1 egg
1/2 cup panko breadcrumbs
1/2 cup grated Parmesan
2 tablespoons olive oil (optional - makes meatballs more moist and yummy)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
black pepper to taste
additional seasonings optional!

Steps:

  • Preheat the oven to 400 degrees. Line a baking sheet with foil and a little cooking spray.
  • Mix all the ingredients together in a mixing bowl.
  • Roll the mixture into about 30 small balls. Place on baking sheet.
  • Bake for 25-30 minutes.
  • ENJOY!

1/4 small white onion (, grated into the bowl)
1/2 cup panko breadcrumbs
1/3 cup grated parmesan
1 large garlic clove (, minced)
1/4 cup finely chopped parsley ((or 2 tsp dried parsley or basil))
1 egg
1/4 tsp salt
1/2 tsp pepper
Olive oil spray ((or olive oil))
1 tbsp olive oil
1 garlic clove (, finely chopped)
3/4 small onion , finely chopped
800 g / 28 oz crushed tomato
1 cup / 250 ml water ((swirl in tomato can to clean out))
Handful basil leaves (, torn, or 1 tsp dried herbs (e.g. Italian mix, oregano, thyme, basil))
250 g/ 1/2 lb spaghetti or other long strand pasta of choice (, cooked per packet)
Fresh basil (, optional)
Parmesan cheese

Steps:

  • Preheat oven to 200C/390F (standard) or 180C/350F (fan/convection).
  • Place a rack on a tray, and spray the rack with oil.
  • Place Meatball ingredients in a bowl, mix well. Scoop up a heaped tablespoon, roll into a ball and place on the rack. Repeat with remaining mixture - should make 25 - 30. Tip: spray hands with oil or wet lightly with water.
  • Spray each ball well with oil, then bake for 25 minutes until golden brown. Give 'em a squeeze and you'll see how soft they are!

700 g Yellow and red bell peppers
250 g Red onion
160 g Passata
5 g Basil leaves
10 ml Olive oil
Salt and Pepper to taste

Steps:

  • Pour the oil in a large frying pan or a wok, heat up and place the thinly sliced red onion
  • Cook steering regularly until the onions are soft and translucent
  • Meanwhile, cut the peppers in half lengthwise, remove the stork and seeds and slice them about 1 cm thick
  • Add the peppers to the onions, season slightly and cook on a lively heat for 5 minutes steering regularly
  • Add half of the basil laves and the passata, cover the pan, reduce the heat and cook for a further 10 minutes
  • By now the peppers should be soft and the sauce should have a creamier consistency

1 egg, beaten
2 tablespoons grated Parmesan-Romano cheese blend

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Lightly spray a pan large enough to fit the meatballs without touching.

3 red bell peppers, cut into strips
1 1/2 tablespoons extra-virgin olive oil, divided
1 1/2 tablespoons drained capers
1 teaspoon red-wine vinegar
1/8 teaspoon hot red pepper flakes
For meatballs:
3 slices Italian bread, torn into pieces (1 cup)
1/3 cup milk
3 ounces sliced pancetta, finely chopped
1 small onion, finely chopped
1 small garlic clove, minced
2 tablespoons extra-virgin olive oil, divided
1 large egg
1 pound ground chicken
3 tablespoons finely chopped flat-leaf parsley
1 tablespoon tomato paste
Accompaniment: garlic bread made from remainder of Italian loaf

Steps:

  • Make peperonata:
  • Preheat oven to 400°F with racks in upper and lower thirds.
  • Toss bell peppers with 1 tablespoon oil, then roast in a 4-sided sheet pan in lower third of oven, stirring occasionally, until tender and browned, about 35 minutes.
  • Stir together capers, vinegar, red pepper flakes, and remaining 1/2 tablespoon oil in a medium bowl and set aside.
  • Make meatballs while peppers roast:
  • Soak bread in milk in a small bowl until softened, about 4 minutes.
  • Cook pancetta, onion, and garlic in 1 tablespoon oil with 1/2 teaspoon each of salt and pepper in a 10-inch skillet over medium heat until onion is softened, about 6 minutes. Cool slightly.
  • Squeeze bread to remove excess milk, then discard milk. Lightly beat egg in a large bowl, then combine with chicken, pancetta mixture, bread, and parsley. Form 12 meatballs and arrange in another 4-sided sheet pan.
  • Stir together tomato paste and remaining tablespoon oil and brush over meatballs, then bake in upper third of oven until meatballs are just cooked through, 15 to 20 minutes.
  • Toss bell peppers with caper mixture. Serve meatballs with peperonata.

1/2 cup whole wheat panko breadcrumbs
1/3 cup Parmesan cheese (finely grated )
2 tablespoons extra-virgin olive oil (divided)
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
2 tablespoons tomato paste (divided)
3 tablespoons flat-leaf parsley (finely chopped )
2 1/2 cups fresh spinach (lightly packed )
Tomato sauce

Steps:

  • Place a rack in the upper third of the oven and preheat to 400 degrees F. Lightly coat a 9x13-inch baking dish or rimmed baking sheet with nonstick cooking spray.
