Steps:
- Pulse bell peppers and chiles in a food processor until very finely chopped (be careful not to purée). Transfer to a large saucepan and add sugar and vinegar. Bring to a boil, reduce heat, and simmer until liquid is reduced by two-thirds, about 1 hour. Transfer jelly to heatproof jars; cover and chill until set, about 4 hours. DO AHEAD: Jelly can be made 2 weeks ahead. Keep chilled.
SWEET AND SPICY PEPPER JELLY
This is a recipe I created for something different to serve with tortilla chips besides salsa. Great snack for watching football games.

Steps:
- Place all ingredients in a large saucepan.
- Bring to a boil over medium/high heat, stirring occasionally.
- Reduce heat to low, and simmer until thickened, about 1 hour and 15 minutes.
- Cool.
- Serve with tortilla chips.

SWEET & SOUR RED PEPPER JELLY
Recipe posted per request for recipes using peppers. Although I haven't made this jelly -- I think this would make a nice addition to holiday baskets or gifts. It uses summer garden peppers (both sweet and hot). Recipe source: Martha Stewart's Entertaining.

Steps:
- In a large saucepan combine peppers with vinegar over med low heat. Simmer for 15 minutes. Strain juice through jelly bag. DO NOT SQUEEZE BAG.
- Put juice back into saucepan and bring to a boil over medium high heat.
- Add salt and sugar to pan and bring back to a full boil. Boil for 1 minute. Remove from heat.
- Stir in pectin and skim off foam.
- Ladle into hot, sterilized jars and seal with screw on caps.
