4 lbs confectioners' sugar (powdered)

  • In a large bowl (or KA Mixer) cream together shortening and butter.
  • Stop and scrape down, start again till creamy.
  • Add cut-up cream cheese and cream again, scraping down sides till fluffy on high.
  • Add vanilla extract and blend.
  • Add at time confectioner's sugar, starting on low speed as to not spray sugar all over, then increase speed till blended each time and scrape down each time.
  • You may add salt if you need to.
  • Turn on high speed for 15 minutes to make frosting blended, smooth and fluffy.
  • Also you may have to chill frosting after completed.

2 sticks ,1 cup, (226g) unsalted butter, slightly softened
2 (8oz) packages cream cheese (total weight 452g) I use full fat cream cheese. Using reduced fat or the spreadable cream cheese will cause the frosting to be too soft. Soften very slightly.
2 teaspoons (8 g) vanilla extract
1/2 teaspoon salt (2g) optional - it will cut the sweetness, popcorn salt is best to use because it is fine and dissolves faster
6 to 6 1/2 cups (690g to 747g) powdered sugar

Steps:

  • Cut the butter into slices and add to the bowl of your mixer. Beat on low to medium speed until the butter is softened and smooth.
  • Cut the cold cream cheese into pieces and add to the butter, beating at low to medium speed until incorporated. If you are using a hand mixer you may need to soften the cream cheese a bit more.
  • Add the vanilla. Gradually add the powdered sugar beating on low speed until blended. Cover the bowl with a towel to keep down the cloud of powdered sugar.
  • Increase mixing speed and beat until fluffy. Don't over beat or it will become too soft. If it becomes too soft, just refrigerate a short while to firm it up a bit.
  • This frosting will pipe best if used while still chilled. You can make it in advance, refrigerate and when ready to use let it soften slightly (do not microwave) and remix.
  • Will frost a 3 layer 8 or 9 inch cake.

1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
1/2 cup Crisco shortening (preferably butter flavored)
1/2 teaspoon coconut flavoring
1/2 teaspoon lemon extract
1/2 teaspoon butter flavoring
1 teaspoon almond extract
1 teaspoon vanilla extract
3 -4 tablespoons milk
2 lbs powdered sugar

Steps:

  • Beat the cream cheese, butter and crisco on medium or high speed for 1 minute or until light and fluffy. Add extracts and flavorings and 3 tablespoons of milk, beat on medium speed until combined. Gradually add the powdered sugar in about six different intervals and beat until well combined between intervals, using a rubber scraper to make sure all ingredients are incorporated. Beat on high speed for approximately 1 minute to increase the volume. Frosting will be light and fluffy, you may need to add up to 1 tablespoons of milk for desired consistency. I usually add up to 1 teaspoons extra of one of the extracts if I am going to use the frosting for use in a decorating bag. I just prefer the flavoring instead of the extra milk.
  • If you are going to use this as a colored decorator frosting I've found that adding the gel colors when you add the extracts and milk seems to work the best.

7oz / 200g Cream Cheese
3 Cups / 375g Powdered Sugar / Icing Sugar
1 tsp Vanilla Extract (optional)

Steps:

  • Make sure all your ingredients are at room temperature, this is so important to making sure you frosting doesn't seperate.
  • Add the butter to the bowl of your stand mixer or a large bowl if you're using a hand mixer.
  • Whip on medium speed for about 3-5 minutes until light, fluffy and doubled in volume.
  • Add the room temperature cream cheese to the whipped butter. It's important to use full fat cream cheese here, not light or spreadable as these will lead to a really soupy liquid frosting that wont hold it's shape, plus it won't taste near as good!
  • Whip the butter and cream cheese for another few minutes until combined and light and fluffy. Make sure to scrape down the sides of the mixing bowl a few times just to make sure everything is evenly combined.
  • Add the first half of the powdered sugar and whip on low speed for about a minute until the sugar has been incorporated.
  • Add the second half of the sugar mix again until fully incorporated and the frosting is light and fluffy.
  • At this point you can add any flavourings you would like. Depending what I'm serving the frosting with I will add vanilla essence but most of the time I prefer the frosting without.
  • Before using the frosting place it into the fridge for 30 minutes just to let it firm up and settle from all of the whipping.
