2 cups grated sweet potato
1 ½ cups all-purpose flour
1 cup chopped pecans

2 teaspoons vanilla extract

1 teaspoon milk, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x13-inch baking dish.
  • Beat white sugar and 1 cup softened butter together in a bowl using an electric mixer until smooth and creamy; add sweet potato, flour, pecans, eggs, vanilla extract, and salt, stirring well after each addition, until batter is smooth. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 40 minutes.
  • Whisk confectioners' sugar and 2 tablespoons melted butter together in a bowl; add enough milk to make a thin glaze. Spread glaze over brownies while still hot. Cool and slice brownies.

1 cup peanut or almond butter, or allergy-friendly sub
1 tsp pure vanilla extract
6 tbsp flour ((Oat, white, or spelt flour work. Readers reported success with almond flour))
1/2 cup mini chocolate chips + more for the top, (optional)
2/3 cup sugar
6 tbsp cocoa powder
1 1/2 tsp baking soda
1/8 tsp salt

Steps:

  • If using homemade sweet potato puree, see how to make it above. To make the brownies, start by preheating the oven to 325 F. Line an 8-inch pan with parchment, or grease well. If not easily stir-able, gently heat nut butter to soften. Whisk it with the sweet potato and vanilla until smooth. Stir all remaining ingredients together (making sure the salt and baking soda are evenly incorporated), then pour dry into wet. Stir to form a batter. Smooth into the baking pan, scooping out all traces of batter. Use a second sheet of parchment to really smooth everything down. Bake 20 minutes. They should look underdone when you take them out. 2 (15 ounce) cans light red kidney beans, drained and rinsed
2 (15 ounce) cans dark red kidney beans, drained and rinsed
3 (14.5 ounce) cans diced tomatoes
2 (15 ounce) cans corn
3 tablespoons white sugar
salt and ground black pepper to taste

Steps:

  • Crumble ground beef into a skillet over medium heat. Stir garlic, oregano, chili powder, and basil into the beef; cook and stir until beef is completely browned, 7 to 10 minutes.
  • Combine light red kidney beans, dark red kidney beans, diced tomatoes, and corn in crock of a slow cooker. Stir cooked ground beef into the bean mixture.

6 red chili peppers, pods pureed (med to hot)

1/4 cup chocolate chips, melted in 1 tbs. water

Steps:

  • Chile puree: Remove stems and seeds from dried New Mexican hot chilies. Soak in simmering water 20 minutes.
  • Blend in blender with a small amount of the soaking water to create a paste-like consistency.
  • Cream eggs and sugars. Add flour, cocoa powder and Chile paste. Stir well. Stir in melted margarine and melted chocolate chips.
  • Add nuts, chocolate chips and vanilla. Mix well.
  • Pour into a greased 9 x 9" glass dish and bake at 325 degrees for 35 minutes or until center springs back when touched lightly with a finger.
  • Serve topped with whipped cream sprinkled with crushed red Chile flakes and one of Adelina's Red Chile Gummies.

¾ cup unsweetened cocoa
1 ¼ cup granulated sugar
¼ tsp salt
2 eggs
1 tsp vanilla extract

Steps:

  • Preheat oven to 325 degrees. Line an 8x8-inch square baking dish with parchment paper, leaving a 1-inch overhang, or grease well and coat with flour. Set aside.
  • Melt butter in a large microwave-safe bowl or measuring cup. (Alternatively, melt butter in a large saucepan on the stove, then turn off heat and proceed.) Add cocoa powder and stir with a wooden spoon until smooth. Stir in sugar, salt, eggs and vanilla extract. Add flour and stir until well combined.
  • Spread batter evenly into the prepared pan - you'll need to work at it, spreading it out with the back of a wooden spoon - the batter is very stiff. Bake for about 30 minutes, until edges are set and centre is firm but still just slightly underdone. A toothpick should come out with a few moist crumbs attached. Let cool 10 minutes at least before lifting out by parchment overhang to slice into 16 brownies.

1/2 tsp salt
1/2 tsp baking powder
2 tsp vanilla
1/2 cup (114g) unsalted butter
1 cup (200g) granulated sugar

1 & 1/2 cups (265g) semi-sweet chocolate chips, divided

Steps:

  • In a medium bowl, whisk together the eggs, cocoa powder, salt, baking powder, and vanilla. Set aside.
  • In a medium microwave-safe bowl, combine the butter and sugar. Heat in the microwave for 30 seconds at a time until the butter is melted.
  • Stir and continue heating just until the butter starts to foam. You don't want to bring it to a boil, just heated through to melt some of the sugar which will help create that top shiny crust on top of the brownies. This should take about 1.5 -2 minutes total for the butter to melt and start to foam.
  • Add the hot butter mixture to the cocoa mixture. Whisk until smooth. Stir in the flour, and then stir in 1/2 cup of chocolate chips until melted. Let cool for 15 minutes.
  • Meanwhile, preheat your oven to 350F. Butter and line an 8×8″ baking pan with parchment paper.
  • Once the batter has cooled, stir in the rest of the chocolate chips and spoon the batter into the prepared baking pan. Spread the batter out evenly in the pan.
  • Bake for about 25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. The edges should be set, but the center should still look moist. Let cool before cutting into squares.
