- Heat oven to 160C/140C fan/gas 3. Put the tomatoes on a baking sheet with the garlic and thyme, drizzle over the balsamic vinegar and olive oil, Add some seasoning and roast for 1 hr. Remove and set aside to cool.

ROASTED TOMATOES
These tomatoes are wonderful in a variety of different ways. They can be used by themselves as a side dish, as a topping for brushetta, tossed with pasta or as an addition to a stew. The roasting really brings out the flavor of the tomatoes.

Steps:
- Preheat oven to 250^F.
- Heat 2 T oil in a large heavy skillet over medium heat.
- Add onions and saute' until tender, about 8 minutes.
- Place tomatoes in a single layer in a large roasting pan.
- Add onions, 1/2 c oil, garlic, basil, salt, sugar and red pepper, tossing to coat.
- Roast until tomatoes are tender but not falling apart, stirring now and then, about 2 hours.
ROASTED TOMATOES

- GET AHEAD Halve the tomatoes, placing them in a large roasting tray as you go. Halve the bulb of garlic across the middle and add to the tray. Pick in the oregano leaves, if you've got some, then add 1 tablespoon each of olive oil and red wine vinegar and a pinch of sea salt and black pepper. Toss together and arrange in a single layer. Cover and refrigerate overnight.
- TO SERVE Preheat the oven to 180°C/350°F/gas 4. Roast the tomatoes for 1 hour, before you cook the salmon. Great hot or warm.

ROASTED CHERRY TOMATOES
This is one of the easiest side dishes I've found. I don't even like most tomatoes, but I love these sweet little cherry tomatoes. This is the basic recipe, but you can also add slivered garlic to the roasting pan and/or chopped fresh basil and Parmesan cheese at the end. Very good with pasta!

- Whisk olive oil, balsamic vinegar, salt, and pepper in a large bowl. Add cherry tomatoes; toss to coat.

- Roast until skins are slightly shriveled, 35 to 40 minutes.

HOW TO FIRE ROAST TOMATOES
In a search for fire roasted tomatoes for my recipe for Recipe #390602, I found this homemade version. Fire roasted tomatoes add a smoky flavor to a variety of foods. They cook quickly on a gas range or charcoal grill. Much more economical than store bought; freezable, too. p.s. Using any other tomato probably will not work for they turn out mushy.

Steps:
- Slice the tomatoes in half lengthwise (from stem to tip) and brush the cut sides with olive oil. Place the tomatoes cut side down over a medium flame on a gas grill. If using a charcoal grill, place the tomatoes in the middle of the grill over briquettes that are medium-hot.
- When the tomatoes develop dark char marks (about 5 to 8 minutes depending on size and heat of grill). Continue cooking until the skins begin to blacken in spots. Then, remove the tomatoes from the grill, pile them in a bowl, tightly cover with plastic wrap and set aside.
- When the tomatoes are cool enough to handle, peel off the blackened skins and dice the flesh, making sure to reserve the juices.
- Use immediately or pack tomatoes in a freezer proof container with juices.
ROASTED TOMATOES
A long turn in the oven gives these juicy plum tomatoes good caramelization, lending sweetness to their robust flavor.

- Put oven rack in middle position and preheat oven to 350°F. Oil a shallow baking pan.

- Heat the oven to 200C/180C fan/ gas 6. Heat the oil in a flameproof casserole over a medium heat. Season the guinea fowl all over with salt and pepper, then brown in the casserole for 15-20 mins, turning it with tongs until deep golden and crisp all over. Remove to a plate.
- Reduce the heat to low, then add the garlic, bay and thyme. Stir and sizzle for a minute, then tip in the tomatoes. Use the wine to swill out the tomato can, then pour that in, add the olives and stir everything together. Bring to a simmer.
- Nestle the guinea fowl in the sauce, breast-side-up, then transfer to the oven and roast uncovered for 50 mins-1 hr until the skin is crisp and the legs are coming away from the body. Leave to rest in the sauce for 10 mins, then lift the guinea fowl using tongs and allow all the juices from the cavity to drain back into the sauce before transferring to a board. Give the sauce a stir, taste for seasoning and briefly reheat on the hob if needed. Carve the guinea fowl and serve with the sauce spooned over.

SWEET ROASTED CHERRY TOMATOES
An amazing way to intensify the flavours of a tomato glut. A pile of soft and sticky tomatoes with a concentrated tomatoey flavour and a hint of garlic and balsamic vinegar.

- Preheat oven to 170C/fan 150C/gas 5. In a roasting tin or ceramic dish, layer the halved cherry tomatoes in a single layer, cut side up.
- Slip the garlic slivers neatly into the tomato halves, amongst the tomato seeds. Make sure they are tucked well in so they cook inside the tomatoes, rather than risk overcooking outside the tomatoes. Drizzle with the olive oil and sprinkle over the balsamic vinegar, seasoning well with the salt and pepper.
- Roast in the oven for 45 minutes, checking to ensure they do not burn. Reduce heat if they char too quickly. They should come out soft and slightly charred on the edges.
- Either serve immediately with crusty bread to mop up the delicious garlicy juices or leave until cool and serve later. The longer they stand, the more intensified the flavour. Perfect as a starter with a green crispy salad on the side.
AMAZINGLY SWEET SLOW-ROASTED TOMATOES
These don't look like they are going to taste as amazing as they do, and I know it might be asking a lot to have the oven on for 2 hours on a hot summer day. But it's on low and the end result will be worth it. Lean over the plate when you bite into the tomatoes, as the juice may squirt. You can eat these as a snack or a side dish, or put them through a food mill for an incredibly sweet sauce.

- Preheat the oven to 300 degrees. Put the halved tomatoes in a bowl and toss with the olive oil. Oil a rack that will fit on top of a baking sheet. Place foil on the baking sheet and oil the foil, and place the rack on top. Place the tomatoes, cut side up, on the rack. Sprinkle with coarse salt and a tiny amount of sugar. Place in the oven and roast for 2 hours. Remove from the heat and allow to cool for about 30 minutes. The tomatoes will look a little dry on the surfaces and the skin will be tough. But when you bite into the tomatoes you'll experience a rush of incredibly sweet juice and pulp. If you want to use these for a sauce, put through the fine blade of a food mill.
