14 ounces imitation crabmeat, flake style
2 1/2 ounces creamy garlic alfredo sauce mix
20 ounces buttermilk

Steps:

  • 1. Place oven rack in center position and preheat oven to 400 degrees.
  • 2. Mix potatoes and Alfredo sauce in a 3 quart oven safe casserole dish, then spread them evenly on the bottom on dish. Bake 20 minutes.
  • 3. Stir potatoes carefully with spatula without breaking.
  • 4. Fold seafood flakes in with potatoes.
  • 5. Pour buttermilk on top.
  • 6. Bake 15 additional minutes (20 in mountains) stirring gently occasionally.

1/8 ounce tobiko (flying fish egg)
15 -20 shrimp
1 1/2 cups mayonnaise, dressing
1/2 teaspoon salt

Steps:

  • 1. Preheat oven to 400°.
  • 2. Cut shrimp into small chunks.
  • 3. Mix mayonnaise, Tobiko, shrimp and salt in a bowl. Pour the mixture on the top of the diced potatoes in a baking dish.
  • 4. Bake for 20 minutes. Then change oven setting to Broil, and cook for another 8 minutes. Let it stands for 5 minutes before you serve.
  • Great to serve over rice, or with sandwich bread.

Big hit with the family, but since I'm the only one that likes chives, I leave them just for me! This is a great recipe for vegetarians too!

5 leeks, trimmed white bulb only...washed & chopped
2 (32 ounce) boxes vegetable broth
3 tablespoons butter
1/4 cup heavy cream
chives (to garnish)

Steps:

  • 1. Saute Leeks in butter until softened (about 10 minutes-stirring often).
  • 2. Add Vegetable Broth.
  • 3. Add container of Simply Potatoes Traditional Mashed Potatoes.
  • 4. Heat on medium heat -- stirring often -- let potatoes dissolve and bring liquid to a simmering, slow boil.
  • 5. Use emulsion blender to cream the soup.
  • 6. Add heavy cream, stirring to mix well.
  • Serve with chopped chive if desired.

4 ounces spanish chorizo sausage, skinned and diced small
4 tablespoons olive oil, divided use
1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
8 large eggs, well beaten
4 ounces spanish manchego cheese, finely shredded, divided use

Steps:

  • Preheat oven to 375 degrees F.
  • In a large non-stick skillet over medium-high heat, cook diced chorizo, stirring occasionally, until just crisp, about 3 minutes. Remove chorizo to a paper towel lined plate, leaving the fat in the skillet.
  • Add 2 tbsp olive oil to skillet. Add Simply Potatoes Shredded Hash Browns and cook, stirring, until evenly colored and partially cooked, about 4-5 minutes. Remove from heat and allow to cool slightly.
  • Generously brush non-stick muffin tins with remaining olive oil.
