NO COOK SUMMER SQUASH SALAD WITH LEMON AND HERBS



No Cook Summer Squash Salad with Lemon and Herbs image

Number Of Ingredients 7

3 medium-small summer squashes, preferably different colors of green, yellow and a mixture
2 teaspoons minced fresh chives
2 tablespoons extra-virgin olive oil
1 lemon
1 to 2 tablespoons chopped fresh tarragon or chervil or a mixture
Kosher salt and freshly ground black pepper
5 shaved slices Parmigiano-Reggiano (about 1 ounce)

Steps:

  • Thinly slice the squash lengthwise on a mandoline. As you slice, lay the slices on a large platter. Once you cover the plate, lightly sprinkle the squash with some chives and about 1 teaspoon olive oil.
  • Cut into the lemon about halfway so you can squeeze the juice but still grate off the zest. Finely grate about 1/4 teaspoon of the lemon zest and squeeze 4 or 5 drops of juice over the squash. Top with a sprinkling of tarragon, about 1 teaspoon. Keep it light because the flavor adds up as you layer the vegetables. Season evenly with salt and pepper. Repeat with the ingredients to make 4 or 5 layers of squash flavored with the herbs, lemon and olive oil. Finish with a nice drizzle of the olive oil and herbs.
  • Set aside to allow the squash to soften slightly, about 30 minutes. Lay the slices of cheese on top. Serve.

Originally a Fine Cooking recipe, this was pointed out to me by Mean Chef and Shelly. It is a fabulous salad that has great presentation. Would be excellent as a side to salmon.

1 garlic clove
kosher salt
1/4 cup fresh lemon juice
1/2 cup olive oil
1 lb summer squash (Yellow, Zucchini or a mix)
fresh ground black pepper
4 cups baby arugula, loosely packed
1/2 cup Italian parsley
1/2 cup chives, cut into 1/2 inch lengths
2 tablespoons capers
1/4 cup parmigiano-reggiano cheese, finely grated, plus a chunk to shave for garnish

Steps:

  • Mash garlic to a paste with a pinch of salt, put in a small bowl and whisk in lemon juice. Let sit for 10 minutes and then whisk in olive oil.
  • Using a mandoline or sharp chef's knife, cut squash into very thin ovals (1/16 inch thick). Put into a medium bowl and toss with 2/3 of the vinaigrette. Season with salt and pepper.
  • Combine Arugula, parsley, chives and capers in a separate bowl, season with salt and pepper, and toss with just enough vinaigrette to lightly coat.
  • Layer about 1/3 of squash in a shallow bowl or platter, scatter 1/3 of arugula mixture on top and sprinkle with 1/3 of the grated Parmesan. Repeat layering two more times.
  • For garnish, shave long strips of Parmesan with a vegetable peeler onto the salad. Serve immediately.

2 medium yellow summer squash
1 small onion
1 tablespoon butter
½ tablespoon canola oil
salt and ground black pepper to taste
4 tablespoons shredded Parmesan cheese, divided, or to taste

Steps:

  • Slice squash and onion to 3/16-inch thickness using a mandolin.
  • Melt butter and canola oil over medium heat in a large skillet. Add squash and onion to the hot pan and season with salt and pepper. Saute until vegetables begin to soften, about 10 minutes. Sprinkle with 3 tablespoons Parmesan cheese, reduce heat to low, and continue cooking for 5 minutes.
  • Remove skillet from heat and sprinkle with additional tablespoon Parmesan cheese prior to serving.

4 medium crookneck yellow squash, trimmed, halved lengthwise
5 tablespoons olive oil
1/2 cup chopped fresh basil
1/3 cup freshly grated parmesan cheese (about 1 ounce)
2 tablespoons balsamic vinegar

Steps:

  • Prepare barbecue to medium heat.
  • Place zucchini and crookneck squash on large baking sheet; brush all over with 3 tablespoons oil.
  • Sprinkle with salt and pepper.
  • Grill vegetables until tender and brown, turning occasionally, about 10 minutes.
  • Transfer to plate and cool.
  • Cut vegetables diagonally into 1-inch-wide pieces.
  • Place in large bowl.
  • Add basil, Parmesan cheese, balsamic vinegar and remaining 2 tablespoons olive oil and toss to blend.
  • Season to taste with salt and pepper and serve.

4 cups julienned zucchini
4 cups julienned yellow squash
2 cups sliced radishes
1 cup canola oil
1/3 cup cider vinegar
2 tablespoons Dijon mustard
2 tablespoons snipped fresh parsley
1-1/2 teaspoons salt
1 teaspoon dill weed
1/2 teaspoon pepper

Steps:

  • In a large bowl, toss the zucchini, squash and radishes. In a small bowl, whisk the remaining ingredients. Pour over vegetables. Cover and refrigerate for at least 2 hours. If desired, top with additional snipped fresh parsley.

4 small zucchini (about 1 pound)
4 small crookneck yellow squash (about a pound)
2 lemons, juice of or 2 limes, juice of
2 shallots, finely chopped
salt & freshly ground black pepper
1/2 cup vegetable oil (I use olive oil)
2 tablespoons chopped fresh dill
fresh dill or other herbs, sprigs to garnish (optional)

Steps:

  • Trim ends off zucchini and yellow squash, and cut into narrow strips (julienne).
  • Whisk lemon or lime juice with shallots, salt, and pepper.
  • Whisk in oil and herbs.
  • Toss squash with dressing and serve, garnished with herb sprigs if desired.

3 tablespoons whole almonds
1 pound summer squash (a mix of green and yellow)

1 minced garlic clove

Steps:

  • Roast almonds and coarsely crush. Meanwhile, trim the ends off summer squash. Using a vegetable peeler, thinly slice the squash lengthwise into strips and transfer to a large bowl.
  • In a small bowl, whisk together extra-virgin olive oil, fresh lemon juice, minced garlic clove, and kosher salt to taste. Pour dressing over squash. Let stand for a few minutes, then add a few handfuls of baby arugula. Shave a little Pecorino over the squash and toss. Season with kosher salt and freshly ground black pepper. Garnish with the crushed almonds.

1 teaspoon salt
2 tablespoons chopped fresh mint
1 tablespoon olive oil
2 teaspoons fresh lemon juice

½ teaspoon freshly ground black pepper
3 slices prosciutto, chopped
¼ cup crumbled feta cheese

Steps:

  • Toss yellow squash and zucchini with salt in a large bowl.
  • Whisk mint, olive oil, lemon juice, lemon zest, and black pepper in a small bowl; pour over squash mixture. Toss to coat.
  • Heat a small nonstick skillet over medium heat; cook and stir prosciutto in the hot skillet until crisp, about 2 minutes.
  • Divide squash salad over 4 plates. Evenly sprinkle prosciutto and feta cheese over salads.

2 garlic cloves, sliced
4 zucchini, sliced
4 summer squash, sliced
2 tablespoons balsamic vinegar
2 teaspoons fresh oregano, chopped

Steps:

  • Pour enough oil in skillet to cover. Place over medium high heat and add 1/3 of the garlic, cook for 1-2 minutes.
  • Stir in 1/3 of zucchini and summer squashes and cook another 2 minutes or until squash is wilted and browns on the edges. Transfer to serving dish or bowl.
  • Repeat two more times with the remaining squash and garlic.
  • Before transferring last batch to bowl stir in vinegar and then return all the squash back to the skillet along with the oregano.
  • Return all to serving dish.
  • Serve while still warm or at room temperature.
