2 1/4 c all purpose flour
3/4 c brown sugar
3/4 c white sugar
1 1/2 tsp baking soda
1 tsp salt
4 Tbsp cocoa, unsweetened
2 tsp cinnamon
2 tsp allspice
2 tsp ground cloves
1 tsp ginger
1/2 c canola or vegetable oil
1/4 c melted butter
1 c applesauce
1 c sour cream
2 medium eggs
1 1/2-2 c raisins, soaked in warm water about 5 minutes to plump
CREAM CHEESE FROSTING
8 oz cream cheese softened
4 Tbsp soft butter
2 tsp vanilla extract
2 1/2 plus c powdered sugar
1/3 c milk (use only if you need to)
1 Tbsp lemon juuice

Steps:

  • 1. Heat oven to 350 degrees F Prepare a 9x13 in.pan by spraying with non stick spray
  • 2. In a large bowl, whisk all the dry ingredients together.
  • 3. add oil,melted butter, applesauce, sour cream and eggs mix well and then add in the raisins, stir to combine
  • 4. Pour batter into the prepared pan and bake for about 30-35 minutes or until done when tested with a toothpick. Let cake cool completely before frosting.
  • 5. frost with your favorite cream cheese frosting (or butter cream can be used)
  • 6. For cream cheese frosting- Mix all ingredients beating well adding more milk or powdered sugar as needed to make it smooth and easy to spread

4 cups water
2 cups raisins
1 cup vegetable shortening
2 cups granulated sugar
2 teaspoons baking soda
4 cups all-purpose flour
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon salt
2 large eggs, beaten
buttercream frosting (optional)

Steps:

  • Heat the oven to 350°F
  • Grease and flour two 13- by 9-inch baking pans. Set aside.
  • Combine the water and raisins in a saucepan, heat to boiling and simmer for 10 minutes.
  • Add the shortening, then allow the mixture to cool.
  • Meanwhile, into a bowl, sift the sugar, soda, flour, cloves, cinnamon, nutmeg, allspice and salt.
  • Add the cooled raisin mixture, then blend well.
  • Add the eggs and stir well.
  • Turn into the prepared pans and bake for 30 to 35 minutes, or until the cakes test done.
  • Let cool completely on wire racks.
  • If desired, ice with Buttercream Frosting.

1 (18 1/2 ounce) package butter recipe cake mix
1/2 cup butter, melted
4 eggs
1/2 cup milk
1 teaspoon vanilla
1 cup brown sugar (light, dark or mixed)
1/2 cup butter, room temp
1/4 cup milk
2 cups powdered sugar
1 teaspoon maple flavoring

Steps:

  • Preheat Oven 350 degrees.
  • Spray 9x13 baking pan with cooking spray.
  • Combine Cake mix with listed ingredients in a bowl, stirring until evenly mixed. Pour into prepared pan pan, making sure to smooth out the batter until even. Bake about 20 minutes, or until a toothpick inserted near the center comes out clean.
  • While that cooks, prepare the frosting. (The frosting needs to go on the cake as soon as it comes out of the oven, because it is a quick-setting frosting) In a medium saucepan, add 1/2 butter and brown sugar and bring it to a boil. Once it starts bubbling, add in the 1/4 cup of milk and bring up to a boil, stirring frequently to create an even mixture.
  • As soon as it starts boiling again, remove the pot from heat and add in the powdered sugar and maple flavoring. Beat with a wooden spoon until it is smooth. If you've timed it right, you should finish with this around the same time as the cake is being pulled from the oven. If it has already set, I stir it rapidly again.
  • Pour the frosting over the top of the cake and spread it around to cover the entire surface. This will quickly set and harden.
  • Cool completely.
  • Enjoy!

1-1/2 c sugar
1-1/2 tsp baking soda
1 Tbsp cocoa powder
1 tsp cinnamon
1 tsp salt
1 tsp nutmeg

1/2 c vegetable oil
2 c applesauce
2 medium eggs...slightly beaten
1 c raisins.....plump them in warm water,drain and use. .(add these last, after everything else is mixed)

8 oz cream cheese ...softened

1-1/2 c confections sugar
1/3 c milk
1 Tbsp lemon juice, fresh

  • 1. Gather your spices and the other ingredients together. In a large bowl, mix flour, sugar and baking soda. Then add the cocoa,cinnamon,salt,nutmeg and allspice. Mix well.
  • 2. Next add the vegetable oil,applesauce,and the beaten eggs. When all of the above is mixed, Add the plumped raisins. Put in a greased and floured 9x13 cake pan. Bake at 350 degrees for 30to35 minutes In a pre-heated oven.
  • 3. FROSTING: Mix the cream cheese,butter,vanilla, confectioners sugar, milk and lemon juice together. Spread on the cake ****YOUR OPTION: To make a layer cake, just like the original Spanish Bar Cake (see main foto) cut the cake into 2 pieces, then spread the frosting between the layers and on the top.   • Beat cream cheese with lemon peel, lemon juice, vanilla, salt until light and fluffy.
  • Beat in enough powdered sugar to make spreading consistency about 2 cups.
  • Spanish Bar Cake#2--------------.
  • Preheat oven to 350 degrees F (175degrees C).
  • Lightly grease one 13x9 inch cake pan.
  • Cook raisins and water for 10 minutes over medium heat.
  • Stir in the shortening.
  • Remove from heat and let mixture cool.
  • Combine flour, salt, baking soda,ground cloves, ground nutmeg, ground cinnamon, ground allspice, and salt.
  • Add flour mixture to the cooled raisin mixture and blend well.
  • Stir in the beaten eggs.
  • Add the chopped nuts (if desired).
  • Pour batter into prepared pan.
  • Bake at 350 degrees F (175degrees C) for 35 minutes.
  • Makes 1-9x13 inch cake.

4 eggs
1 cup granulated sugar
4 ounces unsalted butter
1 2/3 cups unbleached white flour
1 tablespoon baking powder
1 lemon, Zest of
1 teaspoon vanilla extract
1 tablespoon milk

Steps:

  • Preheat the oven to 375 degrees Fahrenheit (200 degrees Centigrade). Measure 1/4 cup sugar into small bowl and set aside.
  • Beat the eggs with 3/4 cup sugar until the mixture is light.
  • In a small sauce pan, melt the butter on medium on the stove top. Or, melt it in the microwave. Make sure that the butter cools slightly and is not bubbling. As you continue to beat the egg mixture, slowly pour in the melted butter, making sure to mix thoroughly. Stir in the lemon zest, vanilla, and milk.
  • Measure out the flour into a separate bowl. Add the baking powder to the flour and mix thoroughly.
  • While stirring the egg mixture, add in the flour mixture. Continue to stir until all ingredients are mixed well. The batter will be very thick.
  • Place paper liners in to cupcake pan. Use a large serving spoon to spoon batter into pan, filling each one half full. Batter will more than double in size when baked. Use a teaspoon to sprinkle each magdalena with a bit of the reserved sugar.
  • Place pans on the middle shelf of the preheated oven for 18-20 minutes, until magdalenas have turned a golden color. Remove from oven and allow to cool for 5 minutes before taking out of the pan to cool further.
