PORK N BEANS CAKE (SPICE CAKE) - EASY
I have never seen a Pork N Beans Cake recipe. I got this from my late Uncle and it tastes like a Spice Cake when completed. I had my doubts, but it is a very good and great cake to fool people with when they try it. Very easy to make great for company functions.

Steps:
- Preheat oven to 350°F.
- Combine flour, baking soda, baking powder, cinnamon, and salt together.
- Combine the above mixture with eggs, sugar, and oil in a large mixing bowl.
- Beat at medium speed for 2 minutes.
- Mash drained beans and pineapple to the mixture. You could use a blender for this part and probably would be better to get a smooth bean mixture.
- Bake 30-35 minutes until toothpick test comes out clean.
- Cool for 25 minutes.
- Topping:.
- Mix all ingredients except 1/2 of the pecans; spread between layers, or if a bundt cake style, over the whole thing.
- Once icing on top, sprinkle remaining pecans.

- Preheat oven to 350°F.
- Sift together flour, baking soda, cinnamon, apple pie spice,salt and baking powder.
- Add eggs and oil.
- Blend until smooth.
- Blend pork and beans with mixer until smooth.
- Add crushed pineapple and pork and beans to batter and blend.
- Pour into greased Bundt pan.
- Bake for 40 to 45 minutes.
- Cool and frost with cream cheese frosting.
- Frosting: Blend butter, cream cheese, sugar and vanilla until smooth.
- Spread on cooled cake and sprinkle with pecans.

SUNDAY STARTUP PORK AND BEANS
Steps:
- Set soaked beans in saucepot and cover with water (4 quarts). Bring water to a boil, reduce heat and simmer, partially covered for 1 hour or until the beans are just tender, but not mushy. Drain, reserving cooking liquid. Mix precooked beans with molasses and mustard and season lightly with salt and pepper. While beans are cooking, parboil sausages and salt pork for 10 minutes. Drain. Dice the salt pork into small cubes and slice the sausages. Preheat the oven to 350 degrees. In a shallow gratin or baking dish layer 1/3 of the beans. Top the beans with half of minced garlic, onion, diced salt pork and sliced sausages; season with salt and pepper. Repeat with a layer of beans, remaining salt pork, sausages, onions and garlic and finish with layer of beans. Add about 1 cup of reserved bean cooking liquid to the baking pan, cover the top with strips of bacon and bake for 1 1/2 to 2 hours or until the liquid is almost entirely absorbed. (Add more liquid if it evaporates too quickly.)
- Serve with Corn Bread (recipe follows)
- Preheat oven to 350 degrees. Grease a 13 by 9-inch baking pan. With a whisk combine the flour, cornmeal, baking powder, salt and sugar. Beat eggs with buttermilk and combine with corn and corn oil. Swiftly blend dry ingredients with wet ingredients and transfer to baking pan. Bake for 30 minutes or until bread pulls away from edges and a toothpick when inserted in the middle of the bread comes out dry.

HEALTHY BEAN BREAD (OR CAKE)
I have been trying to get more beans into my families diet because they are so good for you. We even like beans, but sometimes you feel like something different. I found a recipe online that was called Pork-n-Beans Cake. I thought it would be fun to try something like that, and this is what I came up with. My entire family loves these. You can't taste the beans. Really . They would easily make a nice cupcake with cream cheese frosting. Try them and ask people what the weird ingredient is, (they never know:) This makes a big batch. Feel free to add cranberries, raisins, or pecans...they taste great in these.

OLD-FASHIONED PORK CAKE
This recipe is one that my Grandma Lewis would make when she had the ingredients on hand -- because the family lived deep in the mountains of West Virginia a quick trip to the store was not feasible especially during the winters months. My grandma was a terrific cook and never measured ingredients (old school of little bit of this, little bit of that) but it didn't matter because whatever she cooked always tasted good and filled you up! This recipe is one of my dad's favorites and I hope you like it, too!

- Grease and flour 2 bundt pans. Preheat oven to 325 degrees.
- Put pork and raisins in a large mixing bowl (6qt.+) and pour hot coffee over them; Set aside allowing some time to cool.
- Sift together all measured dry ingredients; Mix in walnuts.
- Stir pork mixture carefully in case the coffee is still hot. Slowly begin to add sifted dry ingredients with walnuts and combine together thoroughly.
- Mix in applesauce and citron.
- Pour into greased and floured bundt pans. Bake for 1-1/2 to two hours or until done.
