HAM AND CABBAGE SOUP

Ham and Cabbage Soup image

This easy cabbage soup recipe is hearty, healthy, easy to make, and tastes fantastic. Before adding to the soup, taste your ham to see how salty it is. Depending on the salt level, you may not need to add any additional salt to the soup. Taste and adjust the seasoning of the soup a few times during cooking.

Time 30m

Yield Makes about 8 cups of soup or 4 to 6 servings

Number Of Ingredients 14

3 tablespoons olive oil
2 cups chopped onion (1 medium)
2 cups chopped carrot (4 medium)
1 1/2 cups cubed lean ham steak (7.5 ounces)
1 tablespoon minced garlic (3 cloves)
1 tablespoon chopped fresh rosemary or use 1 teaspoon dried rosemary
1/2 teaspoon fresh ground black pepper
Pinch crushed red pepper flakes
8 cups chopped cabbage (1 1/2 pounds)
1 (15-ounce) can diced tomatoes with juices
6 cups low sodium chicken, ham or vegetable stock/broth, see our chicken stock recipe
2 bay leaves
Salt, to taste
3 lemon slices or more to taste

Steps:

  • Heat two tablespoons of the olive oil in a stockpot pot or Dutch oven over medium heat. Add the onions, carrots, and the ham. Cook, stirring every once and a while until the vegetables have softened and the onions are translucent; 8 to 10 minutes.
  • Add the garlic, rosemary, black pepper, and the red pepper flakes. Cook, while stirring, for one minute. Stir in the cabbage, and then pour in the canned tomatoes and their juices as well as the stock. Add the bay leaves.
  • Raise the heat to medium-high and bring the soup to a boil. Taste then adjust with salt. The ham does add some salt to the soup so you may not need a lot of additional seasoning.
  • Partially cover the pot with a lid, and then reduce the heat to maintain a low simmer. Simmer for 20 minutes or until the cabbage, and other vegetables are tender.
  • Remove the pot from the heat and remove the bay leaves. Stir in the lemon slices and the remaining tablespoon of olive oil. Taste and season with more salt and pepper. Serve.

HAM AND CABBAGE SOUP

Ham and Cabbage Soup image

This soup pairs the flavors of ham and cabbage so nicely. The broth is made with the ham bone which makes it very savory. After simmering, the ham falls off the bone. It simmers with cabbage, potatoes, and other vegetables to create a comforting and savory soup. Hearty, it will stick to your ribs. Serve with rustic bread (like...

Time 3h55m

Number Of Ingredients 10

2 ham hocks, about 3 pounds each
10-12 carrots, sliced
1 extra large cabbage, diced in chunks
2 large onions, sliced
10 large potatoes, diced
3 celery stalks, diced or chop up celery leaves from one bunch of celery
2 large bay leaves
1 1/2 boxes of College Inn chicken stock
pepper, to taste
salt, to taste (might not be needed depends on saltiness of ham)

Steps:

  • 1. Cover ham hocks with water and cook until falling apart. Should take about one hour on medium heat on the stovetop.
  • 2. While this is cooking, prepare all the vegetables.
  • 3. Remove ham from the broth. Discard the bones and fatty pieces. Cut ham into large chunks.
  • 4. Skim off as much of the grease as possible from the broth. Or if you like, cool the broth. Place in the refrigerator for about an hour. The grease will float to the top for easy removal then place back on the stove. (Though this will take more time than I have allotted for preparation.)
  • 5. Add the potatoes, carrots, celery and bay leaves on medium or just below medium heat on the stovetop. Cook for about 20 minutes.
  • 6. Add the cabbage, onions, and chicken stock. Cook an additional 40 minutes on the same heat or until all is tender.
  • 7. Then add the ham and cook an additional 10 minutes. Serve with pumpernickel or dark rye bread. Enjoy.
