French Country Salad with Lemon Dijon Vinaigrette image

A light and tasty salad made with fresh arugula, asparagus, goat cheese, beets, and a delectable lemon dijon vinaigrette.

1 (5 oz.) bag of arugula
1/2 pound asparagus, tough ends trimmed
olive oil, to drizzle over asparagus
sea salt, to sprinkle over asparagus
1/2 cup sliced cooked beets, canned, jarred, home-cooked
1/2 cup whole walnuts or pecans, toasted
1/4 cup crumbled goat cheese
2 tbsp dijon mustard
3 tbsp balsamic vinegar
2 tbsp olive oil
2 cloves small garlic, minced
1/2 tsp sea salt
pinch of freshly ground black pepper
juice of 1/2 a lemon
zest of 1/2 a lemon

Steps:

  • Preheat the oven to 400°F. Line a baking sheet with a piece of parchment paper. Cut the asparagus into 1 1/2" long pieces. Spread the asparagus out onto the prepared baking sheet. Drizzle olive oil over the asparagus along with a sprinkle of sea salt. Roast for 4 to 5 minutes, until the asparagus is tender but still has a bite. Allow the asparagus to cool before using.
  • Toss the arugula with the asparagus in a large bowl; temporarily set aside.
  • Whisk all of the vinaigrette ingredients together in a small measuring cup.
  • Toss the salad with the vinaigrette until everything is lightly coated in the dressing. Then garnish the salad with the sliced beets, toasted nuts, and crumbled goat cheese.

2 cups of day old french bread, 1- inch cubed (or bread of choice)
3 tbsp olive oil
1 clove garlic, minced
1/4 tsp dried oregano
Pinch fresh ground black pepper
1 tbsp grated parmesan cheese
1/2 cup extra virgin olive oil
4 tsp red wine vinegar
2 cloves garlic, minced
2 tsp dijon mustard
3 tsp fresh lemon juice
2 tsp Worcestershire sauce
Pinch of salt and fresh ground pepper
2 heads of romaine, wash/dried, cut into 1-inch sections (about 8 cups)
1/4 cup fresh shaven or grated parmesan cheese
Fresh ground pepper to garnish

Steps:

  • Preheat oven to 350 degrees F
  • Cut bread into 1 inch cubes and put into a medium bowl. In a small bowl combine and mix the olive oil, 1 clove minced garlic, oregano, black pepper, and parmesan cheese. Pour over the bread, mix to coat the bread with olive oil mixture. Spread onto a baking sheet in an even layer, bake for 10 minutes until bread is crisped. Set aside.
  • In a small bowl combine vinaigrette ingredients: Red wine vinegar, dijon mustard, 2 cloves minced garlic, fresh lemon juice, Worcestershire sauce, salt & pepper. Whisk in the olive oil until vinaigrette is combined.
  • Place the sliced romaine leaves into a large bowl, add the vinaigrette and toss the salad to coat the leaves evenly. Serve the salad and garnish with homemade croutons and top with freshly shaven/grated parmesan cheese and fresh ground black pepper.

1/4 c (2 fl oz) champagne vinegar
2 tbsp (1 fl oz) lemon juice
2 tsp Dijon mustard
1/2 tsp (approx 2 grams) Swerve brown, or equivalent
1/4 tsp salt
1/4 tsp dried chives
fresh cracked black pepper, to taste
80 g green leaf lettuce, finely chopped or shredded
60 g Brussels sprouts, shaved
40 g radicchio, finely chopped or shredded
90 g cucumber, quartered and sliced
50 g yellow bell pepper, julienne (cut into matchsticks)
64 g (approx 8) grape tomatoes, quartered
20 g green onion, thinly sliced
20 g shaved Parmesan cheese
30 g pepitas, roasted and salted
136 g (approx 1 medium) haas avocado, diced

Steps:

  • Combine all ingredients in a glass jar, put the lid on, and shake.
  • Taste and adjust seasonings, as desired.
  • Store in the fridge until ready to serve. Shake well before using.
  • Combine all ingredients in a large serving bowl and toss well to distribute evenly.
  • Dress with Citrus Dijon Vinaigrette, and season with salt and fresh cracked black pepper, if desired.
  • Toss well to coat, and serve immediately.

I copied this recipe from a Barefoot Contessa episode on The Food Network. Usually I make only half the recipe, using 2 tablespoons of regular mayonnaise instead of the raw egg yolk...seems to work fine. This is one of my family's favourite salad dressings. I guessed at the total number of servings, based on 2 Tablespoons dressing per salad serving, but this may be more or less than your personal preference dictates.

1 tablespoon whole-grain Dijon mustard
2 teaspoons red wine vinegar
1 teaspoon white balsamic vinegar
2 tablespoons extra-virgin olive oil
Pinch sea salt
Pinch black pepper
3 medium heads broccoli, stems removed and heads cut into florets (about 1 1/2 pounds total)
2 tablespoons extra-virgin olive oil
Sea salt
1 1/2 cups cherry tomatoes, halved
1/2 ripe avocado, cut-up
1 red pearl onion, thinly sliced

Steps:

  • Roast the broccoli: Preheat the oven to 400 degrees F. Add the broccoli florets, oil and a large pinch of salt to a rimmed baking sheet lined with parchment paper. Toss to combine, and spread out in a single layer. Roast for 20 minutes, stir and roast until the broccoli is browning, 10 minutes more. Remove from the oven, and set aside to cool.
  • Make the dressing: Combine the mustard and vinegars in a small bowl. Drizzle in the oil, salt and pepper, and stir until smooth.
  • Assemble the salad: Combine the roasted broccoli, tomatoes, avocado and onions in a large bowl, and toss to combine. Divide between 2 bowls, drizzle with dressing and serve immediately.

300ml mayonnaise
2rounded tbsp Dijon mustard
2 tbsp fresh chopped mint
750g pack baby Jersey Royal potato
400g fine green bean , trimmed
450g frozen pea , thawed
2large ripe avocados
½ lemon , juice only

Steps:

  • Mix all the dressing ingredients with a little salt and pepper and 2 tbsp water until well blended. Halve or thickly slice the potatoes if large and boil for 7-8 minutes in a pan of salted water with a steamer full of beans over the top until they are both tender. Cool them separately under the cold tap.
  • Pile the potatoes into a bowl followed by the beans and peas. Just before serving, peel, stone and chop the avocados and toss with lemon juice to stop them discolouring. Pile on top of the salad and drizzle over the dressing.
  • Cover the bowl with cling film to transport. Toss just before bringing to the table to mix and coat everything in the mayo dressing. If you have a long journey or want to make this a day ahead, prepare and add the avocados and lemon juice.
