BREAD AND BUTTER PUDDING

2 tablespoons dry sherry
1/2 cup whipping cream
8 tablespoons butter
2 tablespoons granulated sugar for dusting, plus 1/4 cup sifted
12 slices white bread, halved
12 slices brown bread, halved
5 cups milk
1 vanilla pod
Lemon zest, 3 pieces
2 cups raisins
2 ounces candied peel
Freshly grated nutmeg
6 eggs

Steps:

  • Rub 2 tablespoons of butter around a casserole and dust with 1 tablespoon granulated sugar. Preheat oven to 325 degrees F. Butter the bread with the remaining 6 tablespoons of butter. Scald milk in a pan, add the vanilla pod and the lemon zest. Stir in 1/4 cup granulated sugar. Increase the heat and dissolve the sugar and then remove from the heat. Arrange some of the cut bread overlapping on the base of the casserole. Sprinkle with some of the raisins and candied peel. Place another layer of bread on top - alternating the brown and white slices. Cover with the remaining bread. Sprinkle the remainder of raisins on top and grate the nutmeg over them. Break the eggs into a bowl and whisk. Slowly stirring into the scalded milk (having removed the lemon zest and vanilla pod). Pour this mixture over the bread. Dust with 1 tablespoon sugar and sprinkle with the dry sherry. Allow to stand 1 hour. Before placing it in the oven, pour the 1/2 cup of whipping cream over the pudding. Cook in the preheated 325 degree oven on the middle shelf for 55 minutes.

Daikon Fettuccine with Tomato-Basil Sauce image

By now, you've probably figured out I am very fond of visual puns. Here ribbons of Daikon, the mild oversized white Japanese radish, pose as pasta. They are tossed with a quick tomato sauce spiked with a generous amount of fresh basil. The dish is light and is best served as a first course.

1 pound daikon
Salt
1 (14 1/2-ounce) can plum tomatoes
3 tablespoons extra-virgin olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 1/2 to 2 teaspoons sugar
1 tablespoon chopped fresh basil leaves
Freshly ground black pepper

Steps:

  • With a swivel-blade vegetable peeler, remove the outer skin of the daikon. Discard the skin. Continue to peel down the length of the vegetable, removing the daikon in long, narrow ribbons, which look like noodles. Soak the "fettuccine" in a bowl of cold salted water for 15 to 20 minutes.
  • Meanwhile, make the tomato-basil sauce: Drain the tomatoes, reserving half of the juice. Squeeze the tomatoes through your fingers to mash them and combine with the juice; there will be about 2 cups.
  • In a heavy medium saucepan, heat the oil over medium-high heat. Add the onion and garlic and saute until softened but not browned, about 3 minutes. Add the tomatoes and their reserved juice, the sugar, and 1 teaspoon salt. Boil vigorously, stirring often, until the sauce is thick, 10 to 15 minutes. Stir in the basil and season with salt and pepper, to taste.
  • Drain the "noodles" and dry them on a kitchen towel. Add to the sauce and toss gently over medium heat, taking care not to break the "Daikon Fettuccine". Cook just until heated through, about 1 minute.
  • Divide among individual plates, teasing the fettuccine into mounds. Serve immediately.

1 cup sugar
1 cup distilled white vinegar
1 tablespoon coriander seeds or 1 teaspoon ground coriander
1 tablespoon mustard seeds
1/4 teaspoon celery seeds
1/4 teaspoon ground turmeric
1 daikon (about 1 1/4 pounds), cut into 1/2-inch cubes

Steps:

  • In a medium pot over high heat, bring the sugar, vinegar, coriander, mustard seeds, celery seeds and turmeric to a boil. Add the daikon and return to a simmer. Remove the pot from the heat and transfer to a 1-quart Mason jar or large bowl. Let the daikon cool for at least 3 hours before eating or store in the fridge in an airtight container for up to 3 weeks.
