1 Tbsp + 1 tsp canola oil
1 head broccoli, cut into florets
1-2 zucchini, sliced
2 Tbsp soy sauce (or Bragg's liquid amino)
2 clove garlic, minced
2 tsp fresh lemon juice

Steps:

  • 1. Heat oil in a large wok or high-sided skillet over medium-high heat. Add broccoli and zucchini and stir-fry for 2 minutes.
  • 2. Add soy sauce, garlic, and lemon juice.
  • 3. Continue to stir fry until broccoli is crisp and zucchini is tender about 5 - 10 minutes. Serve hot.

1 zucchini, about 8 oz. (226 g) cut into rounds and then quarters

5-6 slices peeled ginger
1 tablespoon oyster sauce
5 tablespoons water

400g chicken breast meat
1 tbsp light soy sauce
1/2 tsp sesame oil
1/4 tsp salt
1/2 tsp sugar
1/2 tsp cornstarch
1 tbsp Shaoxing wine
1/4 tsp ground white pepper
1 tbsp vegetable soil
700g zucchini (green and yellow one each)
5 slices ginger, cut into thin slices
Five cloves garlic, coarsely chopped
1 tbsp chopped scallion, white section
70g carrot, slice thinly
10g wood mushroom 木耳, cut into strips
1 tbsp oyster sauce
1 tsp sugar
1/2 tsp salt
1 tsp cornstarch (mixed with 1 tbsp water to form a slurry)

Steps:

  • Cut the chicken breast meat into thin slices.
  • Marinate with other ingredients in A for thirty minutes or longer.
  • Heat some oil in a pan. Pan-fry the breast meat over low heat until lightly brown on both sides. Set aside.
  • Cut off both ends of the zucchini. Quartered it lengthwise, remove part of the seeds, then cut it into one-inch slices.
  • Soak the wood fungus for thirty minutes or until fully hydrated, then cut it into thin strips.
  • Blanch the zucchini and carrots in boiling water for one minute, drain.
  • Saute the ginger, garlic, and scallion with oil until aromatic. Add the soaked wood fungus, then the blanched carrots and zucchini, and stir-fry over medium heat for one minute.
  • Season with oyster sauce, salt, and sugar.
  • Return the pan-fried chicken to the pan.
  • Thicken the sauce with the cornstarch slurry, Dish out and serve.

1 small onion, chopped

1/2 cup chopped cabbage
1/4 cup chopped fresh mushrooms
1-1/2 teaspoons soy sauce

1/2 cup shredded cheddar cheese
1/4 cup sliced almonds

Steps:

  • Cut zucchini in half lengthwise; scoop out and discard pulp, leaving a 1/4-in. shell. Place zucchini cut side down in a baking dish. Fill dish with hot water to a depth of 1/4 in. Bake, uncovered, at 350° for 15-20 minutes or until tender. Drain; set aside. Cook rice according to package directions., In a skillet, saute the onion, green pepper and garlic in butter until tender. Stir in the bean sprouts, cabbage, mushrooms, cooked rice, soy sauce, salt and pepper. Reduce heat; simmer, uncovered, for 5 minutes., Spoon into zucchini shells; sprinkle with cheese and almonds. 1/4 cup low sodium soy sauce or use gf soy sauce*
1 cup chicken broth*
1 tablespoon cornstarch
2 tablespoons mirin
1 tablespoon sugar
2 teaspoons sesame oil
1 tablespoon canola oil divided
1 tablespoon minced garlic
1 tablespoon minced ginger
1 pound chicken breast (sliced very thinly)
2 cups zucchini (cut 1/4 inch thick half moons (from 1 large zucchini))
sesame seeds and scallion for garnish (if desired)

Steps:

  • In a large bowl add the soy sauce, chicken broth, cornstarch, mirin, sugar, and sesame oil and whisk until everything is completely dissolved.
  • In a large skillet add one teaspoon canola oil on medium high heat and cook half the chicken until just cooked through, about 2-3 minutes on each side. Set aside on a plate.
  • Repeat with the second half of the chicken and an additional teaspoon of oil. Remove the chicken to the plate.
  • Add in the remaining 1 teaspoon oil, garlic and ginger and cook for 30-45 seconds until very fragrant but not browned.
  • Stir the garlic and ginger well and add in the sauce, whisking well. Cook the sauce 1 minute, then add in the zucchini and cook for 2 minutes more, until thickened and the zucchini is tender crisp. Remove from heat, add in the chicken and stir well to coat. Garnish with sesame seeds and scallions if desired.

1/2 teaspoon salt
1 tablespoon soy sauce
2 teaspoons hoisin sauce

1 teaspoon garlic, minced (1 clove)
1 teaspoon chili flakes

Steps:

  • Quarter zucchini lengthwise.
  • Slice off the soft seed core; it's ok if some seeds remain.
  • Arrange the zucchini, cut side up, on paper towels.
  • Sprinkle with salt, set aside for 10 mins.
  • Blot the zucchini quarters dry with paper towels.
  • Cut quarters into 2 inch lengths.
  • Mix soy sauce, hoisin, sherry and sesame oil in a small bowl.
  • Heat a wok or large skillet over med-high heat for 1 min.
  • Pour in canola/peanut oil; when oil starts to shimmer and ripple (very hot), add zucchini.
  • Saute until zucchini browns and softens slightly (don't overcook- it might turn mushy), about 4 mins.
  • Add garlic and chilli flakes, saute for about 15 sec.
  • Add the sauce mixture, stir and cook just long enough for liquid to reduce and coat the zucchini (about 20 sec).
  • Remove from wok, sprinkle with toasted sesame seeds and serve immediately.
