, sugar and raisins and bring to a boil. Reduce to a simmer and cook until the sauce is slightly thickened and the onions are tender, 3 to 5 minutes. Stir in the salt and serve.

  • Melt 2 tablespoons butter in a saucepan over medium heat. Add 1 each sliced Vidalia onion and red onion; cook, stirring, until soft, about 15 minutes. Add 1/4 cup ketchup, 1 tablespoon red wine vinegar, 2 teaspoons sugar, 1/2 teaspoon hot sauce, and salt and pepper to taste and heat through, 2 to 3 more minutes. Stir in 3 chopped scallions.

2 pounds small boiling onions, peeled
3 tablespoons red wine vinegar
2 tablespoons balsamic vinegar
1/2 cup light brown sugar
1 teaspoon salt
Pinch saffron, crumbled (optional)
1/2 cup raisins
1/4 cup currants
1 teaspoon lemon zest
2 tablespoons lemon juice
1/4 cup pine nuts, lightly toasted

Steps:

  • Boil onions in well-salted water for 5 minutes, until softened slightly but still firm. Drain and place in baking dish (ceramic or stainless steel) just big enough to contain onions in one layer.
  • In small bowl, stir together red wine vinegar, balsamic vinegar, brown sugar, salt and saffron until dissolved. Add raisins and currants. Pour mixture over onions to coat evenly. Cover tightly and bake for 1 hour at 350 degrees, stirring every 15 minutes or so, until onions are quite tender. Cool to room temperature.
  • Carefully stir in lemon zest and lemon juice. Let onions marinate at least 1 hour. Serve sprinkled with pine nuts. May be prepared ahead and refrigerated up to 4 days.

Steps:

  • Place all ingredients except onions in heavy large pot. Bring to boil over high heat. Add onions; reduce heat to medium and simmer until crisp-tender, about 10 minutes. Using slotted spoon, transfer onions to jar with lid. Increase heat to high and boil until liquid is reduced to 1 3/4 cups, about 20 minutes. Pour liquid over onions and cool.
  • Cover onion mixture and refrigerate until flavors blend, at least 1 week and up to 1 month.

6 medium red onions, peeled
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
2 tablespoons white wine vinegar
1 tablespoon dark brown sugar
1/4 cup extra-virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Slice 1/4 inch off the tops and bottoms of the onions so they sit flat. Put the onions on the cutting board root-end down. Cut 3 slits in the stem side of each onion, crisscrossing to make 6 pie slices, cutting about two-thirds of the way through (do not cut all the way through).
  • Bring a medium pot of salted water to a boil. Drop the onions in and cook until tender on the outside, 4 to 5 minutes. Remove and cool. When the onions are cool enough to touch, gently open the onion "petals" so the onion opens up like a flower.
  • In a small pot, simmer the red and white vinegars, brown sugar and 2 tablespoons water over medium heat until syrupy, 2 to 3 minutes.
  • On a baking sheet fitted with parchment paper, arrange the onion flowers in a single layer with space between each. Drizzle with the olive oil and season with salt and pepper. Roast until the flowers open and the tips of the petals are lightly brown, 40 to 45 minutes.
  • Plate the onions on a platter and spoon the sauce over the onion flowers. Serve.

2 teaspoons sugar
1/8 teaspoon ground cloves
1 teaspoon cornstarch
2 tablespoons cold water

  • Cook pork in 10" nonstick skillet over medium heat, turning once, until brown; drain --
  • Arrange onions on pork --
  • Mix wine, vinegar, sugar and cloves; pour over onions and pork --

4 tablespoons olive oil (I use lite)
1/4 cup malt vinegar

1/2 cup dark raisin (optional)

Steps:

  • Heat the oil in a fry pan large enough to accomodate the onions in one layer.
  • When the oil is hot saute the onions until they are lightly browned, shake the pan (8 minutes).
  • Remove onions from the pan and add the vinegar& sugar, stir and cook for apprx 5 minutes.

Combine two barbecue favourites in one with these cheeseburger hotdogs. Serve simply or 'fully loaded' with our homemade burger sauce and onions

500g 15-20% fat beef mince
vegetable oil, for brushing
4 slices of your favourite cheese
4 hot dog buns
1 gherkin, sliced (optional)
2 tbsp sunflower oil
4 onions, finely sliced
1 tsp golden caster sugar
1 tbsp cider, malt, red or white vinegar
4 tbsp mayonnaise
2 tsp mustard (American or English, depending on your preference)
1 tsp ketchup

Steps:

  • If making your own burger sauce, mix all the ingredients together in a small bowl, cover and chill until needed. Can be made up to two days ahead. Tip the mince into a bowl and season well with salt and pepper. Use your hands to scrunch everything together, then divide the mince into four portions. Mould each portion into a sausage slightly longer than the hot dog buns. Roll gently on a tray to neaten, then cover and chill for at least 1 hr. Will keep chilled for up to 24 hrs.
  • Light a barbecue and wait until the coals are ashen, or set a gas barbecue to high. For the onions, heat the oil in a cast iron pan set over the barbecue (or do this in a frying pan on the hob). Scatter in the onions along with a generous pinch of salt and the sugar, and cook for 20-25 mins, stirring now and then until the onions are golden and slightly burnt in places. Carefully splash in the vinegar and cook for a few minutes more until the onions are jammy. Remove from the heat and set aside.
  • Brush a little oil over the hot dogs and barbecue for 10 mins until just cooked through, with char marks on all sides. Drape the cheese over the hot dogs and continue to cook for a few minutes until the cheese has melted - if your barbecue has a lid, close it to melt the cheese quickly. Meanwhile, toast the cut sides of the buns if you like. Stuff the buns with the hot dogs, then top with the sticky onions, gherkins and burger sauce, or whatever your favourite condiments are.

Steps:

  • Preheat oven to 375°F. Wrap each onion tightly in foil. Place onions in roasting pan and roast until very tender when pierced with knife, about 1 1/2 hours. Cool. Trim and remove onion peel. Halve onions lengthwise, then slice thinly lengthwise. Transfer to medium bowl. Add vinegar and lemon juice and toss to blend. Let onion mixture stand at room temperature at least 1 hour and up to 3 hours.
  • Combine 1/2 cup vermouth and currants in small saucepan. Bring to boil. Remove from heat. Cover and let steep at least 1 hour and up to 3 hours.
  • Stir currant mixture, oil, and 1 tablespoon vermouth into onion mixture. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.) Stir in pine nuts.

  • Cut a cross into root end of onions, and set aside. In a saute pan that will hold onions snugly in one layer, place onions, butter and enough water to come no more than 1 inch up sides of pan.
  • Place pan over medium heat for about 20 minutes, turning onions occasionally. Add a little water if pan begins to run dry.
  • Add vinegar, sugar and salt and pepper to taste. Turn onions again, and reduce heat to low. Continue to cook for 1 hour or more, turning onions occasionally, and adding a tablespoon or two of water whenever necessary. Onions are done when they are a rich, dark, golden brown all over, and are easily pierced when prodded with a fork. Serve hot, with pan juices.
